SPARKLING PINK LEMONADE (WITH COCKTAIL OPTION!)
Make your own sparkling pink lemonade, with freshly squeezed lemons and homemade strawberry raspberry syrup, for an unforgettable summer cocktail or punchbowl.

Steps:
- Place strawberries, raspberries, lemon juice, and sugar in a sauce pan and heat over high heat until boiling. Reduce heat to low boil/high simmer and allow to simmer for 5-8 minutes, until mixture becomes syrupy. Stir occasionally. Berries should be pretty much liquified.
- Strain mixture well through fine mesh strainer, pressing syrup out of berries. Allow berry syrup to cool at least 30 minutes or overnight in the fridge.
- When ready to serve, pour seltzer water and vodka into a gallon pitcher, add 2 to 3 cups of ice and stir.
- Pour berry syrup into pitcher and stir well. Serve over ice.
- Garnish with berries, lemon slices, or mint sprigs. Makes 16 one cup servings including ice.

- Pour 4 cups lemonade into ice cube trays; freeze until set., If desired, moisten the rims of 18 martini glasses with water. Sprinkle sugar on a plate; dip rims in sugar. Set glasses aside. Transfer ice cubes to a punch bowl; add the vodka, strawberries and remaining lemonade. Slowly stir in soda. Serve immediately in prepared glasses.

PINK LEMONADE CAKE
Steps:
- For the cake: Preheat the oven to 350 degrees F and grease a 9-by 13-inch baking dish.
- Add the flour, granulated sugar, baking powder and salt to the bowl of a stand mixer and mix on low speed to combine.
- Next, slowly add in the butter slices and allow to mix until the flour resembles coarse crumbs.
- While the butter mixes, in a separate bowl whisk together the eggs, pink lemonade, milk, lemon extract and vanilla extract.
- With the mixer still on low speed, add the egg mixture in three batches, allowing the liquid to combine into the dry ingredients until fully incorporated. If desired, stir in a few drops of pink or red food coloring to create a light pink color.
- Spread the batter evenly into the prepared pan and bake until a toothpick inserted into the center comes out mostly clean with a few crumbs, 30 to 35 minutes. Cool in the pan on a wire rack until room temperature. While cooling, prepare the frosting.
- For the frosting: Combine the butter and salt in the stand mixer on low speed. Slowly add the confectioners' sugar in small amounts until all is added, and then turn the speed to medium-high to combine. Add the pink lemonade concentrate and lemon extract and mix until fluffy. Add in the food coloring at this point if desired.
- Once the cake is fully cooled, ice with the frosting and decorate with lemon slices and straws, if desired.
PINKY LADY LEMONADE COCKTAIL
Peach Schnapps and ginger ale give this lemonade cocktail a zip! If you like a sweeter drink, increase the schnapps, but hang on to your hat! You can use yellow lemonade too.

- Place all the ingredients in a large saucepan and pour over 350ml cold water. Bring to the boil, stirring often, then leave to cool. Pour through a sieve, pressing down with a spoon to extract all the juices. The syrup can now be stored in the fridge for up to 1 week. I've always enjoyed pink lemonade and would make a lot of the drink mix variety each summer. Once I became addicted to Recipe #109246 (Lime and Lemonade) the drink mixes tasted too watered down to me. I decided to try making pink lemonade from scratch too and this is what I came up with. The water and/or sugar amount can be adjusted to taste.
