PALEO CHILI
Steps:
- Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
- In a different pan, cook the bacon until crispy. Crumble and add to stock pot. Cook the chopped onion and pepper in the bacon drippings for about 5 minutes or until onions are translucent. Add to the stock pot.
- To the stock pot, add in the diced tomatoes, tomato paste, and beef stock. Season with garlic, oregano, cumin, paprika, basil, garlic powder, onion powder, salt, pepper, and cayenne. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
- After 2 hours, taste, and adjust salt, pepper, and other spices if necessary. The longer the chili simmers, the better it will taste.
- Remove from heat and serve, or refrigerate, and serve the next day. Serve with onions and crumbled bacon or whatever chili toppings you prefer!

- Heat the oil in a large pot over medium-high. When the oil is hot and melted, add the onions and cook, stirring often, until they're soft and translucent, about 7-10 minutes. Add the garlic and stir constantly until it's fragrant, about 30 seconds to 1 minute. Add the ground beef into the pan, stirring with your spoon to break up. Cook until brown and evenly crumbled.
- In a small bowl, combine the allspice, oregano, chili powder, chipotle chili powder, cumin, cocoa powder, and salt. Whisk with a fork to combine, then add to the pot. Add in a few dashes of cinnamon then add the tomato paste, stirring until well-combined.
- Add the cans of diced tomatoes, beef broth, water, and sweet potato, then stir well. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Simmer uncovered for at least an hour, and don't skip this step! It's important to the dish. When ready to serve, ladle into bowls and garnish to your heart's content.

- Heat olive oil over medium heat in a large stock pot. Add the onion, sweet potato, and carrots and cook, stirring occasionally for 5 minutes, until vegetables begin to soften. Add the bell pepper, pasilla pepper, garlic, chili powder, paprika, ground cumin, dried oregano and sea salt and continue cooking, stirring occasionally, for 3 minutes.
- Move the vegetables to one side of the stock pot and add the ground turkey to the stock pot. Allow it to brown on one side 1 to 2 minutes before stirring it into the vegetables (there’s no need to cook the turkey through just yet).
- Add the diced tomatoes and chicken broth and stir well. Cover and bring to a full boil. Reduce heat to a simmer and continue cooking at least 20 minutes (the longer the more flavorful the chili becomes), until turkey is cooked through. Taste chili for flavor and add sea salt to taste.
- Serve chili with homemade coconut milk yogurt, sliced avocado, cilantro, and green onion and any other toppings you fancy!

- Heat a large Dutch oven or similar large, sturdy-bottomed pot over medium heat. Add the ghee or oil. When it is hot, add the meat, onion, salt, and pepper. - Splash in about 1/2 cup of the broth and run a wooden spoon or rubber spatula along the bottom of the pot to scrape up any brown bits (this is flavor!). Add the next 1 1/2 cups broth, sweet potato, red bell pepper, green bell pepper, pumpkin and diced tomatoes and stir to evenly combine.
- Bring the chili to a boil, then reduce the heat to a simmer. Use a lid to cover the pot part way. Continue to simmer until the chili is thickened and the sweet potatoes have softened, stirring it periodically to prevent it from sticking, about 20 to 30 additional minutes. If the chili isn't becoming as thick as you like, let it simmer for 5 to 10 minutes without the lid. If the chili seems too thick, stir in additional broth to reach your desired consistency (chili thickness is completely personal preference. We like ours fairly thick, and the chili will thicken further as it cools too). Taste and adjust seasonings. Serve hot with desired toppings.

- Cook turkey in 1 tbsp olive oil using the saute mode. Once turkey is mostly cooked, add in onions and garlic (if mincing). Cook until turkey is cooked and turn off saute mode.
