This is a creamy soup with a kick. 1 point for a generous cup. I serve it with weight watchers Tostadas.

Number Of Ingredients 9

6 yellow squash or 6 zucchini
1/4 white onion
2 garlic cloves
2 tablespoons chicken bouillon
1 teaspoon oregano
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups green enchilada sauce

Steps:

  • wash and dice squash.
  • chop onion.
  • peel and dice garlic.
  • add above ingredients in large pot with just enough water to cover the squash.
  • add oregano, cumin, salt, pepper and bouillon.
  • add green enchilada sauce.
  • bring to a boil and simmer until squash is very tender, about 20 minutes.
  • blend until creamy with an immersion blender, or in food processor.
  • garnish with fat free sour cream and minced green onions.

8 corn tortillas
16 ounces fat-free refried beans
2 cups chopped lettuce
1 diced tomato
8 tablespoons fat free sour cream
4 roasted green chilies or 4 your favorite salsa
1/4 cup diced onion

Steps:

  • Preheat oven to 350.
  • Bake corn tortillas for approximately 3 to 5 minutes per side until they are slightly brown on each side. You want the tortillas to be crispy. Watch carefully so they don't burn.
  • Heat beans and spread 1/4 cup on each tortilla.
  • Spread 1 tablespoon of fat free sour cream over the beans.
  • Garnish with lettuce, tomatoes, green chile or salsa, and onions.

  • Stir in broth, water, salt, and cayenne; bring to a boil over medium-high heat. Reduce heat to medium-low; simmer, uncovered, until vegetables are very tender, about 20 minutes.
  • Remove from heat; puree soup in pot with an immersion blender until almost smooth. (It’s nice to have some texture in the soup, but for a smoother consistency, puree completely and strain if desired.)
  • Divide soup evenly among 8 bowls; add a squeeze of fresh lime and garnish each with 1½ Tbsp yogurt, 3 Tbsp tomato, 1 Tbsp chives and 1 Tbsp basil.
