Vidalia Onion Relish image

Burgers and brats get the star treatment with this sweet onion topping. Bourbon adds a lovely caramel note, and the crushed pepper flakes turn up the heat. -Janet Roth, Tempe, Arizona

4 large sweet onions, chopped
2 tablespoons canola oil
3 garlic cloves, minced
1/3 cup bourbon
4 plum tomatoes, peeled, seeded and chopped
1/2 cup golden raisins
1/4 cup sugar
1/4 cup packed dark brown sugar
1/4 cup cider vinegar
1 teaspoon mustard seed
1/2 teaspoon salt
1/2 teaspoon ground turmeric
1/2 teaspoon ground mustard
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
Cooked sausage or meat of your choice

Steps:

  • In a large saucepan, cook onions in oil over medium heat 40-45 minutes or until onions are golden brown, stirring occasionally. Add garlic; cook 1 minute longer. Remove from heat. Add bourbon, stirring to loosen browned bits from pan., Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until thickened. Store in airtight containers in the refrigerator up to 1 week. Serve with sausage or other meat.

2 small Vidalia or sweet onions
4 teaspoons butter
1/4 teaspoon salt
Dash pepper
Garlic salt to taste, optional

Steps:

  • Quarter onions halfway through and open slightly. Place each on a 18x12-in. piece of heavy-duty foil. Place 2 teaspoons butter in center of each onion; sprinkle with salt, pepper and, if desired, garlic salt. Fold foil to seal tightly. Bake at 350° until onions are tender, 50-60 minutes. Open foil carefully to allow steam to escape.

1 large vidalia onion (or other sweet onion variety)
1 chicken bouillon cubes or 1 vegetable bouillon cube
1 teaspoon butter
water

Steps:

  • Peel outer skin from onion.
  • Cut slice off bottom root end of onion so it stands upright.
  • Cut cone shape out of top of onion with small sharp knife, leaving at least 1/2 inch intact in bottom of onion.
  • Place onion in bowl.
  • Place bouillon cube and butter in hole in onion.
  • Fill bowl with water, covering onion halfway up side.
  • Cover onion and bowl loosely with waxed paper; microwave at HIGH 5 to 6 minutes or until onion is tender and can be separated with fork.
  • Serve broth with onion, if desired.

My brother gave me this recipe. It reminds me of French Onion Soup, without the cheese. It's very easy to make, and can be cooked on the grill or in the oven.

4 large vidalia onions
4 beef bouillon cubes or 4 chicken bouillon cubes
8 tablespoons butter
salt and pepper
aluminum foil

Steps:

  • Preheat oven to 325 degrees.
  • After cleaning and coring onion, put one bouillon cube into each onion core. Salt and pepper to taste.
  • Fill rest of onion core with butter.
  • Wrap loosely in foil allowing room inside for expansion.
  • Cook slowly for 3 hours, depending on your preference on how soft you want your Vidalia Onion. The longer and slower it cooks the better.
  • Pour finished product into a deep bowl, and enjoy.
