Forget store-bought macaroni salad - ours is a light, well-seasoned spin on the high-fat standard. For added color, stir in some diced tomatoes. Swap regular pasta for the whole wheat pasta, if desired.

1 cup(s) Uncooked celery chopped
0.333 cup(s), chopped Uncooked red onion(s)
2 Tbsp Fresh parsley chopped
0.25 tsp Table salt or to taste
0.125 tsp Black pepper freshly ground, or to taste

Steps:

  • Cook macaroni in salted water according to package directions; drain and transfer to a large bowl.
  • Meanwhile, in a medium bowl, whisk together mayonnaise, vinegar, mustard and garlic powder; stir mixture into cooked macaroni. Fold in celery, onion and parsley; season to taste with salt and pepper. Serve warm or chilled.
  • Yields about 2/3 cup per serving.

16 oz. (450g) Elbow Macaroni
½ Red Onion
1 Green Bell Pepper
1 Red Bell Pepper
¼ cup Parsley, fresh
1 Carrot
4 tbsp Mayonnaise (you can use vegan mayonnaise)
1 tbsp. Spicy Dijon Mustard
Salt and Pepper, to taste

Steps:

  • Cook macaroni to al dente according to package directions, drain and rinse. Transfer to large bowl, let cool.
  • While macaroni cooks and cools, chop red onion, bell peppers, parsley and dice carrot, set aside.
  • Add red onion, bell peppers, parsley, carrot, mayonnaise, mustard and salt and pepper to macaroni.
  • Mix well, refrigerate until cool. Serve cold or at room temperature.

4 cups uncooked elbow macaroni
1 cup mayonnaise
¼ cup distilled white vinegar
⅔ cup white sugar
2 ½ tablespoons prepared yellow mustard
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
¼ cup grated carrot
2 tablespoons chopped pimento peppers

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
  • In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.

1/4 cup onion, grated
1/4 cup carrots, shredded
1/4 cup celery, finely diced
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook the elbow macaroni pasta for 1-2 minutes more than the cook time listed on the package. Drain and set aside.
  • Place the elbow macaroni in a bowl and mix in the mayonnaise, grated onions, shredded carrots, finely diced celery, salt, and pepper.
  • Refrigerate the dish at least an hour - this allows the flavors to mix. Serve slightly chilled (remove from the refrigerator 10 minutes before serving) as a side dish. Enjoy!
