Whoopie Pies image

Little chocolate cakes with creamy filling. This recipe has been handed down in my family for quite sometime and hasn't had any complaints yet.

Provided by Amy Kerby

Categories     Desserts     Cookies     Whoopie Pie Recipes

Yield 24

Number Of Ingredients 6

1 (18.25 ounce) package devil's food cake mix
5 tablespoons all-purpose flour
1 cup milk
1 cup shortening
1 cup white sugar
2 teaspoons vanilla extract

Steps:

  • To make the cakes: Prepare mix as directed on package except using only 3/4 cup of water. Drop batter onto greased cookie sheet (or use parchment paper to line pan) in 2 1/2 to 3 inch circles. Bake until toothpick inserted in center comes out clean. Let cool.
  • To make the filling: In a saucepan, combine milk and flour and cook, stirring constantly until it forms a thick paste. Let cool.
  • In a medium bowl, beat sugar and shortening until fluffy. Add vanilla. Add cooled flour mixture and beat until double in volume.
  • Turn the little cakes over on their backs. Spoon a dollop of filling onto half of the little cakes. Place the other half of the cakes on top of the filling to form sandwiches.

BIRTHDAY WHOOPIE PIES

Birthday Whoopie Pies image

We doctored up a box of cake mix to make these soft and tender cookies. Think of them as birthday cake captured in whoopie pie form.

Provided by Food Network Kitchen

Categories     dessert

Time 2h30m

Yield 18 to 20 whoopie pies

Number Of Ingredients 10

Cooking spray
1 box yellow cake mix (for two 9-inch rounds), such as Duncan Hines
2 large eggs
4 tablespoons unsalted butter, melted
4 ounces white chocolate, coarsely chopped
6 tablespoons unsalted butter
One 8-ounce package cream cheese, at room temperature
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1/2 cup multicolored sprinkles

Steps:

  • For the cookies: Preheat the oven to 350 degrees F. Coat 2 baking sheets with cooking spray.
  • Beat the cake mix, eggs, butter and 1/3 cup water in a large bowl with an electric mixer on medium speed until smooth and no bits of dry cake mix are left. Drop the batter onto the prepared baking sheets, using about a tablespoonful for each cookie (a small ice cream scoop will make this task easier) and spacing them about 1 1/2 inches apart. Bake until set around the edges but still soft in the center, about 8 minutes. Let the cookies cool on the baking sheets for 10 minutes, then transfer to a cooling rack to cool completely (the rounded tops will sink slightly). Continue to bake cookies with the remaining batter.
  • For the filling: Melt the chocolate and butter in a medium bowl in the microwave in 1-minute increments, stirring after each, until smooth. Beat the cream cheese, sugar and vanilla together with an electric mixer on medium-high speed in a large bowl until smooth. Pour the chocolate-butter mixture into the cream cheese mixture and mix until smooth.
  • To assemble: Spread about 1 tablespoon of the filling on the flat side of half the cookies. Sandwich with the remaining cookies, pressing slightly so the filling squishes to the edge. Roll the filling edge in sprinkles to coat. Serve or refrigerate up to overnight.

BAKERY STYLE WHOOPIE PIE CAKE

Bakery Style Whoopie Pie Cake image

I found this recipe on a website for parents. The original was for the actual Whoopie pies, but I am too lazy for all of that. I altered a little and made a cake out of it. It is awesome and so worth the work. Note: use real butter, makes it much better.

Provided by wannabecook

Categories     Dessert

Time 40m

Yield 6 serving(s)

Number Of Ingredients 10

1 (18 ounce) box devil's food cake mix
3 eggs
1/2 cup buttermilk
1/4 cup oil
1/2 cup water
12 tablespoons unsalted butter, softened but still cool (1 1/2 sticks)
1 1/4 cups confectioners' sugar
1 1/2 teaspoons vanilla extract
1/8 teaspoon table salt
2 1/2 cups marshmallow cream

Steps:

  • For the cakes: Heat oven to 350°F; line 2 cake pans with parchment paper.
  • Combine all cake ingredients and mix.
  • Pour half of batter into each cake pan. Cook approximately 20 minutes, or until cakes spring back when pressed. Cool completely on baking sheets, at least 1 hour.
  • For the filling:.
  • With electric mixer on medium speed, beat butter and sugar together until fluffy, about 2 minutes. Beat in vanilla and salt. Beat in Fluff until incorporated, about 2 minutes. Refrigerate filling until slightly firm, about 30 minutes. (Bowl can be wrapped and refrigerated for up to 2 days).
  • Spread filling onto one of the cakes. Place other cake on top. Refrigerate in air tight container up to 3 days.
  • This is also good if you heat a can of frosting for 20 seconds and pour over the cake.

GIANT WHOOPIE PIE RECIPE BY TASTY

Giant Whoopie Pie Recipe by Tasty image

Your favorite chocolate cookie sandwich, now in giant form! When transferring the cake batter to the pans, spread a thinner layer toward the edges, keeping the center thicker. The domed tops will replicate the classic whoopie pie shape. After the pillowy cake rounds cool, sandwich with the fluffy marshmallow filling, then slice and serve!

Provided by Betsy Carter

Categories     Desserts

Time 1h20m

Yield 12 servings

Number Of Ingredients 14

nonstick cooking spray, for greasing
4 ½ cups all purpose flour
1 cup cocoa powder
1 teaspoon espresso powder
1 ½ teaspoons kosher salt
1 tablespoon baking soda
2 cups brown sugar
2 cups water
1 tablespoon white vinegar
1 tablespoon vanilla extract
1 cup vegetable oil
16 tablespoons unsalted butter, softened
13 oz marshmallow fluff
2 cups powdered sugar

Steps:

  • Preheat the oven to 350˚F (180˚C). Grease and line 2 10-inch (25 cm) round cake pans with parchment paper.
  • Make the whoopie pie: In a large bowl, whisk together the flour, cocoa powder, espresso powder, salt, baking soda, and brown sugar, making sure there are no lumps.
  • Make a well in the center of the dry ingredients, then pour in the water, vinegar, vanilla and oil to the well. Whisk to combine, working slowly to avoid clumps.
  • Scoop 2½ cups (600 g) of batter into the center of each cake pan. Use an offset spatula or a knife to spread the edges of the batter just to the edges of the pans. Do not level the top of the cake, to help create a domed shape.
  • Bake for 30 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Let cool in the pans for 10 minutes, then carefully transfer to a wire rack to cool completely.
  • Make the filling: In a large bowl, combine the butter and marshmallow fluff and cream with an electric hand mixer for 2-3 minutes, until fully combined. Sift in the powdered sugar, then beat for another 2-3 minutes, until light and fluffy. Transfer the filling to a piping bag or zip-top bag. Cut a 2-inch (5 cm) wide opening on a corner.
  • Invert a cake onto a serving platter so the domed side is facing down. Pipe a thick spiral of filling onto the cake, leaving a ¼-inch (½ cm) border around the edge, and smooth with an offset spatula. Place the remaining cake on top of the filling, domed side up, and push down slightly to attach.
  • Slice and serve.
  • Enjoy!
