Gone with the Wind Cake image

This is a lovely sponge cake that is reminiscent of the Deep South. May be cut into layers and filled and iced with lemon filling, or with whipped cream.

¾ cup cold water
3 egg yolks
3 egg whites
1 ½ cups white sugar
1 teaspoon vanilla extract
1 ¾ cups sifted cake flour
1 teaspoon baking powder
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat cold water and egg yolks together until mixture makes 1 quart--at least 10 minutes. Slowly add sugar and vanilla to egg yolk mixture, beating for at least 7 minutes more.
  • Sift the cake flour, baking powder, and salt together. Fold into the egg yolk mixture.
  • Beat egg whites until medium-stiff peaks form. Fold one third of the egg white mixture into the batter to lighten; fold in remaining egg whites. Pour batter into an ungreased tube pan.
  • Bake in preheated oven until cake springs back when lightly touched with a fingertip, about 50 minutes. Turn upside down to cool in pan for 1 hour. Loosen sides and coax from pan.

This was my mother's recipe and one she used for fresh fruit rather than shortcake. It is also good just as is with a sprinkling of icing sugar. Has the added bonus of no extra fat and relatively healthy. Hope someone out there enjoys this.

1 1/2 cups cake flour (sifted before measuring)
1 teaspoon baking powder
1/2 teaspoon salt
3 egg yolks
3/4 cup cold water
1 1/4 cups sugar
3 egg whites
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 325 degrees.
  • 10 inch tube pan - UNGREASED).
  • Sift flour, baking powder and salt.
  • Beat egg yolks until frothy.
  • Add water and beat until the bowl is nearly full of liquid and bubbles are small.
  • Add sugar gradually.
  • Add dry ingredients slowly, beating as you do.
  • Beat egg whites until stiff peaks are formed.
  • Fold in thoroughly.
  • Bake 50 minutes.
  • Do not use a plastic bowl - a large metal one is best.

This simple cake works perfectly during the holidays, on a buffet table or in a picnic basket! And you won't believe the aroma that comes from your oven during baking! The alcohol bakes off and leaves just the flavor. It's very moist and has been a favorite birthday request in our house for over 20 years!

1 (18.25 ounce) package moist white cake mix
1 (5 ounce) package instant vanilla pudding mix
1 teaspoon ground nutmeg
¾ cup vegetable oil
¾ cup white wine
4 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch bundt pan.
  • In medium bowl combine the cake mix, instant vanilla pudding, nutmeg, vegetable oil, white wine, and eggs. Beat with an electric mixer for 5 minutes.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes or until a toothpick inserted in the center comes out clean. Let cake cool on rack in pan for 10 minutes then remove cake from pan to rack. Let cake cool completely before slicing. Garnish sliced cake with a dollop of whipped cream or dust with confectioners' sugar and sliced strawberries.
  • Variation: You can also "flour" the pan after it's been greased with cocoa powder or a cinnamon sugar mixture for a textured crust. Simply fill a clean salt shaker for easy application. This will eliminate that "white stuff" on the outside of your baked cake which makes for a prettier cake.

  • Place egg whites and salt in large mixing bowl and beat with an electric mixer at medium speed until soft peaks form, 2-3 minutes. Add lemon juice and continue beating until stiff peaks form. Scrape mixture into another bowl and set aside.
  • Place egg yolks and water in the mixing bowl you just used (no need to wash it). Beat with an electric mixer at high speed until the mixture reaches within 1-2 inches of the top of the bowl. This will take 3-5 minutes.
  • With the mixer running on medium, slowly add sugar, followed by flour and vanilla, scraping down sides of bowl if needed, until the mixture is well blended. Turn the mixer to low and add the whipped egg whites and mix until just incorporated - being careful not to overmix. (I usually get this started in the mixer and then finish folding them in by hand using a spatula)
