1 ¼ cups warm water
1 ½ teaspoons honey, or sugar
1 ½ teaspoons active dry yeast
2 cups whole wheat flour
1 ⅓ cups all-purpose flour
2 tablespoons oil
1 ½ teaspoons salt

Steps:

  • In a large bowl, whisk the water, honey, and yeast. Let sit for 5 minutes, until the yeast has bloomed.
  • NOTE: It may be tempting to use all whole wheat flour in this recipe, but, in our testing, that method resulted in dense, tough, squat breads that barely rose when we tried to proof them. Using some all-purpose flour was necessary to give us the rise and soft, pillowy texture we wanted in a good sandwich bread.
  • Pour in the wheat flour, all-purpose flour, oil, and salt, and mix until the dough comes together in a ball that does not stick to your fingers.
  • NOTE: You can also do the first 2 steps in a standing mixer fitted with a dough hook attachment, mixing on low speed until the dough no longer sticks to the sides.
  • On a lightly floured surface, knead the dough a few times until it really starts to form a tight ball.
  • Form the dough into a ball shape and transfer to a greased bowl, turning the dough to coat it in grease. Cover the bowl with plastic wrap or a wet towel and store in a warm place for 1 hour.
  • Allow the dough to proof until it has doubled in size. Save the plastic wrap or towel as you'll be using it again.
  • Transfer the proofed dough to a lightly floured surface and press the dough - don't stretch - into a 7x7-inch (18x18 cm) square.
  • Fold the top 3rd of the square down, and the bottom 3rd up to form an even rectangle. Pinch the top fold to seal the dough.
  • Roll the dough over so that the seal faces upward and fold both ends up toward the center, so that the dough has formed an even log shape about the size of your loaf pan.
  • Transfer the dough to a greased loaf pan and cover with with the same plastic wrap or towel used before.
  • Let the dough rise for 1 hour, until it has poofed over the edge of the loaf pan about 1½ inches (4 cm).
  • Preheat the oven to 375°F (190°C).
  • Remove the plastic wrap or towel and transfer to the oven and bake for 50-55 minutes, until the dough has browned slightly and formed a light brown crust.
  • Immediately remove the loaf from the pan and set aside to cool for at least 1 hour before slicing.
  • Store in an airtight container or bag. The bread can be stored in freezer up to 6 months.

Soft Whole Wheat Bread | 100% Wholemeal Bread image

Soft Wholemeal bread made with whole wheat flour, yogurt and yeast.

3 cups 100% whole wheat flour ((chapati atta) - 360 grams)
1 to 1.25 cups water (- 250 ml to 312 ml - i added 1.25 cups water)
1 teaspoon instant yeast (or ½ tablespoon dry active yeast)
1 teaspoon regular salt (or rock salt (sendha namak))
1 tablespoon regular sugar (or unrefined cane sugar)
2 tablespoon Ghee (or oil or butter)
2 tablespoons Curd ((yogurt or dahi - dairy or vegan) or 1 to 1.5 tablespoon vinegar or 1 tablespoon lemon juice)
some milk for brushing the top of the bread ((dairy or vegan) - optional)

Steps:

  • Sieve the flour with salt or just mix the flour with the salt.
  • Add the 1 tsp instant yeast and just lightly mix. You can even mix the instant yeast granules with ½ cup water and sugar in a separate bowl as shown in the video. Then add this mixture to the wheat flour. Sometimes instant yeast granules do not dissolve completely in the dough and thus you can dissolve them separately in water.
  • Then add sugar, oil (or oil or butter) and curd.
  • First just mix everything lightly and then slowly adding water in intervals knead to a smooth, soft dough.
  • Add more water if required. The dough should be slightly sticky.
  • Brush some water all over the dough and keep in a deep wide bowl covered with a lid or kitchen towel for 30-35 minutes.
  • Remove and then lightly punch & knead the dough again.
  • Make a log of the dough and seam the edges.
  • Place it in a greased loaf pan for 40-45 minutes.
  • Cover and let it rise.
  • Preheat the oven at 220 degrees c for atleast 20 minutes.
  • Once the bread has risen in the loaf pan, keep in the oven and bake at 220 degrees celsius for 22 to 25 minutes or until the bread sounds hollow when tapped.
  • If the wheat bread begins to brown from the top, then cover with butter paper or aluminium foil.
  • When whole wheat bread is still lightly hot, remove from the loaf pan and keep it on a wired tray to cool.
  • Warm 1 or 1.25 cups of water.
  • Add 1 tbsp sugar and dry active yeast.
  • Stir and let the yeast activate.
  • This usually takes about 10 to 12 minutes.
  • Sieve both the flour with salt.
  • Add the proofed yeast mixture, ghee/butter/oil and yogurt.
  • Mix all the ingredients first.
  • Then begin to knead the dough. Add more water if required. The dough should be slightly sticky.
  • Continue to knead, till you get a smooth dough which when stretched doesn't tear.
  • Rub or brush water all over the dough and keep in a covered bowl to leaven for 1.5 to 2 hours.
  • After 1.5 to 2 hours, remove the dough and punch and deflate it lightly.
  • Roll a single log of the dough. Tuck the edges down on both sides of the bread loaf.
  • Place the bread in a greased loaf pan (9×5 inches) with the tucked edges facing downwards.
  • Cover the loaf pan and let the dough leaven for 40 minutes to 1 hour.
  • Preheat the oven at 220 degrees c for at least 20 minutes.
  • Once the bread has risen in the loaf pan, give a 2 to 5 mm cross or slits on the bread and lightly brush with milk.
  • Then keep in the oven and bake bread at 220 degrees celsius for 22 to 25 minutes or until the bread sounds hollow when tapped.

1/4 cup warm water (105°F to 115°F)
1/2 cup packed brown sugar or honey
1/4 cup butter or margarine
3 teaspoons salt
2 1/2 cups hot water
4 1/2 cups whole wheat flour
2 3/4 to 3 3/4 cups all-purpose flour

Steps:

  • In small bowl, dissolve yeast in warm water. In large bowl, mix brown sugar, butter, salt and hot water; cool 5 minutes.
  • To cooled brown sugar mixture, beat in 3 cups of the whole wheat flour with electric mixer on low speed until moistened, scraping bowl frequently. Beat on medium speed 3 minutes, scraping bowl frequently. Beat in remaining 1 1/2 cups whole wheat flour and the dissolved yeast. With spoon, stir in 2 1/4 to 2 3/4 cups of the all-purpose flour until dough pulls cleanly away from side of bowl.
  • On floured work surface, knead in remaining 1/2 to 1 cup all-purpose flour until dough is smooth and elastic, 10 to 15 minutes. Grease large bowl with shortening or cooking spray. Place dough in bowl; cover loosely with plastic wrap and cloth towel. Let rise in warm place (80°F to 85°F) 30 to 45 minutes or until light and doubled in size.
  • Generously grease 2 (8x4- or 9x5-inch) loaf pans with shortening or cooking spray. Gently push fist into dough to deflate; divide in half. On lightly floured work surface, roll out each half of dough with rolling pin into 18x8-inch rectangle. Starting with one 8-inch side, roll up dough tightly, pressing with thumbs to seal after each turn. Pinch edge of dough into roll to seal; press each end with side of hand to seal. Fold ends under loaf; place seam side down in pan. Cover; let rise in warm place 30 to 45 minutes or until light and doubled in size.
  • Heat oven to 375°F. Uncover dough; bake 30 minutes. Reduce oven temperature to 350°F; bake 10 to 15 minutes longer or until loaves sound hollow when lightly tapped. Immediately remove from pans; place on wire racks. Cool completely, about 1 hour.

1¼ cups (300 ml) warm water
1 package active dry yeast
1 tablespoon honey (optional)
1¾ cups (350 g) whole kernel wheat or 2½ cups (300 g) whole wheat flour
1 teaspoon salt (optional)
1 tablespoon light olive or grapeseed oil (optional)
1 teaspoon lemon juice (optional)

Steps:

  • 1. Combine yeast, honey, and 1¼ cups (300 ml) warm water and set aside to proof, about 5 minutes.
  • 2. When starting with whole kernel wheat: Place wheat, and if desired, salt into the Vitamix Dry Grains Container and secure lid. Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High. Grind wheat for 1 minute. (Do not over process) Stop the machine and allow the flour to cool for a few minutes.
  • 3. When starting with whole wheat flour: Place flour and, if desired, salt into the Vitamix Dry Grains or Standard Container and secure lid.
  • 4. Select Variable 1.
  • 5. Turn machine on and slowly increase speed to Variable 6. Blend until a hole forms in the center of the mixture, about 5 seconds. Turn machine off and remove the lid.
  • 6. Pour oil, lemon juice, and yeast mixture into the hole in the flour. Secure the lid.
  • 7. To mix the dough, turn the machine on High for 1 second. Stop the machine. Remove lid.
  • 8. While the dough rests, lightly coat a loaf pan with vegetable cooking spray or shortening.
  • 9. To knead dough, two steps are required: Step 1: Use a nylon spatula to scrape the sides of the container. Pull the dough away from the container sides and into the center of the mixture. Step 2: With the switch on High, quickly turn the machine on and off five times.
  • 10. Repeat the above two-step process five times, or until the dough binds together in a soft elastic mixture.
  • 11. To remove the dough from the container, turn the machine on and off five times (to lift the dough up and away from the blades). Invert the container over the prepared pan and let the dough fall into the pan. Use a wet nylon spatula to remove any remaining dough.
  • 12. Use a wet (or oiled) nylon spatula to shape the loaf. Allow the dough to rise until the top of it reaches the top of the pan, about 15 to 20 minutes.
  • 13. Bake at 350°F for 35 minutes. Makes one loaf.

3 1/2 cups white whole wheat flour
1/3 cup vital wheat gluten
4 teaspoons instant dry yeast ("quick rise" or "rapid rise")
2 1/2 cups very warm water (120°F to 130°F)
1 tablespoon salt
1/3 cup coconut oil (melted and cooled (OR vegetable oil))
1/3 cup honey
4 teaspoons lemon juice
2 1/2 cups white whole wheat flour

Steps:

  • In the bowl of a stand mixer fitted with a dough hook, mix together 3 1/2 cups white whole wheat flour, vital wheat gluten, and quick-rise yeast until well combined.
  • Add the water and mix for one minute, scraping down bowl halfway through. Cover the bowl with a clean kitchen towel and allow to rest for 10 minutes.
  • Uncover the bowl and add the salt, oil, honey, and lemon juice. Beat for 1 minute.
  • Add the remaining 2 1/2 cups of flour, one cup at a time, mixing well between each cup. Knead the dough in the mixer (still using the dough hook) until the dough pulls away from the sides of the bowl and feels smooth rather than sticky. This usually takes 10 to 15 minutes, but if your dough pulls away and loses its stickiness sooner, it could take as little as 5 minutes.
  • Grease two nonstick bread pans measuring 8 1/2" x 4 1/2" x 2 1/2" to 9" x 5" x 3" each (or grease two regular bread pans and then line them with parchment paper). Preheat the oven to lukewarm by setting it to 350°F and then turning it back off after exactly 1 minute.
  • Turn the dough onto a greased surface. Evenly divide it into two loaves. Form and place the dough into the prepared bread pans, gently pressing it into the corners.
  • Place the pans in the warm oven and allow them to rise for 20 to 40 minutes, until the dough is nicely domed above the tops of the pans. Without removing the pans from the oven, turn on the oven to 350°F and set the timer for 30 minutes. The bread is done when the tops are golden brown and the internal temperature reaches 190°F to 200°F on an instant-read thermometer. Once the loaves are baked, immediately remove the hot bread from the pans to cool on a rack.

1 Tablespoon Active Dry Yeast
2/3 cup Honey
1/3 cup Oil (plus a little extra for hands)
7 1/2 cups Whole Wheat Flour (may use half whole wheat/half white flour)
1 Tablespoon Salt
Butter (to spread on top of bread)

Steps:

  • Heat oven to warm about 200 degrees.
  • Place warm water in large mixing bowl. Add yeast and stir. Stir in honey and let proof (start to form a creamy foam) for 5 minutes.
  • Add oil, flour, and salt. Begin by adding 7 cups of flour. Start to mix using the dough hook. Add remaining 1/2 cup of flour until dough pulls away from sides of mixing bowl. Using Bosch or Kitchenaid, knead for 10 minutes at medium-high speed. If you don't own a stand mixer, you can knead by hand.
  • Place a little oil on hands and shape into two bread loaves. Spray loaf pans with non-stick cooking spray. Put pans in a warm oven to let rise until double -- about 20 minutes.
  • Once bread has raised, turn oven to 350 degrees. Leave bread in oven and set timer for 25 minutes.
  • Check bread to see if it is golden brown. Once bread is done, remove from oven and spread butter all over warm loaves. Let cool for several minutes before removing from pan.
  • Spread butter and jam or honey on warm bread.
  • May freeze bread or eat within 2 days.

2 (.25 ounce) packages active dry yeast
⅓ cup honey
5 cups bread flour
3 tablespoons butter, melted
⅓ cup honey

3 ½ cups whole wheat flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
  • Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
  • Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

Simple Whole Wheat Bread image

PLEASE SEE MY METRIC CHART ABOUT THE FLOUR. Make sure the egg and oil are at room temperature and be sure to aerate your flour before measuring. No mixer? Just mix it in a bowl by hand but knead longer, about 150 turns. (This recipe also works with all white flour) - Jenny Jones

Number Of Ingredients 9

2 cups (240-260 g) whole wheat flour (Aerate Flour Before Measuring - See How)
1/2 cup (60-65 g) bread flour or all-purpose flour
2 teaspoons (1 packet / 7g) instant yeast (or active dry yeast)
2 Tablespoons sugar (or honey but add honey after the milk)
1 teaspoon salt
1 cup (240 mL) milk (reduced fat or whole milk), heated to 120-130° F for instant yeast (or 110-120°F for active dry)
2 Tablespoons (30 mL) olive oil (or any vegetable oil)
1 egg
about 1/4 cup additional bread flour

Steps:

  • Place flours, yeast, sugar & salt in a large mixing bowl.
  • Stir in milk, followed by oil and egg.
  • Beat on high for 2 minutes.
  • On low speed add about 1/4 cup bread flour until dough forms a mass.
  • Place dough on floured surface and knead 50 turns.
  • Cover and let rest 10 minutes.
  • Shape dough into a loaf and place in a greased 8 1/2 x 4 1/2 x 2 3/4-inch loaf pan.
  • Cover with a towel and let rise in a warm spot until it's one inch taller than the pan, about 35 minutes.
  • Meantime, preheat oven to 375° F.
  • Bake for 30 minutes. After the first 15 minutes, I cover the top of the loaf with a foil tent to prevent over-browning.
  • Remove immediately from pan onto a cooling rack. Let it cool at least 10 minutes before slicing.

If kneading in a stand mixer, attach the dough hook and knead for 5 to 7 minutes at low speed, until the dough is soft and smooth. Adjust its consistency with additional flour or water, if necessary.
  • Transfer the dough to a lightly greased bowl, cover it, and let it rise until puffy though not necessarily doubled in bulk, 1 to 2 hours., Gently deflate the dough, transfer it to a lightly oiled work surface, and shape it into an 8" log. Place the log in a lightly greased 8 1/2" x 4 1/2" loaf pan and cover the pan loosely with lightly greased plastic wrap or a reusable cover. , Let the bread rise for 1 to 2 hours, or until the center has crowned about 1" above the rim of the pan. Towards the end of the rising time, preheat the oven to 350°F.
  • Uncover the bread, place it in the oven, and bake for 35 to 40 minutes, tenting it lightly with aluminum foil after 20 minutes to prevent over-browning. A digital thermometer inserted into the loaf's center should register at least 190°F., Remove the bread from the oven and turn it out of the pan onto a rack to cool. For a soft, flavorful crust, rub the top of the warm bread with a stick of butter. Cool completely before slicing. , Store the bread, well wrapped, at room temperature for several days; freeze for longer storage.
