BLUEBERRY OAT WAFFLES
I truly enjoy recipes that make just enough for the two of us, like this one for waffles. Instead of blueberries, you can slice ripe strawberries on top-or use the batter to make pancakes.-Ruth Andrewson, Leavenworth, Washington

- Preheat waffle iron.
- Cook the waffles according to the manufacturer's directions. Serve with a pat of butter or ghee and homemade blueberry syrup.
- To a small sauce pan over medium heat, add blueberries, maple syrup and salt. Allow ingredients to simmer until blueberries pop and the mixture thickens, about 5 minutes. Stir frequently. NOTE: Syrup will thicken once cooled.

Mix the batter with a fork until it just barely comes together. A lumpy batter now means a light and tender waffle later.

Steps:
- Syrup:
- Bring lemon zest, sugar, and ⅔ cup water to a boil in a heavy medium saucepan, stirring until sugar dissolves. Cook (do not stir) until a thin syrup forms, 6-8 minutes. Add blueberries and bring to a simmer. Reduce heat to medium; cook, stirring constantly, 2 minutes.
- Transfer 2 Tbsp. syrup to a small bowl, add cornstarch, and stir until smooth. Add back to syrup; simmer until thickened, about 1 minute. Remove from heat. Fish out lemon zest and discard. Squeeze in lemon juice to taste and let cool slightly.
- Waffles and assembly:
- Whisk flour, oats, baking powder, baking soda, and salt in a large bowl. Make a well in the center and add yogurt, then melted butter, then egg to well. Using a fork, stir together wet ingredients, then mix, incorporating dry ingredients a little at a time, until a lumpy batter forms.
- Heat waffle iron on medium-low. Lightly coat with nonstick spray and pour a heaping ½ cup batter onto iron (or up to 2 cups if using a larger one). Cook until waffles are golden brown and cooked through, about 5 minutes. (Keep warm on a baking sheet in a 300° oven if desired.) Repeat with remaining batter, coating iron with more nonstick spray as needed. Serve with butter and warm syrup.

- Whisk whole wheat flour, all-purpose flour, oat flour, sugar, baking powder, and salt together in a bowl. Whisk egg yolks, milk, canola oil, and vanilla extract in a separate bowl. Beat egg whites in a third bowl (not plastic) with an electric mixer until soft peaks form when you lift the beaters straight out of the beaten eggs, 1 to 2 minutes.
- Make a well in the dry ingredients and pour the milk mixture into the well; mix batter until smooth. Gently fold the egg whites into the batter, retaining as much volume as possible. Let batter stand until slightly thickened, about 5 minutes.

BLUEBERRY OATMEAL WAFFLES
A whole grain waffle that is actually light and fluffy felt as likely as unicorns being real... until this recipe! These are a favorite in our house because they feel like a treat (which makes the boys happy) but are packed with whole grains and some fruit (which makes me happy). We love to have them with syrup on the first day and then make cream cheese sandwiches with them throughout the week for an easy, portable breakfast.

WHOLE WHEAT BLUEBERRY WAFFLES
This is a variation I invented on my easy waffle recipe. It makes a quick, hearty breakfast, and is delicious with fruit syrup. Even with a non-stick waffle iron, I suggest spraying a cooking spray onto the plates between each waffles. Blueberries don't understand the meaning of "non-stick". The blueberries also mess up the auto-sensor on my waffle iron, so they need to come out before the waffle iron thinks they are done--I look to see when they stop steaming.

- sift together the flour, salt, and powder.
- blend the egg yolks, milk and oil into the flour mixture until well mixed.
- carefully fold in the egg whites.
- carefully stir in the blueberries--the more movement the berries have in the batter, the more likely they are to turn the batter purple.
- spoon onto a greased waffle iron.
- cook until done.
