OVEN BAKED POTATO CHIPS
Quick and easy to make with simple ingredients, these oven baked potato chips are perfectly crunch and loaded with flavor.

Steps:
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Slice the potatoes into thin rounds using a sharp knife or a mandolin into 1/8" thickness. Use a paper towel to dry them really well.
- Transfer the potatoes to the baking sheet. Drizzle the olive oil on top and season with paprika, garlic powder, salt and pepper. Toss with your hands to combine.
- Arrange the sliced potatoes in a single layer on the baking sheet so they are not overlapping. Bake until crispy, about 20-25 minutes.

BEST EVER OVEN CHIPS

- Trim all the rounded edges off the potatoes to make a rectangular block, then cut this into thick batons (save any offcuts to make mash). Drop into a pan of cold salted water with the vinegar and bring to the boil. Simmer for 6-8 mins until the potatoes are just cooked and tender - test with the tip of a knife. Drain carefully, trying not to break any of the chips, and leave to cool completely. Can be prepared up to two days ahead and chilled until needed.
- Heat the oven to 220C/200C fan/gas 9. Pour the oil into a sturdy, rimmed baking tray or shallow roasting tin and heat in the oven. Mix the flours with the baking powder, cayenne and some salt in a shallow dish and gently toss the chips in the floury mixture to coat, then leave in the mixture until needed.
- Carefully remove the pan from the oven - the oil should be shimmering - and lay the chips in a single layer in the pan. Use a thin, flexible spatula to gently turn the chips so they are all coated, then roast for 20 mins. Turn the chips again, then roast for another 10 minutes. Turn one final time, then cook for a futher 10 minutes until crisp and deep golden all over. Drain the chips onto kitchen paper and serve straight away.

OVEN-ROASTED CHIPS

- Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
- Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
- Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

- Place a baking tray in the oven and preheat it to 230 degrees C (450 degrees F).
- Parboil the potato chips, skin on, for about 10 minutes in boiling salted water.
- Heat some olive oil in a frying pan, smash the garlic bulb and chuck in the cloves, then add the potato chips. Toss in the oil and season with pepper. Bake on the preheated tray for 15 to 20 minutes until crispy and golden.
- Remove the leaves from the rosemary and put in the mortar with the lemon zest and salt. Bash up to make a green paste, adding more salt if it is too wet. Push through a sieve, and sprinkle on the chips to serve.
CHUNKY OVEN CHIPS

- Heat oven to its highest setting, ideally 250C/fan 230C/gas 9. Cut each potato into 1cm-wide slices, then into 1cm-thick sticks. Blanch in a large pan of boiling water for 3 mins, then drain well.
- Shake the potatoes out onto a roasting pan, drizzle with oil, ensuring each chip is evenly coated, then season well. Bake for about 15-20 mins, turning the potatoes at least twice, until golden brown and crisp.
THE BEST OVEN CHIPS WITH GARLIC AND HERBS

- Preheat the oven to 180c/190c gas/fan. Cut the potatoes into large chips, there is no need to peel them. Once cut place them into a large pan of water and bring to the boil for approximately 10 minutes. Remove when soft, but do not allow them to break up. While they are heating place the butter close to the hob to allow it to melt.
- Drain the chips and place In a large mixing bowl. cover with the butter and then sprinkle the Garlic Salt, Garlic Granules and thyme all over them. I toss them several times between the pan and the bowl to cover as much as possible.
- Place the chips evenly on a baking tray and place is the oven.
- Tip: While cooking I also place peeled cloves of garlic on the baking tray which is a lovely compliment to the chips - Enjoy!
WORLD'S BEST OVEN CHIPS
This is my own recipe and have used it successfully for some years. I use large potatoes and cut fairly chunky chips, but you can of course cut smaller ones if you prefer. I find that Japanese soya sauce is far superior in taste and quality to any other, and would recommend using shoyu or tamari. I also find that tablespoons vary in size. I have them in two sizes, one of which is around 50% larger than the other. I have used the larger of these in this recipe. If your tablespoons are relatively small, adjust the ingredients accordingly. Always use organic ingredients where possible.

- Switch on oven at Gas Regulo 6. Have a non-stick roasting pan ready.
- Wash potatoes if non organic, and dry with a kitchen towel. Cut out any eyes or other imperfections.
- Chip potatoes according to your preference and place in large bowl.
- Add other ingredients (I add them one at a time to ensure that the chipped potatoes are well coated before introducing the next ingredient).
- Tip coated chips into the roasting pan. Ensure that they are evenly distributed to aid even cooking.
- Roast for 30-40 minutes depending upon size of chips. Thicker chips will take longer to cook. The chips will also take longer if the pan is too small to allow them to cook in one layer.
- Serve. (I eat them with salt, pepper and balsamic vinegar. I promise you that they are DELICIOUS!).
