In my quest to remain gluten free baking bread has been one of my biggest challenges, this bread was made because i wanted to experiment with soy flour and just randomly decided to throw some spinach in there.

1 3/4 cups brown rice flour
1 cup soy flour
1/2 cup potato starch
1/2 cup garbanzo bean flour
1/4 cup flax seed
1/4 cup sesame seeds
1 cup spinach, loosely packed
1 1/4 cups soymilk, unsweetend and unflavored
1/4 cup warm water
2 tablespoons peanut oil
2 large brown eggs
3 teaspoons flax seed meal
1 teaspoon cider vinegar
2 teaspoons sugar
1 tablespoon fast rising yeast

Steps:

  • take a normal 9x5 loaf pan and add some canola oil to grease it up.
  • in mixing bowl pour warm water in to the yeast, you can add a pinch of sugar to help proof the yeast.
  • in separate mixing bowl mix all other wet ingredients and two eggs, lightly beat the eggs.
  • in third separate bowl mix all dry ingredients
  • once yeast is activated (should be around 5 minutes or until it has bubbled up to about twice its original size.) make a chimney or well in the dry ingredients and pour all ingredients in to the hole. mix thoroughly.
  • after about five minutes of mixing take a wet spatula and mix a few times than scoop dough in to loaf pan. re wet the spatula and smooth out the dough to desired shape.
  • let rise for an hour in a warm place, and preheat one to 375.

A whole grain gluten & dairy free yeast bread that requires no starch (tapioca / potato / cornstarch, etc.) to be soft.

Number Of Ingredients 12

1 3/4 cups brown rice flour
1 3/4 cups oat flour
1 teaspoon salt
1 teaspoon xanthan gum
1 teaspoon guar gum
2 teaspoons baking powder
1 tablespoon yeast (I use quick rise)
1/4 cup Earth Balance margarine, melted
1/4 cup honey
1 teaspoon lemon juice or 1 teaspoon vinegar
3 eggs or 3/4 cup egg white
1 cup warm water

Steps:

  • Have all ingredients at room temperature.
  • preheat oven to "warm" to allow bread to rise.
  • Combine all dry ingredients in bowl of stand mixer & whisk to combine using the paddle attachment.
  • To melted margarine add honey, lemon juice or vinegar & lightly beaten eggs or egg whites.
  • Add liquid ingredients to dry in mixer and slowly incorporate.
  • Add warm water (should be slightly warmer than room temp.) to mixer & slowly incorporate until batter is thick. More water can be added 1 Tbsp at a time if needed to achieve the correct consistency. You should be able to see beater tracks while dough is mixing or dough is too wet. Once water is added, beat on med / hi for 3 - 5 minutes.
  • While mixing prepare a 9 x 5 loaf pan by spraying with oil and lining with parchment paper.
  • Scrape prepared dough in to pan and smooth top. Cover top with foil sprayed with cooking spray.
  • Turn off preheated oven & allow loaf to rise for approximately 30 min., or until risen 1 inch over top of pan.
  • Bake at 375 for 40 to 45 minute When done, loaf should sound hollow when tapped.
  • Cool completely before slicing.

We really enjoy this bread - all of us eat it when only my husband has to be gluten free. You can also use the Dough setting and scoop out dough onto baking sheets to make buns. To smooth top of loaf or buns, wet fingers and smooth the dough before it rises.

½ cup millet flour
½ cup tapioca starch
¼ cup sweet rice flour
¼ cup teff flour
¼ cup ground flax
2 tablespoons psyllium husk
2 ½ teaspoons guar gum
2 large eggs
1 ⅔ cups warm water
3 tablespoons canola oil
1 teaspoon white vinegar
2 ¾ teaspoons active dry yeast
1 ½ teaspoons salt
½ cup milk powder
3 tablespoons white sugar

Steps:

  • Mix cornstarch, millet flour, tapioca flour, rice flour, teff flour, ground flax, psyllium husk, and guar gum in a bowl.
  • Place eggs, warm water, canola oil, vinegar, sugar, yeast, cornstarch mixture, salt, and milk in a bread machine pan in the order listed, or in the order listed by the manufacturer. Stir gently with a wooden spoon to combine yeast with the rest of the ingredients.
  • Run "rapid bake" cycle for 2 hours. Select "dark" crust setting; bake for 50 minutes.
