- Toss chicken wings and drumettes in oil. Season with salt and pepper on all sides. Place wings in air fryer rack with space between each wing. You may need to cook the wings in batches.
- Preheat air fryer to 350F for 5 minutes. Air fry wings at 350F for 15 minutes. While the wings cook prepare buffalo sauce. Combine ghee and buffalo sauce in a small sauce pan over medium-low heat.
- Whisk the sauce vigorously until the ghee is fully incorporated. When the wings are still warm from the air fryer, toss them in the buffalo sauce. Serve them immediately with ranch or blue cheese and raw veggies.

- Preheat an air fryer to 360 degrees F (182 degrees C).
- Place wings in a large bowl. Drizzle oil over wings and massage until chicken is evenly coated.
- Place 1/2 the wings in the air fryer basket and cook for 25 minutes. Use tongs to flip wings and cook 5 minutes more. Transfer cooked wings to a large bowl. Repeat with remaining wings.
- While second batch is cooking, combine hot pepper sauce, butter, vinegar, garlic powder, and cayenne pepper in a small saucepan over medium heat. Stir and keep warm until wings are done.
- Pour sauce over cooked wings and toss to coat.

- Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the chicken wings dry and sprinkle generously with salt. Place the wings in the fryer basket so they are not touching (if necessary to fit, line up the drumettes standing upright along the sides). Set the air fryer to 360 degrees F and cook for 12 minutes, then flip the wings with tongs and cook for 12 minutes more. Flip the wings again, increase the heat to 390 degrees F and cook until the outsides are extra-crispy, about 6 minutes more.
- Meanwhile, warm the butter in a microwave-safe bowl in the microwave until melted, about 1 minute. Whisk in the hot sauce.

- Preheat the oven to 380 degrees F (190 degrees C).
- Rinse chicken wings and pat dry.
- Combine sea salt, garlic powder, mustard powder, coriander, smoked paprika, cayenne pepper, and black pepper in a shallow bowl. Dredge each chicken wing in the spice mixture and set into the air fryer basket in one layer.
- Cook in the air fryer until chicken wings are no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). If wings are smaller, reduce cooking time.

Baking soda is the secret to extra crispy air fryer chicken wings. Its high pH makes it alkaline, which is a lot words to say it softens up the chicken skin to get it very crispy as it cooks. Use this method to get crispier wings without having to fry them in oil, then finish them with Buffalo sauce or your choice of sauce.

- For the wings: If the wings are whole, remove the wing tips at the joint and save them for stock. Then cut each wing into 2 pieces: the drumette and the flat. Give them a rinse in cold water and pat dry with single-use paper towels. Place the wings in a medium bowl then sprinkle with the baking soda, garlic powder, paprika and a heavy pinch each of salt and pepper and massage into the wings for about 30 seconds. You can cover and refrigerate them for up to overnight if not using immediately.
- When ready to cook, preheat your air fryer to 375 degrees. Add the canola oil to the wings and massage to coat, about 30 seconds.
- Insert the air fry basket into the air fryer. Place the wings in the basket, making sure none of the wings are touching. (Air needs to circulate around each one in order to crisp.)
- Air fry for about 12 minutes, open the fryer, then give the wings a stir to make sure they are browning. Cook until "GBD" (golden brown and delicious), 6 to 8 minutes.
- While the wings are cooking, make the sauce: Place all the ingredients in a large microwave-safe bowl. Microwave until the butter is melted, about 1 minute. Give the sauce a good stir to combine well.
- When the wings are cooked, carefully transfer them to the sauce bowl. Toss to coat very well, about 30 seconds. Serve immediately with celery sticks, chunky blue cheese dressing and ranch dressing.
