HONEY & SPICE CAKE
This cake is tender and moist with tremendous depth of flavor, and the taste of honey shines through.

Steps:
- I make this cake in three nonstick 8x4-inch loaf pans, but it can also be made in two nonstick 9x5-inch loaf pans or an angel food cake pan WITHOUT a removable bottom or a 9x13-inch sheetpan.
- Preheat the oven to 350°F. Spray the pan(s) with nonstick cooking spray and dust lightly with flour. If using an angel food cake pan, line the bottom with lightly greased parchment paper.
- In a very large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, cloves and allspice. Make a well in the center and add the oil, honey, brown sugar, eggs, coffee or tea, orange juice, and orange liqueur and vanilla extract.
- Using a strong wire whisk or an electric mixer on low speed, mix the ingredients until well combined. The batter will be pourable.
- Pour the batter into the prepared pan(s). Place the pan(s) on 2 baking sheets stacked together and bake until the cakes are set, domed and spring back when you touch them gently in the center (the stacked sheet pans will prevent the bottom from browning too quickly). For loaf cakes, bake for 45-50 minutes; for angel cake pans, bake for 60 to 70 minutes; for sheet-style cake, bake for 40 to 45 minutes. Let the cake(s) stand for 15 minutes before removing from the pan(s). Run a butter knife along the edges of the pans to help the cakes release, then transfer to a wire rack to cool completely. Wrap the cake(s) in foil and store at room temperature for several days.
- Freezer-Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight in the refrigerator before serving.

EASY TRADITIONAL WELSH CAKE RECIPE
Steps:
- Combine the lard and butter in a small bowl.
- Rub the fats into the flour and salt until the mixture resembles breadcrumbs.
- Stir in the sugar, currants, mixed spice and honey.
- Add the beaten egg and mix to form a firm dough.
- On a floured board, roll or pat the mixture until about 2cm thick.
- Cut into 6 centimeters in diameter discs (2.3 inches) and griddle over medium heat until golden brown on both sides.
- Dust the Welsh cakes with caster sugar and eat immediately or store in an airtight tin.

These Welsh honey cakes, also known as Tiessennau Mel in Welsh, are quick and easy to make and delicious topped with pistachios and dried raspberries.

- Step 1:Preheat the oven to 180C (fan 160C, gas mark 4) and grease a 12 hole non stick muffin tin.Step 2:Sieve together the flour, bicarbonate of soda, allspice and cinnamon.Step 3:Cream together the butter, sugar and honey until light and fluffy.Step 4:Gradually beat in the eggs and then fold in the flour mixture, adding the milk for a dropping consistency.Step 5:Divide equally between the 12 holes of the muffin tin. Bake in the oven for 25 minutes until risen, golden and springy to the touch.Step 6:Remove and cool in the tin for 5 minutes and then turn them out to continue cooling on a wire rack.Step 7:To make the icing mix the icing sugar with the extract and 2 tablespoons of water to make an icing that just runs off a spoon.Step 8:Place all the muffins so they are bottom side up and spoon over the icing so it drips down the sides and top with pistachios and some freeze dried raspberries if using. Leave for 15 minutes to set before serving.
WELSH CAKES
We attended a county fair in Wales and the ladies of the local church were baking and selling these. We asked for the recipe and they graciously shared it with us. This has been converted to US standard. They are delicious and not as sweet as some of our style cookies. Dried currants can be used in place of the raisins.

- Sift flour, baking powder and salt into bowl. Put in butter and lard and mix until resembles fine breadcrumbs. Stir in sugar and currants or raisins. Beat the eggs lightly and add to flour mixture with just enough milk to make a firm dough similar to shortcrust pastry.
- Chill dough 1 to 2 hours.
- Roll the dough to 1/4 inch on floured surface and cut with 3 inch rounds. Bake the cakes on a greased griddle or frying pan (I use my electric skillet with just a little non-stick spray) over low heat until golden brown. Cool and sprinkle with sugar. These also freeze well.

SPICED HONEY DRIZZLE CAKE

- Heat oven to 180C/160C fan/gas 4. Butter and line a 900g loaf tin with baking parchment. Beat the butter and sugar with an electric whisk until creamy. Whisk in the honey, egg, milk, spices and a pinch of salt (don't worry if it curdles slightly, it will become a loose batter), then fold in the flour.
- Tip into the prepared loaf tin and bake for 45 mins until a skewer inserted in the middle comes out clean. Leave the cake to cool for 10 mins, then transfer to a wire rack to cool completely.
- For the glaze, melt the butter and honey in a small pan until smooth. Leave to cool until thickened, then drizzle over the top of the cooled cake. Leave to set before serving.

TIESSENNAU MEL (HONEY CAKES) WELSH
This is an adopted recipe and after trying it out, I must say I was very surprised on how good it tastes! Kinda homey. I don't dredge it with sugar before or after baking as I don't really need the extra bit of sugar. I used Wildflower honey.

- Preheat oven - Gas mark 6 (400F) or 7 (425F) or 200°C If you are using a fan oven, reduce by 25°C.
- Grease your patty tins.
- Sieve together flour, cinnamon and bicarbonate of soda.
- Cream butter and sugar until fluffy.
- Separate the egg yolk from the white.
- Beat the yolk into sugar and butter, then add the honey, gradually.
- Stir in the flour with a little milk as required and mix all together lightly.
- Whisk the egg white into a stiff froth and fold into mixture.
- Half fill small patty tins with the mixture; dredge the top of each with caster sugar.
- Bake in a hot oven for 20 minutes. Watch these little fellows carefully. They brown rather quickly.
- When ready sprinkle a little more sugar.

- Rub the butter into the flour as you would if making biscuits, then stir in the sugar, spice, and dried fruit. Add the egg to make a soft but not sticky dough. Form a disc, cover with plastic wrap, and leave in the refrigerator for a minimum of 20 minutes.
- Roll out on a floured surface to a thickness of about 1/4 inch, and cut out your little cakes; you will need to re-roll and so forth but that shouldn't be problematic. Preheat your unoiled griddle or cast-iron frying pan and cook the cakes for about 3 minutes each side, until golden brown. Remove to a cold plate and sprinkle with sugar.

- Sieve the flour, baking powderand spice into a bowl.
- Lightly grease a tin pie plate measuring about 8-1/2-inches across the top.
- Cream the butter with 3 oz sugar until creamy and light.
- Add the egg yolks then the 1/4 lb honey, gradually.
- Gently mix in the flour, then the milk.
- Spread the mixture in the prepared tin, mounding it slightly in the center.
- Bake at 400 F (200 C) gas mark 6 for about half an hour.
- Let the cake rest in its tin for 2 minutes before turning it out on to a wire rack.
- Let it cool for 10 minutes then slide it onto a baking tray and brush the top with 1 tablespoon warmed honey - or red currant jelly if you prefer.
- Whisk the egg whites and the remaining 1 oz sugar to make a glossy meringue mixture. Swirl this over the top of the cake and bake at 325 F (160 C) gas mark 3 for about 20 minutes.
- Serve the cake when it is cold.
