VEGAN LEMON POPPY SCONES



Vegan Lemon Poppy Scones image

Delicious lemon poppy scones that happen to be vegan. Note, this recipe can be changed up quite easily. And the proportions are pretty forgiving, too. Experiment with different sweeteners and flours if you like. These are very adaptable.

2 cups all-purpose flour
¾ cup white sugar
4 teaspoons baking powder
½ teaspoon salt
¾ cup vegan margarine
1 lemon, zested and juiced
2 tablespoons poppy seeds
½ cup soy milk
½ cup water

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Sift the flour, sugar, baking powder and salt into a large bowl. Cut in margarine until the mixture is the consistency of large grains of sand. I like to use my hands to rub the margarine into the flour. Stir in poppy seeds, lemon zest and lemon juice. Combine the soy milk and water, and gradually stir into the dry ingredients until the batter is moistened, but still thick like biscuit dough. You may not need all of the liquid.
  • Spoon 1/4 cup sized plops of batter onto the greased baking sheet so they are about 3 inches apart.
  • Bake for 10 to 15 minutes the preheated oven, until golden.

I needed to use up some applesauce my 3 year old wouldn't eat and came up with this recipe. We both loved them, so I guess I got him to eat that applesauce anyway! I love the way the edges carmelize. YUMMY! **Please see the reviews for a variation of the original recipe that should fix the rising problem.**

Number Of Ingredients 10

1 1/2 cups unsweetened applesauce
1 cup agave nectar
1 slightly beaten egg
1/3 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white flour
1/2 cup whole wheat flour
1/2 teaspoon cinnamon (or more to taste)

Steps:

  • Mix the applesauce, nectar, egg and butter together. Set aside.
  • In a separate bowl, mix together baking soda, baking powder, salt and flours.
  • Mix wet and dry ingredients all together. (Never over mix muffins.).
  • Pour into greased muffin tins, and bake in 350 degrees oven for approximately 30 minutes. Muffins are done when a toothpick stuck in the middle comes out clean.
  • Do not over fill muffin tins as these muffins tend to spread out instead of rising up.

3/4 cup light brown sugar (packed)
1/2 cup milk
3/8 cup butter
1 1/2 cups pecans (roasted) (optional)
1 teaspoon vanilla

Steps:

  • Combine all ingredients and bring to soft ball stage (230 to 240 degrees), stirring constantly.
  • Remove from heat.
  • Stir until mixture thickens, becomes creamy and cloudy, and pecans stay suspended in mixture.
  • Spoon out on aluminum foil or parchment paper.
  • Makes approximately fifteen to twenty pralines, depending on size.
  • Note: To roast pecans, bake them on a sheet pan at 275 degrees for 20 to 25 minutes until slightly brown.

1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons lemon zest
1 cup agave nectar or 1 1/4 cups granulated sugar
12 tablespoons unsalted butter or 12 tablespoons margarine, room temp
1/4 cup lemon juice, freshly squeezed
1 -2 tablespoon poppy seed

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, baking powder, baking soda and salt in a large bowl, set aside.
  • With a mixer, beat lemon zest and agave nectar on medium speed. Add butter. Cream with agave and lemon zest until light and fluffy, another 2-3 minutes. Mix in the lemon juice. Add flour mixture; mix until just combined and no flour pockets remain. Chill for about 45 minutes.
  • Roll rounded teaspoons of dough in 3/4-in balls; place 2 inches apart onto parchment lined baking sheets. Sprinkle with poppy seeds. Bake 10-12 minutes, rotating after 5 minutes until edges are just set.
