OVERNIGHT WAFFLES

Overnight Waffles image

This waffle recipe from Mark Bittman's How to Bake Everything requires an overnight rise from yeast, resulting in the most flavorful breakfast pastry possible.

Provided by Mark Bittman

Categories     Waffle     Breakfast     Brunch     Pastry

Yield 4-6 servings

Number Of Ingredients 9

2 cups flour
1 tablespoon sugar
2 teaspoons instant yeast
1/2 teaspoon salt
1 1/2 cups milk, lukewarm
1 stick butter, melted and cooled
1/2 teaspoon vanilla extract (optional)
Neutral oil (like grapeseed or corn) for cooking
2 eggs, separated

Steps:

  • The night before you want to serve the waffles, combine the flour, sugar, yeast, and salt in a large bowl. Stir in the milk, then the melted butter and the vanilla if you're using it, until just combined. Cover with plastic wrap and set aside overnight at room temperature. (Of course you can do this in the morning if you want waffles for supper.)
  • When you're ready to bake, brush the waffle iron lightly with oil and heat it. Stir the egg yolks into the batter. Beat the whites until they hold soft peaks, then fold them gently into the batter until it's relatively smooth.
  • Spread a ladleful or so of batter onto the waffle iron and bake until the waffle is done, usually 3 to 5 minutes, depending on your iron. Serve immediately or keep warm for a few minutes in a 200°F oven. If you're making them ahead, store at room temperature in an airtight container and warm them in a 300°F oven for about 5 minutes just before serving; or freeze them in single layers, separated by sheets of parchment, and reheat in a 350°F oven for 8 to 10 minutes.
  • Variation:
  • Whole Grain Overnight Waffles: Replace some or all of the all-purpose flour with any whole grain flour (whole wheat, oat, quinoa, kamut, or fine cornmeal, for instance) or combination of flours.

WEDNESDAY WAFFLES

Wednesday Waffles image

We love to serve these on Waffle Wednesdays for dinner or for large group gatherings. These are high in fiber and flavor with whole wheat flour, flax seed meal, and wheat germ, and are quite delicious and filling. Serve with homemade blueberry syrup, butter syrup, yogurt, peanut butter and honey, or fresh strawberries and whipped cream. Make a huge batch with a mixer and freeze the uneaten waffles for easy weeknight meals or quick and hearty breakfast warmed and crisped in the toaster.

Provided by Lori Rucker

Categories     Breakfast and Brunch     Waffle Recipes

Time 1h5m

Yield 24

Number Of Ingredients 16

cooking spray
8 eggs, beaten
7 cups water
1 cup canola oil
1 cup unsweetened applesauce
4 teaspoons vanilla extract
4 cups whole wheat pastry flour
2 cups dry milk powder
2 cups flax seed meal
1 cup wheat germ
1 cup all-purpose flour
¼ cup baking powder
4 teaspoons baking powder
¼ cup white sugar
1 tablespoon ground cinnamon
1 teaspoon salt

Steps:

  • Spray a waffle iron with cooking spray and preheat according to manufacturer's instructions.
  • Beat eggs, water, canola oil, applesauce, and vanilla extract in a large bowl thoroughly combined. Whisk whole wheat pastry flour, dry milk powder, flax seed meal, wheat germ, all-purpose flour, 1/4 cup plus 4 teaspoons baking powder, sugar, cinnamon, and salt in a separate large bowl until thoroughly combined. Mix dry ingredients into wet ingredients 1 cup at a time to make a smooth batter.

WEDNESDAY MORNING WAFFLES

Wednesday Morning Waffles image

I tried to make a waffle that would contain enough nutrition to stand alone as breakfast for the kids, but would also be a snap to put together on a busy morning. This recipe can be mixed the night before and cooked in the morning. It also is great for pancakes. Sometimes I make the batch ahead, cool them thoroughly on racks, and freeze them in zip bags. They reheat beautifully just like name-brand boxed waffles.

Categories     Breakfast

Time 13m

Number Of Ingredients 11

1 cup unbleached all-purpose flour or 1 cup whole wheat pastry flour

1/3 cup sugar
3 tablespoons molasses
1 teaspoon vanilla
1 3/4 cups skim milk
1/4 cup oil (I use canola)
1 egg

Steps:

  • Place all wet ingredients in mixing bowl.
  • Combine dry ingredients in separate bowl.
  • With mixer running, add dry to wet a few spoonfuls at a time until batter consistency is reached.
