1/2 cup butter, softened
2/3 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1 cup macadamia nuts, chopped
1 cup white baking chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in nuts and baking chips., Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 1 minute. Remove to wire racks to cool completely. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving or, if desired, reheat on a baking sheet in a preheated 350° oven 3-4 minutes.

2 cups dry-roasted macadamia nut halves with sea salt
1/2 cup roughly chopped dried papaya
1/2 cup roughly chopped dried pineapple
10 ounces bittersweet chocolate chips (about 2 cups)
1/2 cup toasted coconut flakes, optional, to garnish
Hawaiian pink salt, optional, to garnish

Steps:

  • Line a 24-count mini muffin tin with cupcake liners. In a large bowl, mix together the macadamia nuts, papaya and pineapple.
  • Over a double boiler or in the microwave, melt the chocolate. Pour the melted chocolate over the nut and fruit mixture and stir to combine. The nuts and fruit should be completely coated in chocolate. Divide the mixture evenly among the cupcake liners, about 2 tablespoons in each. Sprinkle the toasted coconut or Hawaiian pink salt over the melted chocolate to garnish, if desired. Refrigerate to set for about 30 minutes.

2/3 cup brown sugar

1 egg
1 1/2 tsp vanilla extract
1/2 tsp baking soda

1/4 tsp espresso powder, (optional; espresso powder brings out the flavor of chocolate without adding any coffee flavor)
1 cup + 2 Tbsp all purpose flour
1/3 cup dark chocolate cocoa powder, (regular unsweetened cocoa powder is fine as well)
1/2 cup roasted and salted macadamia nuts, (roughly chopped)
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
  • In a large bowl, beat butter (with a hand mixer or standing mixer) until light and fluffy. Add in brown sugar and granulated, beating the mixture until well combined.
  • Next, add in egg and the vanilla extract. Beat until combined.
  • Add in salt, espresso powder, and baking soda; mix until combined.
  • In a separate bowl, mix flour and cocoa powder together. Slowly incorporate the dry ingredients into the wet ingredients, mixing until combined.
  • Add in macadamia nuts, white chocolate chips and semi-sweet chocolate chips. Mix until combined.
  • With a medium cookie scoop (about 2 Tbsp of dough per cookie), scoop the dough and spread evenly on the cookie sheets, about 2 inches apart.

Chocolate covered macadamia nuts are a favorite treat in Polynesian Islands, and a popular souvenir for tourists. The only problem for me, however, is that I'll open a box and eat the whole thing in an hour! When I bring these back from Hawaii, they don't last long. Here's a great way to keep them around any time! They are super easy to make-- in all of my years of working with chocolate, I find that the microwave is actually the best way to melt chocolate at home (no tempering machines here!). I am using dark, milk and white chocolates to add a little twist to an island favorite! Aloha!

1 teaspoon vanilla

Steps:

  • Line a 15xl0xl-inch baking pan with foil, extending foil over edges of pan; set aside.
  • Butter the sides of a heavy 2-quart saucepan.
  • Melt the 1 cup butter in saucepan.
  • Add sugar, the water, and corn syrup.
  • Cook and stir over medium high heat until mixture boils.
  • Clip a candy thermometer to side of pan.
  • Reduce heat to medium; continue boiling at a moderate, steady rate, stirring frequently, until thermometer registers 290°F, soft-crack stage (about 15 minutes).
  • (Adjust heat as necessary to maintain a steady boil.) Watch carefully after 280 degrees F.
