¼ head savoy cabbage, thinly sliced
4 apples, cored and diced with peel
½ cup finely chopped walnuts
6 stalks celery, diced
⅓ cup mayonnaise
1 tablespoon white sugar
½ teaspoon salt

Steps:

  • Use a chef's knife to slice cabbage into thin pieces 1 to 2 inches long. Do not use the large ribs of the cabbage, as they are too strongly flavored.
  • In a large bowl, toss together the cabbage, apples, walnuts, celery, mayonnaise, sugar and salt until evenly coated. Serve immediately or store in the refrigerator for up to one day.

1 cup whole walnut halves
1 heart celery with greens, wiped clean and chopped
1/2 red onion, thinly sliced
1 cup red seedless grapes, split
2 Gala apples, seeded and chopped
1 lemon, juiced
3 tablespoons honey, eyeball it
2 tablespoons apple cider vinegar
1/2 teaspoon ground cardamom, eyeball it
2 tablespoons fresh dill, finely chopped
2 teaspoons Dijon mustard
1/4 cup extra-virgin olive oil, eyeball it
2 to 3 tablespoons cream, eyeball it
Salt and pepper
1 head Bibb lettuce or butter lettuce

Steps:

  • Toast nuts in a small skillet over moderate heat in a small pan until aroma develops and nuts crisp a bit, 5 to 6 minutes. Set aside to cool.
  • Combine walnuts, celery, onion, grapes and apples in a medium bowl. Whisk lemon juice, honey, vinegar, cardamom, dill and mustead, then whisk in extra-virgin olive oil in a slow stream. When oil becomes incorporated stream in cream, then season the dressing with salt and pepper, to taste.
  • Dress salad and adjust salt and pepper, to taste. Use 2 large lettuce leaves per serving to form a bed for the salad.

1 head green cabbage (cored, thinly sliced or chopped small)
4 granny smith apples, peeled and cut into juiienne strips
3 -4 celery ribs, chopped
3/4 cup mayonnaise
3/4 cup yogurt, plain
1 tablespoon Dijon mustard
3 -4 tablespoons sugar
1/4 cup vegetable oil
1 teaspoon salt (or to taste)
1/4 cup red wine vinegar
2 cups chopped walnuts (leave the walnuts coarsley chopped)
1 cup blue cheese, crumbled (optional and to taste)
1 small red onion (cut into rings or thinly sliced)
1 granny smith apple, unpeeled and cut into thin slices to garlish

Steps:

  • In a small bowl whisk togther mayonnaise, yogurt, mustard, oil, 1 teaspoon salt (or to taste) and vinegar until smooth.
  • In a very large bowl mix together, cabbage, apple strips, celery and walnuts.
  • Pour the dressing over the cabbage mixture; toss to combine.
  • Season with salt and pepper if desired.
  • Cover and refrigerate for a minimum of 6 hours or overnight (toss a couple of times during chilling time to combine the cabbage with the dressing) .
  • Just before serving sprinkle with the blue cheese and red onions on top, then garnish with apple slices around the outside of the bowl.
  • Sprinkle with more walnuts if desired.
  • Delicious!
