2 quarts water
1 tablespoon kosher salt, plus more for seasoning
1 tablespoon vegetable oil
2 cups uncooked elbow macaroni
2 eggs
1 1/2 cups evaporated milk
1/2 stick butter, melted
Freshly ground black pepper
16 ounces shredded sharp Cheddar
Dust with paprika

Steps:

  • Preheat oven to 325 degrees F.
  • Bring water, salt, and oil to boil over high heat Add pasta, bring back to a boil and cook until al dente, 8 to 9 minutes. Drain pasta and rinse with cold water to stop the cooking process.
  • In a large bowl, mix together eggs, evaporated milk, melted butter and salt and pepper, to taste. Stir in 3/4 of the cheese and add the pasta. Spray an 8 by 8-inch baking pan with nonstick spray and add the pasta mixture. Top with remaining cheese and dust with paprika.
  • Bake until the cheese is golden and bubbly, about 30 minutes. Serve hot.

2 ½ cups macaroni
1 teaspoon salt
1 teaspoon black pepper
1 (8 ounce) package Cheddar cheese, shredded
4 cups milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place margarine in 9x13 inch baking dish and put in oven to melt. When margarine is completely melted, pour in macaroni, salt and pepper. Stir until macaroni is coated with butter. Sprinkle cheese over macaroni and then pour milk over all. Do not stir and do not cover dish.
  • Bake in preheated oven for 60 minutes. Do not stir while baking.

1 (16 ounce) package elbow macaroni
1 cup shredded mozzarella cheese
1 cup shredded Swiss cheese
1 cup grated Parmesan cheese
1 cup shredded provolone cheese
½ cup ricotta cheese
½ cup sour cream
½ cup heavy cream
1 tablespoon chopped fresh parsley
½ teaspoon dried Italian seasoning
½ teaspoon garlic salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish. Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, 6 to 8 minutes. Drain.
  • In a large bowl, toss together the mozzarella cheese, Swiss cheese, Parmesan cheese and Provolone cheese. Remove about 1/2 cup for topping and set aside. In a separate bowl, stir together the ricotta cheese, sour cream and heavy cream. Season with parsley, Italian seasoning and garlic salt.
  • Pour the ricotta cheese mixture and drained macaroni into the bowl with the cheeses and toss lightly. Do not mix too thoroughly, it's better left messy. Pour into the prepared baking dish. Sprinkle the reserved cheese over the top.
  • Bake in the preheated oven until cheese is melted, about 10 minutes, then turn the oven to broil. Broil for about 5 minutes to brown the top.

1 1/3 cups small elbow macaroni
1 slice whole wheat bread
2 tablespoons (1/4 stick) butter
2 tablespoons all purpose flour
3/4 cup low-fat milk
3/4 cup canned vegetable broth
2 green onions, thinly sliced
1 1/2 cups (packed) grated sharp cheddar cheese

Steps:

  • Cook macaroni in medium saucepan of boiling salted water until tender but still firm to bite. Drain.
  • Meanwhile, grind bread in processor to fine crumbs; transfer to small bowl. Melt butter in medium saucepan. Mix 1/2 tablespoon into crumbs. Add flour to remaining butter; whisk over medium heat 2 minutes. Gradually whisk in milk and broth. Bring to boil, whisking constantly. Add green onions. Whisk 2 minutes longer. Remove from heat. Add cheese; stir until melted.
  • Preheat broiler. Mix macaroni into sauce. Season to taste with salt and pepper. Spoon into 9-inch pie plate. Sprinkle crumbs over. Broil until crumbs brown, about 2 minutes, and serve.

Steps:

  • Cook macaroni according to package directions. 1 cup fresh breadcrumbs from artisan bread
3 tablespoons melted butter
salt and pepper, to taste
2 large eggs
1 (12 ounce) can evaporated milk
1/4 teaspoon Tabasco sauce
2 teaspoons salt
1/4 teaspoon ground black pepper
1 teaspoon dry mustard
1/2 lb uncooked macaroni
4 tablespoons butter
12 ounces aged cheddar cheese, grated (Wisconsin Carr Valley 3-year-aged cheddar or similar from your area)

Steps:

  • Toss the breadcrumbs in with the melted butter. Reserve.
  • Cook the macaroni to al dente, drain well, place back into the saucepan it was cooked in, and toss in the 4 tbsp of butter.
  • Combine the eggs, 3/4 of the milk, 3/4 of the cheese, Tabasco, salt, pepper and mustard.
  • Stirring the macaroni and butter over medium heat, add the egg mixture and stir until cheese melts and sauce begins to thicken.
  • Add the remaining milk and keep stirring until sauce is bubbling and hot.
  • Pour immediately into a greased baking dish.
  • Sprinkle with the cheese that remains and the bread crumbs.
  • Place under a broiler. Be sure to place 6-7 inches away so you don't burn your top, broil to crisp, and serve.
