WHITE WINE PASTA SAUCE WITH GARLIC & HERBS



White Wine Pasta Sauce with Garlic & Herbs image

This garlic & white wine pasta sauce is bright, flavorful, and absolutely divine! Made with pantry staple ingredients for a simple pasta anytime. Can easily be made gluten free and vegan too - so its perfect for anyone at your table.

4 tablespoons olive oil
2 tablespoons butter (use plant-based for vegan version)
1 sweet onion (finely chopped)
5 cloves garlic (minced)
1 tablespoon all purpose flour (or corn starch if gluten free)
1 cup white wine
1/2 teaspoon Himalayan sea salt
1/2 cup parmesan cheese (or alternative like nutritional yeast)
1/2 cup fresh parsley
1/2 teaspoon freshly ground Tellicherry Black Pepper

Steps:

  • In a large sauce pan, heat the olive oil and butter over low heat. Add the onions and garlic and gently sauté for about 5 minutes until they begin to soften. Add the flour and stir into the veggie mixture with a wooden spoon.
  • Add the white wine, and stir. Bring to a simmer and gently simmer for 3 or 4 minutes until the sauce begins to thicken. Remove from heat and add the salt, parmesan, parsley, and ground tellicherry pepper. Stir until the parmesan has melted into the sauce.
  • Garnish with extra parmesan, parsley, or black pepper. Serve with pasta of choice, sauce makes enough for about 1 lb of pasta.

  • Make the breadcrumbs by roasting the bread in one tablespoon olive oil until completely toasted, about five to ten minutes. Chop the herbs and add to the breadcrumbs right before serving to prevent from getting soggy.
  • In the meantime, heat 2 tablespoons olive oil in a large frying pan over medium-high heat. Add the shallots and cook for a minute. Add the minced garlic and chili flakes and cook for another two minutes. Deglaze with the white wine, add the bayleaf and simmer for three minutes. Pour in 1 1/2 cups chicken stock and cook for another five minutes. If the sauce seems too dry, add more stock. Take off the heat, stir in the cream and butter and season with salt and pepper to taste. Again, if the sauce seems too dry, add more cream tablespoon by tablespoon until you like the consistency.
  • Toss the hot pasta with the sauce, divide between four plates and top with breadcrumbs, finely grated lemon zest, extra chili and parmesan cheese. Serve with watercress, if desired.
