- Cut the watermelon in big cubes first. I like to chill the chopped watermelon for an hour before making mojitos. Also chill the simple syrup if you are using it.
- Combine mint leaves and simple syrup in a bowl. Muddle well for a minute. Muddling releases all the flavors of mint leaves.
- Next place the roughly chopped chilled melon cubes in a blender jar and blend until very smooth. Strain the juice to remove any seeds and pith. Add the watermelon juice to the muddled mint and sugar syrup. Mint and watermelon should combine well. If you are adding alcohol, add watermelon juice and rum together.

- Slice the watermelon in half. Remove the skin and pith from one half of the watermelon, then dice into cubes. Place the cubes into a blender and blend on high for 30 seconds, or until the cubes are completely liquified. Set a fine mesh strainer over a bowl, then pour the puree through the strainer. Discard the residual pulp. Divide the remaining watermelon into slices, then divide the slices into wedges.
- Combine the mint, lime juice, and sugar in a tall collins glass. Use a muddler to gently mash the mint leaves and dissolve the sugar into the lime juice. Take care not to tear the mint leaves! Muddling releases flavor and aroma, but tearing can result in a more bitter flavor.
- Pour in the rum, then add enough ice to fill the glass. Pour 4 oz (half a cup) of watermelon juice over the ice, then mix with a bar spoon.

- In a small saucepan, combine the sugar and water. Cook until the sugar is melted and the syrup is clear. Turn off the heat and add the mint leaves to the syrup.
- Cover the pot and let the leaves steep for 10 minutes. Then, strain the mint from the simple syrup and discard the leaves.
- While the mint syrup is steeping, cut up watermelon into cubes and place in blender. Process the watermelon until it's smooth, about 30 secs. Strain the watermelon juice through a sieve to remove any pulp or seeds.
- To a collins glass add 4-6 mint leaves, 1 slice of lime, and about 2 teaspoons of mint simple syrup and muddle. (Bruising the mint makes the mint leaves sweet. If you tear the mint leaves, they will taste bitter.)
