Our rice salad, which can be served chilled or at room temperature, includes three types of the grain -- wild, brown, and brown basmati -- as well as tomatoes, cucumber, celery, onion, and peppers. Any combination of rice or commercial blend of rice would work well in this recipe.

1 1/2 tablespoons balsamic vinegar
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon Dijon mustard
1 1/2 cups cooked wild rice, made according to package directions; 3 cups cooked brown and/or brown basmati rice (about 1 1/3 cups uncooked), made according to package directions
1 yellow bell pepper, cut into 1/2-inch pieces
1/2 red onion, finely chopped
2 stalks celery, cut into 1/2-inch pieces
1/2 seedless cucumber, quartered lengthwise and cut into 1/4-inch slices
6 ounces red cherry tomatoes, quartered
1/4 cup chopped fresh cilantro

Steps:

  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, and mustard; set aside.
  • Place the wild rice, brown rice, yellow pepper, red onion, celery, cucumber, cherry tomatoes, and cilantro in a medium bowl. Add the dressing, and toss well to combine. Transfer to a serving bowl.

1 ½ cups uncooked wild rice
3 cups boiling water
1 cup uncooked brown rice
1 cup diced onion
1 cup diced carrots
¾ cup diced celery
3 (14.5 ounce) cans chicken broth
½ teaspoon ground thyme
¼ teaspoon dried marjoram
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • In heavy saucepan, soak wild rice in boiling water for 30 minutes. Drain; rinse thoroughly.
  • In large skillet or Dutch oven, combine drained wild rice, brown rice, onion, carrots, celery, chicken broth, thyme, marjoram, salt, and black pepper. Bring to a boil over high heat.
  • Reduce heat to low and simmer, covered, until rice is tender and liquid is absorbed, 50 to 60 minutes.

1 cup long-grain wild rice (6 ounces)
Kosher salt
2 navel oranges
2 tablespoons good olive oil
2 tablespoons freshly squeezed orange juice
2 tablespoons raspberry vinegar
1/2 cup seedless green grapes, cut in half
1/2 cup pecans, toasted
1/4 cup dried cranberries
2 tablespoons scallions, white and green parts, chopped
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt and bring to a boil. Simmer uncovered for 50 to 60 minutes, until the rice is very tender. Drain well and place the rice back in the pot. Cover and allow to steam for 10 minutes.
  • While the rice is still warm, place it in a mixing bowl. Peel the oranges with a sharp knife, removing all the white pith. Cut between the membranes and add the orange sections to the bowl with the rice. Add the olive oil, orange juice, raspberry vinegar, grapes, pecans, cranberries, scallions, 1/2 teaspoon of salt, and the pepper. Allow to sit for 30 minutes for the flavors to blend. Taste for seasonings and serve at room temperature.

Rice salads make nice gluten-free alternatives to pasta salads; like the latter, they can be served at room temperature or chilled. This fresh-flavored side uses three types of rice-wild, brown, and brown basmati-but any combination of rices would work well.

1/2 cup wild rice, rinsed and drained
Coarse salt and freshly ground pepper
3/4 cup long-grain brown rice
1/2 cup brown basmati rice, rinsed and drained
1 tablespoon extra-virgin olive oil
1 tablespoon plus 1 1/2 teaspoons balsamic vinegar
1/4 teaspoon Dijon mustard
1 yellow bell pepper, ribs and seeds removed, cut into 1/2-inch pieces
1/2 red onion, finely chopped
2 celery stalks, cut into 1/2-inch pieces
1/2 English cucumber, quartered lengthwise and cut into 1/4-inch slices
6 ounces cherry tomatoes, quartered
1/4 cup coarsely chopped fresh cilantro

Steps:

  • Bring 1 cup water to a boil in a saucepan; add the wild rice and 1/4 teaspoon salt. Return to a boil; reduce to a simmer. Cover, and cook until rice is tender and has absorbed all liquid, 45 to 50 minutes. Remove from heat; let stand, covered, 10 minutes.
  • Meanwhile, combine 1 1/4 cups water, the long-grain brown rice, and 1/4 teaspoon salt in another saucepan. Bring to a boil; reduce to a simmer. Cover, and cook until rice is tender and has absorbed all liquid, 35 to 40 minutes. Remove from heat; let stand, covered, 10 minutes.
  • In a third saucepan, bring remaining 3/4 cup water, the basmati rice, and 1/4 teaspoon salt to a boil. Reduce heat to a simmer. Cover, and cook until rice is tender and has absorbed all liquid, about 30 minutes. Remove from heat; let stand, covered, 10 minutes.
  • In a small bowl, whisk together the olive oil, vinegar, mustard, and 1 teaspoon salt; season with pepper.
  • Fluff all the rice with a fork, then transfer to a serving bowl. Add bell pepper, onion, celery, cucumber, tomatoes, and cilantro. Add dressing, and toss well to combine. The rice salad can be prepared up to 1 hour ahead and refrigerated, covered tightly. Serve at room temperature.

1 cup wild and long-grain rice blend
2 cups vegetable stock
Kosher salt and freshly ground black pepper
1/2 cup chopped dried apricots
1 large shallot, thinly sliced
2 tablespoons apple cider vinegar
1 teaspoon curry powder
1 teaspoon honey
6 tablespoons extra-virgin olive oil
3 cups baby arugula
1/2 cup toasted pine nuts
2 tablespoons chopped fresh mint

Steps:

  • Combine the rice, vegetable stock and 1/4 teaspoon salt in a medium saucepan. Bring to a boil; cover, reduce the heat to low and simmer until the liquid is absorbed and the rice is tender, 40 to 45 minutes. Stir in the apricots and shallot during the last 5 minutes of cooking.
  • Spread the rice in a single layer on a parchment paper-lined rimmed baking sheet to cool to room temperature, about 30 minutes.
  • Make the vinaigrette: Whisk together the vinegar, curry powder, honey, 1/4 teaspoon salt and 1/4 teaspoon pepper. Gradually whisk in the olive oil until combined.

2 x 400g cans mixed beans , drained and rinsed
340g can sweetcorn , drained
1 small red onion , finely sliced
2 red peppers , deseeded and diced
zest and juice 1 lime
2 tsp honey
1 red chilli , deseeded and finely sliced
small bunch coriander , leaves picked

Steps:

  • Cook rice following pack instructions. Once cooked, rinse under cold water to cool down. Once cold combine in a bowl with the beans, sweetcorn, onion and red peppers.
  • Mix the lime zest and juice, honey and chilli. Pour over the rice mixture and mix well, then season to taste. Stir through the coriander leaves just before serving.

I had a tiny amount of farro in my pantry and odds and ends of different grades of brown rice, so I combined them. I like the contrasting textures and flavors of the rice and farro, infused with the flavor of the roasted pepper and the vinaigrette.

3/4 cup brown rice
1/4 cup farro
Salt to taste
1 large red pepper, roasted and diced
1 cup diced cucumber
2 ounces feta, crumbled or cut in small cubes (plus additional for garnish)
1/4 cup basil leaves, cut in slivers, torn or chopped
1 to 2 teaspoons fresh thyme leaves
2 tablespoons sherry vinegar or red wine vinegar
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
1 small garlic clove, puréed
5 tablespoons extra virgin olive oil
Freshly ground pepper
1/2 6-ounce bag wild arugula, rinsed and dried

Steps:

  • Cook the rice. Combine with 1 2/3 cups water and salt to taste in a medium saucepan, bring to a boil, cover, reduce the heat and simmer 45 minutes, or until there is no more water in the pot. Turn off the heat, cover the pot with a dishtowel, return the lid, and let sit for 15 minutes. Transfer the rice to a wide bowl or a sheet pan and allow to cool completely.
  • Meanwhile cook the farro. Combine with 3 cups water and salt to taste in a medium saucepan, bring to a boil, cover, reduce the heat and simmer 45 to 50 minutes, until tender. Turn off the heat and allow the farro to sit in the hot water for another 15 minutes, then drain and place in a paper towel-lined bowl to cool.
  • In a large bowl, combine the rice, farro, diced roasted pepper, diced cucumber, feta, basil, and thyme.
  • In a small measuring cup or bowl, whisk together the sherry and balsamic vinegars, salt to taste, Dijon mustard and garlic. Whisk in the olive oil. Pour over the grain mixture, add freshly ground pepper, and toss the mixture well.
  • Line individual salad plates or a platter with arugula. Top with the salad. Garnish, if desired, with more crumbled feta, and serve.

3/4 cup wild rice

  • Uncover and transfer to a medium-sized bowl to cool.
  • In another saucepan on high flame, bring 2 cus of lightly salted water to a boil.
  • Add wild rice, cover and cook for 40 minutes on low heat.
  • Remove from heat, cover and keep aside for 5 minutes.
  • Uncover and transfer to a medium-sized bowl to cool.
  • Now, grab a large serving bowl.
  • In it combine the cooked barley, wild rice, brown rice, onion, celery, and walnuts if you've used them.
  • Take a small bowl and in it stir together the vinegar and lemon juice.
  • Gradually, whisk in oil and stir well.
  • Add dill, mint, cilantro and parsley.
  • Season with salt and pepper.
  • Drizzle this dressing over the salad.
  • Toss to coat the salad well in it.
  • Serve chilled or at room temperature.

1 cup wild rice, rinsed
Salt to taste
1/3 cup lightly toasted broken walnut pieces
3 celery stalks, preferably from the heart, thinly sliced on the diagonal (about 1 1/4 cups)
1/2 cup chopped fresh parsley
1 teaspoon finely chopped fresh sage (2 good-size leaves) (optional)
2 tablespoons freshly squeezed lemon juice
2 teaspoons red wine vinegar, white wine vinegar, or sherry vinegar
1 small garlic clove, minced
3 tablespoons walnut oil
3 tablespoons extra virgin olive oil
2 tablespoons buttermilk or plain low-fat yogurt

Steps:

  • Bring the water or stock to a boil in a large saucepan, add salt to taste and the wild rice. Lower the heat, cover and simmer for 40 minutes, or until the rice is tender and splayed. Drain and toss in a large bowl with the remaining salad ingredients.

2 cups water
1 cup orange juice
½ teaspoon salt, or to taste
⅓ cup agave nectar
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 ½ cups chopped kale leaves
½ cup chopped red bell pepper
½ cup toasted pine nuts
¼ cup halved seedless red grapes
2 tablespoons chopped celery
1 tablespoon chopped fresh parsley, or to taste

1 lemon, zested

Steps:

  • Bring brown and wild rice blend, water, orange juice, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender, 30 to 45 minutes. Drain excess liquid, fluff rice with a fork, and cook, uncovered, for 5 minutes more. Remove from heat and let cool, 20 to 30 minutes.
  • Combine agave nectar, olive oil, and apple cider vinegar in a small bowl for the dressing.

1 cup wild rice
4 cups chicken broth
3 tablespoons olive oil
1 1/2 cups red bell peppers, chopped

2 tablespoons olive oil

  • In a strainer, rinse the wild rice under cold water, drain well.

  • Drain off any excess liquid.
  • Set aside Meanwhile, in a medium skillet, heat the olive oil over medium high heat, add the bell peppers and cook for 3-5 minutes, or until tender.
  • Add the cashews and green onions, cook for 2-3 minutes longer, or until the nuts begin to brown.
  • Remove from heat In a large bowl, toss together the wild rice and bell pepper mixture.
  • For the dressing; In a jar with a tight-fitting lid, combine the vinegar, olive and sesame oils, garlic, salt and pepper.
  • Cover and shake until blended; pour the dressing over the salad and toss until evenly coated.
  • Cover and refrigerate salad for at lease 2 hours or up to overnight to allow the flavors to blend.
  • To serve the salad, spoon it onto a lettuce lined platter.
