Thick and decadent, this homemade topping reminds everyone of after-dinner mints. Pour the luscious sauce over ice cream or slices of plain cake for an irresistible dessert.

2 cups sugar
1 cup butter, cubed
1/2 cup water
1/2 cup light corn syrup
4 cups semisweet chocolate chips
1/2 cup creme de menthe
Ice cream

Steps:

  • In a large saucepan, combine the sugar, butter, water and corn syrup. Bring to a boil over medium heat, stirring constantly. Boil for 3 minutes. Remove from the heat. Add chocolate chips and creme de menthe; whisk until smooth., Serve warm over ice cream or transfer to storage containers and refrigerate. , To serve: Scoop out desired quantity and reheat in microwave until warmed.

Sauce
4 1/2 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
1/3 cup hot water
1/4 cup light corn syrup
3/4 teaspoon peppermint extract
Cakes
5 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
10 tablespoons unsalted butter
3 large eggs
3 large egg yolks
1 1/2 cups powdered sugar
1/2 cup all purpose flour
Vanilla ice cream

Steps:

  • For sauce:
  • Stir both chocolates in top of double boiler over barely simmering water until melted. Add 1/3 cup hot water, corn syrup and extract; whisk until smooth. Remove from over water. Cool slightly. (Can be made 2 days ahead. Cover; chill. Before serving, rewarm in saucepan over low heat, stirring constantly.)
  • For cakes:
  • Preheat oven to 450°F. Butter six 3/4-cup soufflé dishes or custard cups. Stir chocolate and butter in heavy medium saucepan over low heat until melted. Cool slightly. Whisk eggs and egg yolks in large bowl to blend. Whisk in sugar, then chocolate mixture and flour. Pour batter into dishes, dividing equally. (Can be made 1 day ahead. Cover; chill.)
  • Bake cakes until sides are set but center remains soft and runny, about 11 minutes or up to 14 minutes for batter that was refrigerated. Run small knife around cakes to loosen. Immediately turn cakes out onto plates. Spoon sauce around cakes. Serve with ice cream.

8 fresh mint leaves
1 ounce dark baking chocolate, melted
WHIPPED CREAM:
1/2 cup heavy whipping cream
3 tablespoons sugar
1/8 teaspoon peppermint extract
HOT CHOCOLATE:
4 cups 2% milk
1/2 cup heavy whipping cream
4 teaspoons minced fresh mint (about 16 leaves)
1 cup semisweet chocolate chips

Steps:

  • Brush both sides of mint leaves with melted chocolate. Place on a waxed paper-lined baking sheet; refrigerate until set., In a small bowl, beat cream until it begins to thicken. Add sugar and extract; beat until soft peaks form. Refrigerate until serving., In a large saucepan, heat milk and cream over medium heat just to simmering (do not boil). Remove from heat; add mint. Whisk in chocolate chips until melted; return to heat and heat through., If desired, pour hot chocolate through a strainer to remove mint leaves. Top servings with whipped cream and chocolate leaves.

Steps:

  • Place chocolate in a large heatproof bowl. Bring cream and liqueur, if using, to a simmer over medium-high heat; pour over chocolate. Let stand 10 minutes; stir to combine with a rubber spatula.
