WARM PEAR SUNDAES

Steps:
- In a bowl, combine the brown sugar, butter and cream. Add the pears; toss to coat. Spoon into a greased 1-qt. baking dish. , Cover and bake at 425° for 10-15 minutes or until pears are tender. Serve over ice cream.

RED HOT CINNAMON PEAR SUNDAES
Red hot cinnamon candies have been 1 of my favorite ingredients since my childhood & SusieQusie can tell you that pears have also been favored in recent yrs. This is the 2nd of 2 recipes I've entered that feature cinnamon candies & my source is eatcannedpears.com. (Time does not include time for sauce to cool)

Steps:
- In a med saucepan, combine sugar, water & candies. Bring mixture to a boil, stirring constantly. Reduce heat to med & boil mixture for 10 min, stirring occ.
- Remove from heat & cool at least 20 min b4 using (or cool, cover & refrigerate to store).
- To Assemble Sundaes: Scoop ice cream into 6 dessert dishes & spoon sliced pears over ea sundae. Spoon cinnamon sauce over ice cream & sprinkle w/more cinnamon candies. Serve immediately & store any leftover sauce in refrigerator.
- NOTE: W/the combined sweetness of the canned pears, cinnamon candies & ice cream used for the sundaes -- I would be inclined to reduce the sugar amt in the sauce to 1/2 cup.

GRILLED PEAR SUNDAES
Who says you can't make dessert on the grill? Our home economists whipped up this comforting treat that's sure to turn heads...and keep healthy-eating commitments. Sweetened with cinnamon-sugar, the warm and tender pear slices are served alongside a little vanilla ice cream.

- Peel, halve and core pears; cut each half lengthwise into six wedges. Mix sugar, cinnamon and pepper; sprinkle over pears., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill pears, covered, over indirect medium heat 2-3 minutes on each side or until tender. , Serve pears with ice cream. Drizzle with honey.

WARM CHERRY SUNDAES
Steps:
- In a small saucepan, combine wine or cherry juice and sugar; bring to a boil, stirring until sugar dissolves. Add cherries and return to a boil. Remove from heat and transfer cherries to a bowl, leaving liquid in pan. Let stand 5 minutes. Strain any juice that has accumulated from cherries back into the pan. Bring liquid back to a boil and boil over high heat until volume is reduced by half, about 10 minutes. Remove from heat and stir in vanilla and almond extracts. Let cool until lukewarm. Scoop ice cream into 6 stemmed wine glasses or dessert dishes. Top with equal amounts of cherry sauce and whipped topping. Garnish with almonds and a chocolate covered cherry.
PEAR & CHOCOLATE SUNDAE
Hot chocolate sauce with pears, almonds and ice cream.

Steps:
- Place the almonds in a bowl and add the icing sugar and water. Stir until the almonds are evenly coated and heat up a medium sized frying pan. Add the almonds and stir until caramelised. Set aside.
- Melt the chocolates, syrup and 150ml of the double cream over a pan of barely simmering water. Stir every now and again until melted, then take off the heat until stir until smooth.
- Whip the remaining 150ml of double cream until thick but still soft. Roughly chop the almonds.
- Add one scoop of ice cream to each sundae glass or bowl. Place a pear halve on top, followed by a dollop of thick cream. Sprinkle over some almonds and repeat again with ice cream, pear and cream, leaving the almonds out this time.
- Pour the warm chocolate sauce on the top of each glass and sprinkle some almonds on top. Eat straight away.

- Preheat the oven to 425°. In a medium saucepan, combine the sugar and water. Boil over moderately high heat, without stirring, washing down any crystals that form on the side of the pan, until a deep amber caramel forms, 6 to 8 minutes. Remove from the heat and stir in the cream; the sauce will bubble up. Pour the caramel into a heatproof cup and let cool slightly. Stir in the balsamic vinegar; keep warm.
- Heat a rimmed baking sheet in the oven. In a bowl, toss the pears with the melted butter and salt. Spread the pears on the hot baking sheet and roast, stirring once, until golden around the edges and tender, 15 minutes; transfer to a plate to cool.
- Reduce the oven temperature to 350°. Spread the hazelnuts in a pie plate and toast for 7 minutes; transfer to a cutting board and coarsely chop.
- Spoon the pears into bowls and top with vanilla ice cream. Pour the balsamic-caramel sauce on top, sprinkle with the hazelnuts and serve.
