Kalamata Olive Breadstick Twists with Marinara Sauce image

Make these crunchy breadsticks using Kalamata olive tapenade and rosemary. Serve with warm marinara sauce for a great appetizer.

1/4 cup Kalamata olive tapenade
1 teaspoon chopped fresh rosemary leaves
1 can (11 ounces) refrigerated soft breadsticks
1 cup marinara sauce, heated, if desired

Steps:

  • Heat oven to 350°. Mix tapenade and rosemary.
  • Separate breadsticks; roll or press each breadstick until 2 1/2 inches wide. Spread 1 teaspoon tapenade mixture evenly down center of each breadstick. Roll up breadsticks lengthwise in jelly roll fashion. Cut each lengthwise in half; twist each piece 2 or 3 times. Place on ungreased cookie sheet.
  • Bake 10 to 15 minutes or until golden brown. Serve warm with marinara sauce for dipping.

If the fresh tomatoes aren't garden fresh and full of flavor I would consider omitting them from the recipe.

1 teaspoon crushed red pepper
6 sun-dried tomatoes, softened and chopped

12 kalamata olives, pitted and quartered

Steps:

  • In a small saucepan, saute garlic, onions and red pepper. Stir in sun dried tomatoes, capers and oregano. Add fresh ripe tomatoes and kalamata olives. Cook covered for about 5 minutes.

1 small onion (chopped)
2 cloves garlic (chopped)
1/2 cup red wine (optional)
1 (28 ounce) can diced tomatoes
1/4 kalamata olive (pitted and chopped)
1/2 teaspoon italian seasoning
1 bay leaf
salt and pepper
1 handful basil (chopped)

Steps:

  • Heat the oil in a pan.
  • Add the onion and saute until translucent, about 5-7 minutes.
  • Add the garlic and saute until fragrant, about 1 minute.
  • Add the wine and deglaze the pan.
  • Add the tomatoes, kalamata olives, Italian herbs, bay leaf, salt and pepper and simmer until the sauce thickens, about 30 minutes.
  • Remove from heat and stir in the basil.
  • Puree to the desired consistency. (optional).

2 tablespoons olive oil
1 small onion, chopped
1 jalapeno pepper, chopped
½ medium green bell pepper, chopped
1 (28 ounce) can diced tomatoes
½ cup red wine
20 kalamata olives, pitted and chopped
⅔ cup crumbled feta cheese
⅔ cup shredded reduced-fat Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat oil in a large heavy skillet over medium heat. Saute onion, jalapeno, and green bell pepper until onions are soft and translucent. Stir in tomatoes, wine, and kalamata olives. Simmer 15 minutes. Toss pasta with sauce until evenly coated. Pour into a 9x13 inch baking dish. Sprinkle with feta cheese and Cheddar cheese.
  • Bake 5 minutes in the preheated oven. Set oven to broiler setting. Broil for 5 minutes, or until topping is golden brown and bubbly.

2 1/2 pounds cherry tomatoes, halved
1/3 cup olive oil
5 garlic cloves, minced
1 tablespoon balsamic vinegar
1/4 teaspoon dried crushed red pepper
3 tablespoons chopped fresh oregano
1 pound farfalle (bow-tie) pasta
1/2 cup halved pitted Kalamata olives or other brine-cured black olives
1/4 cup drained capers
6 ounces feta cheese, crumbled (about 1 1/4 cups)
1/4 cup pine nuts, toasted

Steps:

  • Position rack in center of oven and preheat to 375°F. Combine tomatoes, oil, garlic, vinegar, and crushed red pepper in 13x9x2-inch glass baking dish. Season to taste with salt and pepper. Roast until tomatoes are tender and juicy, stirring occasionally, about 45 minutes. Stir in oregano. (Can be made 2 hours ahead. Let stand at room temperature.)
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain. Return to pot. Add tomato mixture, olives, and capers. Stir over medium heat until heated through, about 2 minutes. Add feta and stir until melted and creamy, about 2 minutes. Divide pasta among 6 plates; sprinkle with pine nuts and serve.

2 large egg yolks at room temperature
2 teaspoons red-wine vinegar
1 teaspoon Dijon-style mustard
1/4 teaspoon salt
1 1/2 cups olive oil
1/3 cup minced Kalamata or other brine-cured olives
3 teaspoons fresh lemon juice, or to taste
1/2 cup sour cream

Steps:

  • In a bowl with an electric mixer or a whisk beat together the egg yolks, the vinegar, the mustard, and the salt, add 1/2 cup of the oil, drop by drop, beating, and add the remaining 1 cup oil in a stream, beating until the mixture is emulsified. Stir in the olives, the lemon juice, the sour cream, and pepper to taste and chill the dipping sauce, covered, for at least 1 hour or overnight.

1 cup warm water (95-105F)
2 teaspoons instant yeast
1 cup all-purpose flour
2/3 cup warm water (95-105F)
3 tablespoons honey
4 teaspoons instant yeast
2 ounces vegetable shortening (1/4 cup plus 1 teaspoon)
4 3/4 cups all-purpose flour
1 tablespoon salt
bread, starter
1 3/4 cups kalamata olives, pitted

Steps:

  • To create the starter, combine the water and yeast in a medium mixing bowl. Stir to dissolve the yeast fully. Add the flour to the bowl and stir until the ingredients are fully incorporated. Cover with a cloth and ferment the starter at room temperature for 30 minutes.
  • For the dough, combine the water, honey and yeast in the bowl of a stand mixer. Stir to dissolve the yeast fully. Add the shortening, flour, salt, starter and olives. Mix on low speed until the dough is fully developed. Remove the dough from the mixing bowl. Divide the dough into 2 pieces weighing about 22 ounces each. Set aside any remaining dough and freeze for future use. Roll each piece of dough into a smooth ball. Place the dough on the counter or in a proofing basket and cover with a warm, damp cloth to rest at room temperature for 30 minutes. Preheat the oven to 400° F.
  • Form the dough into loaves and place them on the counter or in a proofing basket. Cover the loaves with a warm, damp cloth and proof at room temperature for 30 minutes.
  • Score the loaves with a sharp knife, spray with water, and bake for 30 to 40 minutes, until the crusts are a deep golden brown and the middle of the loaves is 190-200 degrees.
  • Remove the bread from the oven and place it on the cooling rack for 30 minutes. If the bread was baked in loaf pans, remove the bread from the pans before cooling.
