I have seen a couple of recipes for taco soup, but this is different. I received it from my ww leader. It is very much like a chili and is so easy. My family loves it and I love it topped with 1 tbsp low fat sour cream.

1 lb extra lean ground beef or 1 lb turkey
1 large onion, diced
2 (15 ounce) cans chili beans
1 (15 ounce) can zesty beans (I use S&W chili beans in a zesty sauce)
1 (15 ounce) can black beans, drained
1 (15 ounce) can corn, undrained
1 (15 ounce) can tomato sauce
1 1/2 cups water
1 (4 1/2 ounce) can chopped green chilies
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) envelope ranch dressing mix

Steps:

  • Brown meat and onion, drain and add remaining ingredients. Bring to a boil then reduce heat and simmer 30 minutes. 2 points per cup!

1 envelope taco seasoning
1-1/2 cups water
1 can (16 ounces) mild chili beans, undrained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (10 ounces) diced tomato with green chiles
1 can (4 ounces) chopped green chiles, optional
1 envelope ranch salad dressing mix

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add taco seasoning and mix well. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.

This is a slightly different version of Taco Soup for Weight Watchers. It has no meat so it is actually a vegetable soup. We served it for my mother in law and paired it with a salad and some rolls for the rest of the family. It was yummy. One caution it is spicy for some so if you don't like it spicy get the corn without the chilies. We used Lawry's taco seasoning and Hidden Valley Ranch ranch packet for the best flavor. We have no ties to them but love their products for this. It is warm and makes a lot of soup. We served 4 adults and two kids. Got this on a internet site awhile back. It is yummy but remember to JUDGE IT AS A WEIGHT WATCHER recipe because if you went hog wild with ingredients with more fat and calories it could be even better. Enjoy ChefDLH. (Serving size is 1 cup. 2 WW points per serving.)

  • Saute onion with vegetable oil cooking spray.

1 pound 93% lean ground beef
1 (16 ounce) jar salsa
1 (10 ounce) package frozen corn and beans mix (such as Deluxe Seasoned Corn & Beans by PictSweet Farms®)
5 tablespoons Mexican crema con sal
¼ cup shredded Cheddar cheese, or as needed

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground beef and cook and stir until crumbly and browned, about 5 minutes. Add salsa and frozen vegetables. Cancel Saute mode. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Ladle soup into serving bowls and top with Cheddar cheese and Mexican crema.

This was modified from one of my WW recipes. My family loves this soup. It's not your typical taco soup recipe with the addition of the A-1. Not overly thick, nice body and interesting taste. Quick and easy!! (Very, very low on WW points!)

1 lb extra lean ground beef
15 ounces corn, undrained
30 ounces tiny new potatoes (canned and drained)
15 ounces canned pinto beans, undrained
15 ounces fat-free refried beans
30 ounces canned tomato sauce
5 beef bouillon cubes
4 cups water
2 tablespoons A.1. Original Sauce
1 1/4 ounces taco seasoning (one packet)
3 2/3 ounces black olives, sliced (larger can)
salt & pepper

Steps:

  • Brown beef and drain well. (I season my ground beef with a little Kosher salt and pepper while it's browning).
  • In large stock pot combine all ingredients and heat to a boil.
  • Season with salt and pepper if desired.
  • Entire recipe takes about 15 minutes and that includes browning the beef.
  • My DH doesn't like the potatoes in the soup, so we just don't put any in his bowl.
  • Serve with some shredded cheddar cheese, if desired.
