2 1/2 cups all-purpose flour, plus more for flouring the rolling pin and surface
1 tablespoon granulated sugar
1 teaspoon kosher salt
3/4 cup (1 1/2 sticks) unsalted butter, cut up
6 to 8 tablespoons ice water
1 3/4 cups canned solid-pack pumpkin puree
1 1/4 cups heavy cream
1/3 cup plus 2 tablespoons firmly packed light brown sugar
2 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon kosher salt
2 tablespoons bourbon
2 tablespoons vanilla extract
2 large eggs, lightly beaten
Cinnamon-Buttermilk Whipped Cream, recipe follows, for serving
1 cup cold heavy cream
1/2 cup cold buttermilk
2 tablespoons sugar
1/2 teaspoon ground cinnamon

Steps:

  • For mom's flaky pie dough: Combine the flour, granulated sugar and salt in a food processor and pulse until combined. Gradually add the butter chunks and pulse until the largest chunks are pea-size. Add the ice water 1 tablespoon at a time and pulse just until the dough begins to clump together against the walls of the processor. Dump the dough out onto a work surface and press together to make a cohesive ball, kneading once or twice if it is falling apart. Divide the dough in half, wrap each in plastic wrap and refrigerate 1 portion of the dough for 1 hour before using. (You'll be using only 1 portion of dough for the pie, so wrap the extra piece in a second layer of plastic wrap, put in a resealable plastic bag and freeze for another time.)
  • On a well-floured surface with a well-floured rolling pin, roll the dough into a 9- to 10-inch round and transfer to an 8-inch pie plate. (If the rolling pin and work surface quickly become sticky, refrigerate the dough until firm, or, using a large spatula or bench scraper, transfer the dough to an 8-inch pie plate and press it into shape.) Crimp the edges and prick the bottom all over with a fork. Refrigerate the pie shell for 20 minutes.
  • Meanwhile, preheat the oven to 325 degrees F.
  • Place a sheet of parchment paper or foil in the pie shell and fill with pie weights, raw rice or dried beans. Bake until the edges are lightly golden, about 15 minutes. Remove the weights and paper and bake until golden and cooked on the bottom and sides, about 15 minutes more. Reduce the oven temperature to 300 degrees F.
  • For the pumpkin pie filling: Combine the pumpkin, cream, brown sugar, cinnamon, nutmeg, ginger, cloves and salt in a large bowl and whisk until thoroughly blended. Stir in the bourbon, vanilla and eggs. Whisk again until thoroughly blended.
  • Pour the pumpkin mixture into the pie shell and smooth the top with an offset spatula. Bake until the center wobbles slightly when shaken, 1 hour to 1 hour 10 minutes. Cool completely on a rack for about 2 hours. Serve with Cinnamon-Buttermilk Whipped Cream.
  • Add the heavy cream and buttermilk to a large bowl and beat with an electric mixer until foamy. Gradually add the sugar and cinnamon while beating, then continue to beat until soft peaks form.

A streusel-topped pumpkin pie that won top honors for Wincie Hughes of North Little Rock, Ark., when Procter & Gamble's Crisco division still sponsored an annual pie contest state-by-state. Also first place at the Arkansas State Fair for originality. I clipped this from the San Diego Union-Tribune years ago and have enjoyed this pie at Thanksgiving many times since. The recipe has cropped up from time to time as "Arkansas' Best Pumpkin Pie."

1 inch 9-inch " unbaked pie shell
1 3/4 cups canned pumpkin puree (not pumpkin pie filling)
1 1/4 cups evaporated milk
2 eggs, beaten
3/4 cup sugar
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup flour
1/3 cup packed brown sugar
3 tablespoons butter or 3 tablespoons Butter Flavor Crisco
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chopped pecans
6 -8 pecan halves (optional)
1 cup sweetened whipped cream (optional)

Steps:

  • Prepare favorite pie dough for a single crust, and line pie plate; flute edge; do not prick bottom.
  • Preeat oven to 350 degrees F, with shelf in lowest position.
  • TO MAKE THE FILLING:.
  • Combine pumpkin, milk, eggs, sugar, cinnamon and salt in a large bowl.
  • Stir until smooth. Pour into unbaked pie crust.
  • TO MAKE THE STREUSEL TOPPING:.
  • Combine flour, brown sugar, butter, cinnamon and salt. Mix with a fork or cut together with a wire pastry blender until coarse crumbs form.
  • Stir in chopped pecans. Sprinkle over filling, leaving a bare patch of pumpkin filling in the center.
  • Bake pie at 350 degrees F for 45 to 55 minutes or until a knife inserted in center comes out clean.
  • Cool to room temperature before serving. Garnish with a circle of whipped cream, studded with pecan halves.

1 ½ cups finely ground graham cracker crumbs
⅓ cup packed light brown sugar
6 tablespoons butter, melted
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
1 (15 ounce) can pumpkin puree
1 cup heavy cream
¾ cup packed light brown sugar
½ cup whole milk
2 large eggs
1 teaspoon ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
¼ teaspoon fine sea salt
3 large egg whites, at room temperature
⅛ teaspoon cream of tartar
⅓ cup white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix graham cracker crumbs, brown sugar, melted butter, flour, and cinnamon together for crust until mixture is binding together. Press into a 9-inch pie plate.
  • Line the crust with aluminum foil, gently pressing into place. Pour 1 inch of dry rice or dried beans onto the foil.
  • Bake in the center rack of the preheated oven until golden, about 7 minutes. Transfer the crust to a wire rack to cool.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Whisk pumpkin, heavy cream, brown sugar, milk, eggs, cinnamon, ginger, cloves, nutmeg, and sea salt together in a bowl until well blended. Remove foil and rice or beans from crust and set on a baking sheet; pour in the filling.
  • Bake in the preheated oven for 15 minutes. Reduce the oven temperature to 350 degrees F (175 C). Continue to bake until set, about 40 minutes. Transfer to a wire rack to cool. Raise the oven temperature to 375 degrees F (190 C).
  • While the pie cools, make the meringue. Beat egg whites in a medium bowl using an electric mixer at medium speed until frothy, about 2 minutes. Add cream of tartar and continue to beat until soft peaks form, about 2 minutes more. Blend in sugar slowly; increase the mixer's speed to medium-high and beat until egg whites are stiff and glossy, about 2 minutes more.
  • Spoon meringue onto the pie, using the back of a spoon to form small peaks.
  • Return the pie to the oven and bake until meringue is golden brown, about 10 minutes. Transfer the pie to a wire rack to cool completely before serving.

1 cup white sugar
1 cup corn syrup
2 tablespoons butter, melted
1 teaspoon vanilla extract
¼ teaspoon salt
1 ½ cups pecan halves
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Beat eggs slightly in medium bowl. Beat in sugar, and then blend in syrup, butter or margarine, vanilla, salt, and pecans. Pour filling into unbaked pie shell.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking 35 to 40 minutes; the pie will be brown and slightly puffed.

1/2 recipe Deep-Dish Pate Brisee
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 ounces) Libby's 100 percent pure pumpkin
1 can (12 ounces) evaporated milk, preferably Nestle Carnation
Whipped cream, for serving (optional)

Steps:

  • Preheat oven to 425 degrees. On a lightly floured work surface, roll pate brisee into a 12-inch round. With a dry pastry brush, sweep off the excess flour; fit dough into a 9-inch deep-dish glass pie plate, pressing it into the edges. Trim to a 1-inch overhang all around. Crimp edge as desired. Prick bottom of dough all over with a fork; set aside.
  • In a small bowl, mix together, sugar, cinnamon, salt, ginger, and cloves. Beat eggs together in a large bowl. Add sugar mixture and pumpkin; stir to combine. Stir in evaporated milk until well combined.
  • Pour mixture into pie shell and bake for 15 minutes. Reduce temperature to 350 degrees; bake until filling is set, 20 to 30 minutes. Transfer to a wire rack and let cool 2 hours. Serve with whipped cream, if desired, or transfer to a refrigerator until ready to serve.
