GINGER DUCK

1 duck (thawed in the refrigerator), giblets removed
1 onion, peeled and cut in half, or 3 shallots
2 stalks celery, cut into 3-inch-long pieces
2 teaspoons ground ginger
1/2 cup sugar
1/2 cup soy sauce
1 teaspoon salt
1/2 cup sherry
1 small bunch watercress, trimmed and washed

Steps:

  • The day before, stuff the duck with the onion and celery. Place the duck, breast side up, in a large soup pot with enough water to half cover it. Add the ginger and bring to a boil. Cover and reduce the heat so that it simmers gently for an hour.
  • After one hour, turn the duck over. Add the sugar, soy sauce and salt. Continue simmering for another hour. Turn duck once again and simmer until tender and almost falling apart, about another hour. Turn off the heat and when cool enough, remove duck from pot and place in a roasting pan. Cover and refrigerate until the next day.
  • Pour the broth into a container and chill overnight. A layer of fat will form on top. Scrape off and discard. What remains is delicious in rice and soups and can be frozen for months.
  • Before serving, bring duck to room temperature in roasting pan. Preheat oven to 350 degrees. Add the sherry and 1 cup of the defatted duck broth to the roasting pan and place in the oven. Roast uncovered for 30 to 45 minutes, basting occasionally with the juices from the pan. The duck is done when it is heated through and the skin is crisp and chestnut brown.
  • Transfer the duck to a serving platter and garnish with watercress.

1/2 cup soy sauce

Steps:

  • Partly thaw duck, pry open cavity and remove as much fat as possible.
  • Rub with some soy and ginger and thaw completely.
  • Place in deep casserole (dutch oven).
  • Add remaining soy and ginger.
  • Add water to cover duck and bring to a boil.
  • Simmer 1 hour then drain.
  • (Liquid can be defatted and used as stock).
  • Place duck on rack and roast at 450 for 1/2 hour until crisp.

1 (2-pound) duckling
Salt and pepper
1 tablespoon sugar
1 tablespoon water
2 tablespoons dry white wine
1 tablespoon cider vinegar
2 ounces orange juice
2 tablespoons freshly chopped ginger
16 ounces duck, beef, or chicken stock
2 oranges, supremed

Steps:

  • Preheat oven to 375 degrees F.
  • Begin by placing the duck breast side up on a baking rack. Season with the salt and pepper, and roast until the juices run barely pink, about 45 minutes. Remove the duckling from the pan and set it aside.
  • Degrease the pan drippings by skimming off the top layer.
  • To prepare the sauce, combine the sugar and water and caramelize carefully. Add the wine, vinegar, orange juice and ginger. Mix them well and reduce by half. Add the stock and bring to a boil. Add the pan drippings, reduce the heat and simmer until sauce reduces by half. Once sauce is done, strain it through a cheesecloth or fine strainer and set aside.
  • To serve, place the duckling on a large serving tray. Add the orange segments on top and around the duck, and pour the sauce over the duck.

10 gressingham duck breasts
1 tablespoon clear honey
1 tablespoon dark soy sauce
3 ounces granulated sugar
14 fluid ounces fresh grapefruit juice
3 tablespoons clear honey
2 tablespoons dark soy sauce

1 inch fresh ginger, grated
3 tablespoons cornstarch

Steps:

  • Prick skin on each duck breast with a fork.
  • Blend the honey and soy sauce to make a glaze and brusy over the fillets.
  • Set them skin side up on a rack in a roasting tin.
  • Chill until ready to cook.
  • To make the sauce,slice away the outer peel and white pith from the grapefruit.
  • With a sharp knife, cut into the fruits between the membrane to lift out the segments.
  • Reserve the fruit and any juice in a bowl.
  • Put the sugar into a dry pan.
  • Set over a moderate heat and stir until the sugar melts and turns to caramel.
  • Draw off the heat and add the fruit juice (Cover your hand as the mixture will boil up furiously with the addition of cold liquid) Replace the pan on the heat, if they are any lumps of caramel, stir over a low heat until they dissolve.
  • Add the honey, soy sauce, lemon juice and ginger.
  • Stir until the mixture simmers.
  • Blend the cornstarch with 2 TBS cold water.
  • Stir into the pan and cook, stirring until the sauce thickens and clears.
  • Remove from heat.
  • heat oven to 400*F.
  • Set the duck fillets in the oven and roast for 35 to 40 minutes until the skins are golden and the flesh is still a little pink.
  • Reheat the sauce,add the grapefruit pieces and any juices in the bowl.
  • Slice each fillet lengthways into three, arrange on a heated platter and spoon over the grapefruit and ginger sauce.

These duck breasts are the nicest I've ever cooked. You'll find yourself putting your knife and fork down between mouthfuls. And it's also very quick and extremely easy to make. I enjoy serving these duck breasts with roasted seasonal vegetables.

2 duck breast halves
1 pinch salt
1 pinch cayenne pepper
1 pinch ground black pepper
½ cup chicken stock
2 tablespoons honey
2 tablespoons soy sauce
2 tablespoons rice wine
1 tablespoon grated fresh ginger
1 tablespoon tomato sauce
1 pinch chili powder
1 teaspoon lime juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Use a sharp knife to score across the duck breasts 4 times through the skin and fat but just barely to the meat. Rub the skin with salt, cayenne, and black pepper.
  • Preheat an ovenproof skillet over medium-high heat. Lay the breasts in the skillet skin-side down and fry until the skin is brown and crisp, about 5 minutes. Use a spoon to carefully discard any excess fat from the bottom of the skillet. Turn the breasts over and cook for 1 minute.
  • Place the skillet into the preheated oven and roast until the internal temperature of the thickest part of the breasts reach 160 degrees F (71 degrees C) for well done, or the breasts reach desired doneness.
  • Remove the duck breasts from the skillet and cover with foil. Set aside to rest. Pour off excess fat from the skillet. Place the stock, honey, soy sauce, rice wine, ginger, tomato sauce, chili powder, and lime juice in the skillet. Whisk the sauce over high heat, bring to a boil and cook until the sauce thickens, about 2 minutes. Slice the duck breasts thinly, arrange on serving plates, and pour the sauce over the top.

2 duck breasts , skin on
1½ tsp garam masala
1 tsp grated fresh root ginger
1 tbsp butter
1 tsp cumin seeds
100g mixed basmati and wild rice
300ml chicken or vegetable stock
85g frozen pea
bunch spring onion , finely sliced
2 tbsp mango chutney , to serve (we like Geeta's)

Steps:

  • Score criss-crossed lines into the duck skin, then rub in the garam masala and ginger. Chill for 30 mins if you have time.
  • Heat oven to 200C/fan 180C/gas 6. Heat a heavy, non-stick pan, then gently fry the duck, skin-side down, for 10 mins until the fat runs out. Pour off the excess fat halfway through. Transfer to a baking dish, roast, skinside up, for 10 mins, then leave to rest.
  • While the duck is cooking, melt the butter in a pan. Add cumin seeds, fry for 2-3 mins, then stir in the rice for another few mins. Pour over the stock, cover partly with a lid, then simmer for 10-12 mins, adding the peas for the final 4 mins. When the rice is cooked and all the liquid has been absorbed, fork through the spring onions and some seasoning to taste. Slice the duck and serve with the rice and a spoonful of chutney.

1 (4 1/2- to 5 1/2-lb) fresh Pekin duck (sometimes called Long Island duck)
6 tablespoons toasted Sichuan-peppercorn salt
1 tablespoon five-spice powder
2 tablespoons Chinese rice wine or dry Sherry
6 (1/8-inch-thick) slices fresh ginger
4 scallions, cut into 2-inch pieces
About 12 cups corn, peanut, or canola oil
2 tablespoons dark (black or mushroom) soy sauce
1/3 cup all-purpose flour
Special Equipment
a 10-inch glass pie plate or shallow heatproof bowl; a 16- to 18-inch wok with a lid and a 9 1/2- to 10-inch round metal rack, or a 14-inch wok and same rack plus a large pot (at least 12 inches wide and 5 inches high); long oven mitts; a bulb baster; an electric fan; 2 large Chinese mesh spoons or large slotted spoons

Steps:

  • Prepare duck:
  • Cut off wing tips with poultry shears or a sharp knife. Remove and discard excess fat from body cavity and neck, then rinse inside and out. Pat dry inside and out and press on breastbone to break it and flatten duck.
  • Marinate duck:
  • Heat peppercorn salt and five-spice powder in a dry skillet over moderate heat, stirring, until hot. Measure out 3 tablespoons and rub 1 tablespoon in body cavity and 2 tablespoons over outside of duck, including under wings and legs. Reserve remaining spiced salt for serving with duck.
  • Put duck in a bowl and marinate, covered and chilled, 8 to 24 hours.
  • Steam duck:
  • Drain any liquid from cavity and put duck in glass pie plate. Rub rice wine over duck. Smash ginger and scallions with flat side of a large heavy knife, then put one third in duck cavity and scatter remainder over duck.
  • Fill wok with enough water for rack to sit 1/2 inch above water and bring to a rolling boil. Wearing oven mitts, put pie plate with duck on rack over boiling water and cover wok with lid.
  • Reduce heat to moderate and steam duck 2 hours, checking every half hour to siphon off fat and juices from around duck and in cavity with bulb baster and replenishing boiling water as necessary.
  • Wearing oven mitts, remove pie plate from steamer. Discard ginger and scallions. Drain duck and cool in pie plate 15 minutes.
  • Air-dry duck:
  • Slide duck onto a rack set over a baking sheet (to catch juices) and pat dry with paper towels. Position duck in front of a fan and air-dry 2 hours, making sure air blows directly onto duck.
  • Fry duck:
  • Heat 2‚ inches oil in large wok or large pot until a deep-fat thermometer registers 375°F. Meanwhile, brush outside of duck with soy sauce, then dust with flour, gently knocking off excess.
  • Dip mesh spoons in hot oil (to keep duck from sticking) before using them to gently lower duck into hot oil. Fry duck, spooning hot oil over top, 2 minutes. Carefully turn duck over and fry 1 minute more. With extreme care, remove duck from oil with mesh spoons, draining cavity, and transfer to paper towels to drain.
  • Heat oil to 400°F and fry duck a second time, in same manner, until dark brown and crisp, 30 seconds to 1 minute on each side. Again with extreme care, remove duck from oil with mesh spoons, draining cavity, and transfer to paper towels to drain briefly.
  • Presentation:
  • Serve duck with small dishes of reserved spiced salt for dipping.

GINGER SAUCE FOR DUCK BREASTS

2 tablespoons fat from cooking duck breasts
2 shallots, finely minced
1 tablespoon finely minced fresh ginger
3 tablespoons reserved marinade (see note)
3 tablespoons concentrated duck or veal stock (glace de viande)
1/2 cup dry red wine
Salt and freshly ground black pepper

Steps:

  • Heat fat in skillet. Add shallots and ginger and cook over medium heat until they have softened. Stir in marinade; cook a few seconds longer.
  • Stir in stock and wine, cook, stirring, until mixture is reduced to about half a cup and has thickened slightly.
  • Season to taste with salt and pepper and spoon over the duck breasts to moisten them.

2-1/2 tablsepoons Szechuan peppercorns
3 t ablespoons kosher salt
1 teaspoon five-spice powder
1 5-pound duckling, washed and patted dry
Other ingredients:
2 whole green onions, cut into 1-inch lengths
2 inches fresh ginger root, sliced and gently crushed
5 - 7 cups peanut oil
Plum sauce
Equipment:
14 -inch wok with lid
9 -inch glass pie plate
10 -inch heavy frying pan
Food processor, spice mill or blender
One pair disposable chopsticks or steamer rack

Steps:

  • Roast peppercorns in a dry frying pan over moderate heat until aromatic and they just begin to smoke. Do not burn. Put peppercorns in a blender or processor (or spice mill) for 90 seconds. Sieve to remove peppercorn husks, the duck will be gritty if you don't. Roast salt in a dry pan over moderate heat until light brown. Mix together the salt, peppercorns and five-spice powder. Reserve 2 tablespoons to serve with the finished duck. Rinse duck and pat dry with paper towels. Rub spices inside and out. Refrigerate overnight. To steam the duck: 2 whole green onions, cut into 1-inch lengths 2 inches fresh ginger root, sliced and gently crushed Put onions and ginger in cavity of the duck. Place the duck in a 9-inch glass pie plate. Fill a 14-inch wok with water, approximately 3 inches deep. Place a pair of chopsticks in an X pattern in the wok, set the pie plate on top, and cover with lid. Steam over high heat for 60 minutes. Check water level every 10 - 15 minutes. At the end of the steaming time, the duck is fragile and must be handled with care. Use a large fork to pick up the duck from inside the cavity, letting all juices drip into the pie plate; discard the juices (or save for a great gravy). Air-dry the duck for two to four hours. The duck will firm up and be easier to handle. To deep-fry the duck: Place 5 to 7 cups of peanut or corn oil (peanut tastes better) in the wok and heat to 375 degrees (or until it just begins to smoke). Gently slip the duck into the oil, being careful as spattering can occur. If the duck is not completely submerged, turn it over after 3 or 5 minutes and cook for another 3 or 4 minutes. When the skin is golden brown, remove duck from oil and place on paper towels to blot excess oil. When the duck is just cool enough to handle, use a very sharp knife or cleaver to chop it in half on the long axis. Each half can then be chopped crosswise into six pieces. Serve with sweet plum sauce.
