BERRY-YOGURT AND COCONUT-LIME POPSICLES

For the Berry-Yogurt Popsicles:
1 cup fresh strawberries
1/2 cup fresh raspberries
2 tablespoons sugar
1 container vanilla skyr yogurt
For the Coconut-Lime Popsicles:
1 1/2 cups frozen limeade
1 cup coconut water
dash of coconut extract

Steps:

  • Step 1 For the Berry-Yogurt Popsicles: Place the strawberries, raspberries and sugar into a food processor such as a Cusinart fitted with a blade attachment, puree until well blended. Add the yogurt and blend on high till smooth. Pour the fruit-yogurt puree into 5 slots of a 10 slot popsicle mold. Set aside.
  • Step 2 For the Coconut-Lime Popsicles: Place the frozen limeade and coconut water into a food processor such as a Cusinart fitted with a blade attachment, blend well. Pour the lime-coconut mixture into the remaining 5 slots.
  • Step 3 Place the filled popsicle mold carefully into the freezer and allow to freeze for about 30 minutes.
  • Step 4 After 30 minutes insert the popsicle sticks into the mold. Be careful not to push the sticks in all the way, leave about 1 1/2-2 inches sticking out. Place back in the freezer and allow to chill undisturbed for at least 12 hours, or overnight.
  • Step 5 To serve, run the whole popsicle mold under warm water to loosen. Gently pull each popsicle from the mold. Serve immediately.

About 2 kiwis
1 cup strawberry halves
1 cup roughly chopped mango
1 cup blueberries
1 cup roughly chopped watermelon
1 cup rough chopped pineapple

Steps:

  • Working with one fruit at a time, puree in a small food processor. Rinse the machine out between fruits.
  • Carefully spoon a layer of fruit at the bottom of each popsicle mold. Gently rap the mold on a firm surface to level the puree. Freeze until solid.
  • Spoon another layer of fruit in each mold and stand a stick upright in each. Force it down gently into the frozen bottom layer so it will stand up straight. You are not going to use the plastic top for this recipe, just leave it off. Again firmly tap the mold down on the counter to level the puree and freeze again until the second layer is solid. (The freezing time between layers will vary with your freezer temp, but it might take 45 minutes or so.)
  • Continue on until you have filled the molds. If any of the purees are a little too thick to work with, stir in a little water. Clean up any spilled puree from the insides of the molds as you go so they won't mar your design, just scrape the drips down with a popsicle stick.
  • To un-mold, fill your sink with hot tap water, and hold the mold in the water, just up to, but not over the top edge, for a few seconds. If the popsicles don't slide out, hold the mold in the water a little longer.

Steps:

  • Make simple syrup by following the directions in this post.
  • Place fruit in a blender or food processor and puree until smooth.
  • Strain fruit puree through a mesh strainer.
  • Combine the strained fruit with half of the simple syrup.
  • Add the rest of the simple syrup and vanilla to the coconut milk.
  • Alternate layers of the berry mixture and the coconut milk mixture to the popsicle molds, starting with the berries.
  • Place the popsicle molds in the freezer until frozen through.

13.5 ounce can of Lite Coconut Milk
2-4 teaspoons of granulated sugar substitute-use more or less depending on the sweetness of your fruit
1/2 cup blueberries
1/2 cup strawberries

Steps:

  • Wash your fruit.
  • Remove the stems of the strawberries and dice them about the same size as your blueberries.
  • In a bowl or container with a pour spout (as seen in the video), add your granulated sugar substitute to the berries and crush them partially so that they are smaller in size a release some juices.
  • Open your can of coconut milk and whisk it gently in the can to stir in the solids (the yummy milk fats).
  • After stirred up, pour into the container with the fruit and mix all together.
  • Pour into popsicle mold and freeze approximately 4 hours or until solid.
  • Enjoy on a hot summer day and feel awesome because you stuck to your Keto way of eating!!!
