I came up with this while trying to find a really decadent coffee treat. The white chocolate and Baileys provide enough sweetness that you will not need any sugar! If you like your coffee strong, just add more instant coffee granules.

3 ounces white chocolate
2 teaspoons instant coffee granules
2 tablespoons Baileys Irish Cream
whipped cream (optional topping)

Steps:

  • In a saucepan over a low heat, warm the milk until tiny bubbles start to appear around the edges.
  • Add the white chocolate to the pan and stir constantly until it has dissolved.
  • Stir in the instant coffee granules and Baileys and continue to heat and stir until the coffee granules have also dissolved.
  • Serve hot with whipped cream if desired!

  • Combine the milk and cream in a saucepan, and whisk over high heat until hot and frothy. Remove from heat and stir in the vanilla and sugar. This is made with green tea, not with black. Not exactly a very classical chai, but made out of a sudden green tea - cardamom - latte - craving. It turned out much better than I ever hoped it would! I used rice milk, but will post it just with "milk", use what matches your needings.

1/2 ounce white chocolate
1/2 tablespoon almond butter
1 tablespoon green tea, leaves
1 teaspoon candied ginger
4 cardamom pods
1/2 vanilla bean
1/4 teaspoon star anise, ground
1 teaspoon honey

Steps:

  • Put all ingredients except the white chocolate in a blender and mix on high.
  • Pour mixture into a sauce pan, add white chocolate, bring to a slight simmer and simmer for 4 minutes.
  • Put hot mixture back into blender, blend again on high until creamy.
  • Strain through a sieve.
  • Serve hot.
  • Enjoy!

This was in a cookbook I got from the library, I have yet to make it but want to put it here for safe keeping as it sounds (and looks) delicious!

250 g shortbread cookies
100 g ground almonds
2 teaspoons ground ginger
75 g butter, melted
675 g cream cheese
200 g caster sugar
3 tablespoons cornflour (cornstarch)
2 large eggs, beaten
150 ml cream
150 ml bailey's irish cream
125 g white chocolate, chopped

Steps:

  • Preheat oven to 180°C.
  • Grease a round 22-24 cm springform cake tin and line the base with baking paper.
  • To make the base, finely crush the shortbread biscuits until they resemble fine breadcrumbs. (This is best done in a food processor).
  • Mix in the ground almonds, ginger and melted butter.
  • Press into the prepared tin and put in the fridge.
  • Using an electric beater beat the cream cheese, sugar and cornflour.
  • Add in the eggs, cream and Bailey's and beat until you have a smooth, creamy consistency.
  • Stir in the white chocolate.
  • Remove the base from the fridge and pour the cheesecake mixture into it.
  • Place the prepared tin into large roasting dish that is filled with 1-2 cm of hot water.
  • Cook in the oven for 45 minutes until the top is lightly golden and the filling is just set.
  • Remove from the oven and leave to cool before taking out of the tin.
  • Cut into slices and serve.

  • In a small saucepan, heat the milk over medium heat until barely simmering. Add the chocolate and stir until melted. Remove from heat. Add the tea bags and let stand until infused, 4 to 5 minutes. Discard the tea bags.
  • Reheat the hot chocolate over medium heat until just simmering. Stir in the Baileys. Divide between 2 mugs. Top with marshmallows and pepper.
