- Preheat oven to 425 degrees. Spray a 9x13 inch baking dish with cooking spray; set aside.
- Mix the chicken together with 1 cup of the cheese.
- Distribute the chicken and cheese mixture evenly among the tortillas. Roll up and place seam side down in the prepared pan.
- In a large saucepan, melt the butter. Add the flour; cook and stir for 1 minute.
- Add the chicken broth, whisking until smooth. Continue cooking over medium heat until sauce is thick and bubbly.
- Stir in the sour cream and diced green chiles. Season with salt and pepper, to taste.
- Pour the sauce in an even layer over the enchiladas. Sprinkle with remaining cheese.

- Heat 2 tablespoons of oil in a skillet over medium-high heat. Fry tortillas (1 at a time) for 5 seconds on each side to soften and make them pliable. Add more oil to pan as needed. Drain between layers of paper towel and keep warm.

- Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.

- In medium bowl, mix soup, sour cream and green chiles, chicken and 1 cup of the cheese.

- Melt butter in olive oil over medium heat in a large saucepan. Add onion and sauté 3 minutes. Sprinkle in flour and garlic and cook for 2 minutes (it will be thick). Reduce heat to low and slowly whisk in chicken broth, followed by salsa verde, green chilies, chicken bouillon and spices. Bring to a boil then reduce to a simmer until thickened. Remove from heat and stir sour cream.
- Add chicken to a large bowl. Stir in 1 cup Green Chile Sour Cream Sauce and 2 cups cheese.
- Spread 1/2 cup Green Chile Sour Cream Sauce on the bottom of a lightly greased 9x13 baking dish (layer will be very thin). - Spray a 9 X 13-inch baking dish with cooking spray and set aside. Preheat oven to 350 degrees.
- In a small bowl, combine chicken and 1 cup of Monterey Jack cheese. Fill tortillas with this mixture and roll each one up then place seam side down in the prepared pan.
- Melt the butter in a skillet. Sprinkle flour over melted butter and whisk to combine. Cook for 1 minute to remove the flour taste. Remove the skillet from heat and whisk in broth. - MAKE WHITE SAUCE: Melt butter in a medium sized saucepan over medium heat. Add flour, and brown the mixture for a minute or two, stirring constantly. Slowly, about 1/2 c. at a time, stir in the chicken broth, to make the white sauce. Sauce will lump slightly with each addition of chicken broth, but keep stirring, and adding more broth, and gradually the sauce will become the nice creamy consistency you want. At that point, add the drained green chiles, and stir some more. Finally, add the sour cream, stir, and remove from heat. Taste sauce and add sea salt and freshly ground black pepper, to taste.
- Heat the oil in a small, shallow skillet, over medium heat, and when hot, warm and soften the tortillas in the oil by frying them for about 5-10 seconds, per side. Drain on a plate covered by a paper towel, and blot the top of each tortilla.
- Ladle about 1/2 c. of sauce into the bottom of the enchilada baking dish, to prevent the enchiladas from drying out on the bottom. I use a 9x13 baking dish.
- Put a small handful of Monterey Jack cheese and 1 teaspoonful of chopped onions on top of each tortilla, and roll them up. Place in baking dish on top of the 1/2 c. sauce. We can fit 8 enchiladas going down the long side of the pan, and then tuck 2 (going the other way) at the top and 2 on the bottom of the edge that isn't covered. That's not explained very well, but I think you'll figure it out. LOL!

Mix and shred chicken until well combined. Use 1/2 cup filling for each baking dish to spread onto bottom of dish. Place about 8 tortillas at time in the microwave to warm until nice and hot, about 60 seconds in my microwave.
