CHRISTMAS COSMOPOLITAN

Steps:

• Start by making the Christmas-infused vodka: deseed the chilli, then use a speed-peeler to cut three strips of peel each from the lime, clementine and lemon (9 pieces in total).
• Place it all in a large, dry non-stick frying pan on a medium heat, with the cinnamon, cloves, peppercorns and rosemary, then toast for a couple of minutes, or until fragrant. Remove the pan from the heat and allow to cool slightly.
• Once cool enough to handle, poke all of the aromatics into the bottle of vodka (you could use a chopstick to push them down the bottle neck) and leave to infuse for at least three days.
• To make a Christmas Cosmopolitan, fill a cocktail shaker or jug with ice. Squeeze in the pomegranate juice, through your fingers - you want about 25ml - then add the remaining ingredients (except the orange).
• Shake or stir well, strain into your favourite martini glass and garnish with a strip of orange peel, if you like.

WHITE COSMOPOLITAN

Steps:

• Fill a cocktail shaker with ice. Add cranberry juice, vodka, and Cointreau. Shake to combine well. Strain into two large martini glasses. Serve immediately.

WHITE COSMOPOLITAN

Steps:

• Combine all ingredients, except garnish and cranberry toothpick, in a cocktail shaker with ice.
• Pour into a martini glass; garnish with lime twist and cranberry skewer.

REFRESHING COSMOPOLITAN

Steps:

• Fill a shaker three-fourths full with ice. Add the vodka, juices and Triple Sec. Cover and shake for 10-15 seconds or until condensation forms on outside of shaker. Strain into a chilled cocktail glass. Garnish as desired.

COSMOPOLITAN WITH GRAND MARNIER®

Steps:

• Pour the Grand Marnier®, triple sec, vodka, and cranberry juice into a cocktail shaker over ice. Cover, and shake until the outside of the shaker has frosted. Strain into a chilled martini glass, and garnish with a lime twist to serve.

WHITE COSMOPOLITAN

Steps:

• Place orchid in a 2-inch round ice ball mold; fill with filtered water and freeze.
• Fill a cocktail shaker with ice cubes. Add vodka, elderflower liqueur, cranberry juice, and lime juice; shake vigorously to combine and strain into a small carafe.
• Place orchid ice ball in a coupe; pour vodka mixture over ice ball. Serve immediately.

WINTER WHITE COSMOPOLITAN

Steps:

• Combine ingredients over ice in a shaker tin. Shake and strain into chilled martini glass. Float 3 or 4 frozen cranberries on top for garnish.

WHITE CHRISTMAS MARGARITA

Steps:

• Divide the cranberries among the sections of a standard (12-cube) ice cube tray. Fill the tray sections with water and freeze until frozen, at least 4 hours and up to overnight.
• Add 1/2 cup of the tequila, 1/3 cup of the lime juice, 3 tablespoons of the orange liqueur, 1 1/2 tablespoons of the coconut milk and 1 tablespoon of the superfine sugar to a large cocktail shaker. Fill with plain ice cubes and shake vigorously until well mixed and very cold.
• Pour the corn syrup onto a small shallow plate. Mix 1 tablespoon of the superfine sugar with the shredded coconut and 1 tablespoon salt on another shallow plate. Dip the rim of a margarita (or other wide-mouth) glass in the corn syrup, then dip the rim in the sugar mixture until well coated. Repeat with 3 more glasses. Pour the shaken margarita mixture into 2 of the prepared glasses. Add 3 of the cranberry ice cubes to each and garnish with a single lime slice.
• Repeat with the remaining cocktail ingredients, dividing it between the remaining 2 prepared glasses and adding 3 cranberry ice cubes and a lime slice to each.

CHRISTMAS COSMOPOLITAN

Steps:

• Mix the vodka and ginger wine in a jug. Stir in the cranberry juice, lime juice and some sliced stem ginger. Garnish with lime zest, if you like.

THE WHITE COSMOPOLITAN

Steps:

• Shake ingredients with ice. Strain into a martini glass. Garnish with an edible orchid, if desired.
