WHITE FISH FILLETS AMANDINE

2 pounds skinless pollock fillets
1/4 cup all-purpose flour
1 teaspoon seasoned salt
1 teaspoon paprika
1/4 cup melted butter
1/2 cup sliced almonds
2 tablespoons fresly squeezed lemon juice
4 to 5 drops liquid hot pepper sauce
1 tablespoon chopped parsley leaves

Steps:

  • Cut fillets into 6 portions. Combine flour, seasoned salt, and paprika; mix well. Roll fish in flour mixture. Place fish in a single layer, skin side down, in a well greased 15 by 10 by 1 inche baking pan. Drizzle 2 tablespoons melted butter over fish. Broil about 4 inches from source of heat about 10 minutes or until fish flakes easily when tested with a fork. While fish is broiling, saute almonds in remaining butter in a fry pan and allow to turn a golden brown, stirring constantly. Remove from heat. Add lemon juice, hot pepper sauce, parsley; mix. Pour over fish. Serve at once.

½ cup teriyaki sauce
1 cup stir-fry sauce
8 (6 ounce) fillets whitefish
2 cups dry potato flakes
½ cup all-purpose flour
2 tablespoons seasoning salt
2 tablespoons ancho chile seasoning
1 tablespoon garlic powder
1 tablespoon salt
1 tablespoon ground black pepper
1 quart oil for frying

Steps:

  • In a bowl, mix the teriyaki sauce and stir-fry sauce. Place the whitefish fillets in the mixture, and marinate for about 15 minutes.
  • Heat the oil in a deep fryer or heavy skillet to 365 degrees F (185 degrees C).
  • In a shallow bowl, mix the dry potato flakes, flour, seasoning salt, ancho chile seasoning, garlic powder, salt, and pepper. Place each marinated fish fillet into the mixture to evenly coat.
  • Fry the fish in the heated oil, 1 or 2 fillets at a time, until golden brown and easily flaked with a fork, about 5 minutes.

1 teaspoon dry onion soup mix
crushed red pepper flakes (optional) or ground black pepper (optional)
2/3 cup breadcrumbs
1 tablespoon grated parmesan cheese
1 teaspoon grated parmesan cheese
2 teaspoons fresh parsley, chopped
1/8 teaspoon paprika
4 (6 ounce) white fish fillets
2 tablespoons peanut oil
2 teaspoons peanut oil

Steps:

  • Preheat oven to 450°F
  • Combine sour cream and soup mix in a bowl.
  • Combine next 4 ingredients in a shallow dish.
  • Dip fish into sour cream mixture, then lightly coat with breadcrumb mixture.
  • Arrange fish in a lightly oiled baking dish
  • Drizzle oil over top.
  • Bake about 8 minutes, until fish is lightly browned.
  • Turn and bake another 5 minutes or until golden.

1/4 cup dry parmesan cheese, grated
2 tablespoons light margarine, softened
1 tablespoon mayonnaise
1 1/2 teaspoons mayonnaise
1 tablespoon lemon juice
1/8 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon garlic salt

Steps:

  • 1. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder, and garlic salt. Mix well and set aside.
  • 2. Arrange fillets in a single layer on a cookie sheet. Bake for 30 minutes or until fish flakes.

1 large bunch cilantro, chopped
3 large garlic cloves, chopped
3 tomatoes, sliced
4 5-to 6-ounce whitefish or sea bass fillets
1/4 cup olive oil
1 tablespoon paprika
1 teaspoon instant chicken bouillon granules
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon ground pepper
3 cups (about) water

Steps:

  • Spread cilantro evenly over bottom of heavy Dutch oven, Sprinkle with garlic; arrange tomatoes over. Set fish atop tomatoes. Whisk oil, paprika, bouillon granules, cumin, turmeric and pepper to blend in small bowl. Pour over fish. Add enough water to pot to reach bottom of fish. Bring water to boil over high heat. Cover pot, reduce heat to medium-low and simmer until fish is just cooked through, about 10 minutes.
  • Using large spatula, transfer fish and vegetables to platter. Spoon some cooking liquid over and serve.

1/8 teaspoon pepper
1 egg white
1/2 teaspoon salt, optional
1/4 cup mayonnaise
1/4 teaspoon dill weed
1 teaspoon grated onion
Fresh dill and lemon wedges, optional

Steps:

  • Preheat oven to 425°. Place fish in a greased 13-in. x 9-in. baking dish; sprinkle with pepper. Beat egg white with salt if desired until stiff peaks form. Fold in mayonnaise, dill and onion; spoon over fish. Bake, uncovered, until topping is puffed and fish flakes easily with a fork, 15-20 minutes. Garnish with dill and lemon if desired.
