WATERMELON-LIME-MINT COOLER

- In a small heatproof bowl, pour 1/2 cup boiling water over sugar and mint; stir until sugar has dissolved. Let cool completely, about 20 minutes. Strain syrup into a blender; discard mint.
- Add watermelon, lime juice, and 1 3/4 cups cold water; blend until smooth. Strain through a fine-mesh sieve.
- Serve over ice, garnished with a mint sprig, or refrigerate in an airtight container up to 3 days. If using tequila, stir a shot (1-ounce) into each glass before serving.

- Blitz together the watermelon with the juice of the limes and caster sugar until completely juiced. Push the juice through a sieve into a measuring jug. Measure the amount of juice you have and soak as many leaves of gelatine as you need, using the ratio of 1 leaf of gelatine per 200ml. Dissolve the soaked gelatine in a little hot water from the kettle and add to the watermelon juice. Pour the juice into small moulds and leave to set overnight. Unmould the jellies and serve alongside bite-sized chunks of watermelon scattered with chopped mint and drizzled with honey.

- PREP: Chop fresh watermelon into 1-2 inch chunks and place in ziploc bag to put in freezer. Ideally prep the night before and let freeze overnight but 4-5 hours freezer time should do the trick. .
- 1. Combine sugar, mint, and 4-5 squeezed limes in a heat-safe bowl, stirring ingredients together. Let mixture sit for 10-15 minutes.
- 2. Boil 1 cup of water. Add boiled water to sugar mixture, stirring well until sugar has dissolved completely. Let simple syrup mixture sit for another 10 minutes and put to the side.
- 3. In a blender, pre-blend 2-3 cups frozen watermelon and 2 cups ice until slushy. Add,.
- - 1 1/2 cups tequila.
- - leaves of 2-3 mint sprigs.
- - leaves of 1-2 basil sprigs.
- - Juice of 3-4 limes.
- - 2 oz of orange juice.
- - 4-5 oz of homemade simple syrup to taste.
- 4. Blend until fully combined, add ice to reach desired consistency. Garnish with a mint leaf and fresh lime wedge.

- In a small saucepan over medium high heat, whisk together 1 cup water and 1 cup granulated sugar. Add lemon peels, juice, and star anise pods. Bring mixture to a boil, then stir until all the sugar is dissolved. Take the syrup off the heat and set aside to cool.
- Slice a medium watermelon into 1 inch-thick wedges. Arrange in a baking dish (1 layer divided among 2 baking dishes is best, but you can double the layers of melon if you'll remember to give them a toss halfway through chilling)

- For the cucumber, use about 1/3 of a large cucumber or a whole Kirby. Peel off the skin and remove any green pith.
- Cut watermelon and cucumber into small chunks, place in food processor and pulse until all the chunks are broken down into a purée. Strain the purée over a bowl. You can also use a juicer instead if you have one.
- For the simple syrup, place 3/4 cup of water, 3/4 cup of sugar and 3-4 mint sprigs in a saucepan. Bring to a boil, then turn off heat and allow to cool completely.
