You can cook this classic Canadian shore lunch indoors all year round when you don't have the time or the luxury of getting out on the lake! Serve with lots of lemon wedges or vinegar.

vegetable oil for frying
1 cup all-purpose flour
½ teaspoon salt
1 teaspoon ground black pepper
¼ cup milk
2 eggs, beaten
2 cups Italian seasoned bread crumbs
8 walleye fillets

Steps:

  • Heat 1/8 inch of vegetable oil in two large cast-iron or heavy-duty frying pans over medium-high heat.
  • Arrange three separate pie plates or shallow bowls for breading the fish. Combine flour, salt and pepper in one bowl, milk and eggs in another, and bread crumbs in the third bowl.
  • Coat each fillet in the flour mixture, then dredge them in egg wash, then coat them well with bread crumbs.
  • Place 4 fillets in each frying pan. Cook until golden brown, about 5 to 7 minutes per side. Drain on paper towels and serve immediately.

2skinless pickerel filletskinless pickerel fillets, (1-1/2 lb/750 g total)
1/4cup cup(50 mL) (50 mL) finely chopped red onionred onions
2tbsp tbsp(25 mL) (25 mL) dry white wine
1tbsp tbsp(15 mL) (15 mL) chopped fresh sage
2garlic clovegarlic cloves, minced
1/2tsp tsp(2 mL) (2 mL) salt
1/2tsp tsp(2 mL) (2 mL) pepper

Steps:

  • Cut fillets in half crosswise. Cut four 12-inch (30 cm) lengths of heavy-duty or double-thickness foil. Place 1 piece fish on each piece, just off centre. Top each with one-quarter each of the onion, wine, sage, garlic, salt and pepper. Bring foil up over fish; double-fold and press edges in to seal. Place packets on grill over medium-high heat; close lid and grill until fish flakes easily when tested, 6 to 8 minutes. Make wine cream sauce 1 or 2 chopped green onions 1 clove of garlic, minced 1tbs chopped sage 1/4 c. wine 1/4 c. cream Salt and pepper to taste
