  • Heat a large dutch oven or non stick pan over medium low heat. Add oil and let it get hot, about 30 seconds. Add 1 tablespoon curry powder, ground turmeric, garlic, and ginger and toast the spices by stirring until fragrant and well combined, about 30 seconds. Careful not to let the garlic burn.
  • Add chicken and salt and pepper and stir to combine with the spices. Cook for 5-7 minutes until browned on the outside. Remove from the pan and set aside.
  • Add onion, sweet potato and salt and pepper, cover with a lid, and cook for 5 minutes, stirring once or twice. Add broccoli and peppers, cover with a lid, and cook for another 3-5 minutes, stirring occasionally. Add coconut milk, red curry paste, tomato paste, 1/2 tablespoon curry powder, cayenne, cooked chicken, and salt and pepper. Stir to combine. I like to pour in the juices from the chicken as well for flavor, but it will thin out the curry a little bit.
  • Let simmer from 5-10 minutes until vegetables are cooked to your preference. Curry will thicken as you simmer.

  • Heat your coconut oil in a large, oven-proof skillet over medium-high heat until hot. Season your chicken thighs with plenty of salt then carefully place them skin-side down in the skillet. Don't move them! Sear for about 7-8 minutes without touching, or until skin releases easily from the pan and is beautifully golden brown.
  • Turn the chicken thighs over and bake in a 375º oven for 19-20 minutes. Carefully remove and transfer the chicken thighs to a plate. Make sure you use a potholder from here on out; the handle of your skillet will be very hot!
  • Pour off all but about 2 teaspoons of fat from your skillet. Add the yellow curry paste and sauté until fragrant, then add your onion and bell pepper and sauté until softened, about 5 minutes. Stir in the coconut milk and turmeric and bring to a boil. Reduce heat and simmer until thickened and reduced by about half. Stir in your fish sauce, coconut aminos, black pepper, and lime juice. Season with salt to taste. Serve your chicken thighs over cauliflower rice, top with plenty of coconut curry turmeric sauce, and garnish with fresh chopped cilantro.

  • Place the chicken breasts between two pieces of plastic cling wrap and pound them down to make them even in thickness. This will help the chicken cook evenly and make for more tender chicken. Sprinkle each side of the chicken with salt and pepper.
  • Melt the coconut oil in a large skillet over a medium-high heat. Add the chicken breasts and cook for 5-7 minutes or until browned. Flip over and cook another few minutes to brown the next side. Remove the chicken from a skillet and set aside on a plate. The chicken doesn't need to be fully cooked yet because you'll be returning it to the heat shortly. Wipe down the pan with a paper towel to remove black/brown bits.
  • Add a little more oil back to the pan along with the chopped onion to the same skillet and sauté for a few minutes to soften. Add the chili pepper if you're using it. Sauté another couple of minutes. Add the chicken stock, lime juice, cilantro and chili flakes. Bring the mixture to a boil and then reduce down to a simmer. Let simmer for about 5 minutes to let reduce down. Add the coconut milk (and the turmeric if using) and bring to simmer again for another 5 minutes. Add the starch and water at this time if you're using it. You may need to raise the heat slightly higher to bring this to a boil to activate the starch. Once the sauce thickens reduce it back down to a simmer.
  • Add the chicken back to the skillet, cover and let cook for another 5-10 minutes or until the chicken is cooked all the way through.
