BAKED APPLE FRITTERS
After losing 50 lbs. my husband requested lowfat apple fritters. An internet search provided a recipe from www.shashek.com now modified to use a food processor.

- Sprinkle yeast over warm water and set aside for 5 minutes.
- Meanwhile, combine hot milk, margarine, sugar and salt in the bowl of food processor.
- (or mixing bowl) Let stand until margarine melts.
- Beat in 1 1/2 cups of flour.
- Add yeast mixture, cinnamon and egg.
- Process or beat until combined.
- Add other 2 cups flour and process or mix and knead on board.
- Add additional flour if needed.
- Place dough in greased bowl.
- Turn to grease top.
- Cover and let rise about 1 1/2 hours or let rise in the refrigerator over night (bringing dough to room temperature before continuing).
- Punch dough down.
- Mix in apples.
- Divide dough into thirds.
- Cut dough with shears or chop with sharp knife.
- Shape cut dough into six mounds on a greased baking sheet.
- Repeat with other two sections of dough.
- Cover and let rise at room temperature until double in bulk, about 1 hour.
- Uncover and bake at 350 degrees for about 15 minutes or until golden.
- Meanwhile, place powdered sugar in food processor.
- Process until fluffy, not lumpy.
- Slowly add lemon juice and keep processing until smooth and satiny.
- While fritters are still warm spoon on glaze.

Apple Fritters - an easy and delicious yeast doughnut with chunks of apples, ground cinnamon, and a sweet glaze.

- Thaw *rolls on a lightly greased sheet tray covered with sprayed plastic wrap for approximately 2-3 hours (or in the refrigerator overnight), until thawed, but hardly risen.
- Cut each roll into 6 pieces. Scoop apples out of the canned pie filling, and cut into chunks. (Try not to get too much of the sauce because things will get sticky.)
- Combine the cut up rolls, apples, and cinnamon. Knead everything together by hand or with a stand mixer adding flour as needed, until it clumps together. (Will look like monkey bread.)
- Pat dough into a flat disc on a floured surface. Cut dough into 16 pieces (approximately 3oz each). Dust two large sheet trays with flour. Place 8 doughnuts on each tray, shape each doughnut into a ball and flatten slightly with hand. Cover fritters with sprayed plastic wrap and let rest/rise for one hour.
- Heat oil in a large pot to 350 degrees Fahrenheit. Gently scoop up the dough with a floured spatula (turner) and carefully flip the apple fritter over into the hot oil. (May cook several at a time, but don't overcrowd the doughnuts.) Cook roughly 3 to 4 minutes on each side, until golden brown. Remove and place on a cooling rack with paper towels underneath to catch any excess oil.
- Mix the glaze ingredients in a 13x9-inch dish. Glaze doughnuts while still slightly warm. Place a doughnut into the glaze, and turn it over. Spoon glaze over the apple fritter as needed to cover the whole surface. Place the doughnut back onto the cooling rack and allow glaze to set. Store any leftover doughnuts in an airtight container.

- In a large mixing bowl of a stand mixer dissolve the yeast in the warm water. Add the warm milk, sugar, and eggs.
- Add the dough hook attachment, and stir in the flour and salt. Scrape the bottom and sides of the bowl occasionally with a rubber spatula. Cut the butter into small pieces and incorporate into the dough. Scrape the bowl a few times. Beat the dough until it becomes smooth, about 5-7 minutes.
- Turn the dough out onto a floured work surface and knead for 5-6 minutes, making a smooth dough. This dough is going to be sticky when you turn it out.
- After kneading, shape into a round ball and place back into the greased mixing bowl. Cover loosely with plastic wrap and drape with a clean kitchen towel. Place in a warm area and let rise until doubled in size, about 1 hour.
- Turn the dough out onto a lightly floured work surface and knead the dough for a few minutes. Turn back into the greased bowl (spray with cooking spray again if needed) and let rise until doubled, about 1 hour.
- While the dough is rising, make your apple filling. Place the butter and lemon juice in a 10-12-inch cast iron pan over medium heat. Place the chopped apple pieces and the brown sugar into the pan.
- Cook the apples over medium-high heat for about 10-15 minutes, until slightly soft. Dissolve the cornstarch in cold water and pour over the apple mixture. Let bubble and thicken. Stirring occasionally with a wooden spoon so it does not burn.
- Remove from the heat once it's thickened and add the cinnamon and nutmeg. The apple mixture will thicken as it cools. Let cool completely.
- Turn the dough out onto a lightly floured work surface and roll out with a rolling pin. Making it into a rectangle shape, about 1/2-3/4-inch thick. Spread the apple filling evenly over the dough. Sprinkle generously with all-purpose flour. (about 1/2 cup or so). This will help absorb some of the moisture from the filling. Sprinkle generously with ground cinnamon.
- Roll up, starting at the long end, like you would cinnamon rolls. Cut the dough on a diagonal, then back the other way. You want to end up with pieces about the size of a quarter. Gently push the pieces back into small patties (about 3-4 inches in diameter). You'll want to sprinkle the pieces with flour as you go. This will be a sticky mess. But well worth the time, effort and mess involved.
- Place the apple fritter patties on lined half sheet pans. (you should get about 3 rows of 3 on each sheet pan) Cover loosely with plastic wrap and refrigerate for 1 hour, or overnight.
- While they are in the fridge, whisk together your icing. Cover with plastic wrap and set aside. You want it to be fairly thin.
- Heat canola oil in a large cast iron skillet to 375 degrees F. Use a digital thermometer to monitor the temperature of your oil.
- Fry for about 2-3 minutes per side. Flip carefully. Once fried, place them on a sheet pan lined with plenty of paper towels to absorb some of the excess oil.
- Let cool slightly before dipping only the tops in the icing. Let drip dry on a cooling rack, placed on a parchment lined half sheet pan. Once the icing is set, enjoy!

- For the dough: In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, add the yeast to the warm water. Add the sugar, stir and let stand 5 minutes.
- Meanwhile, in a large bowl, whisk together the flour, sugar, baking powder, mace and salt. Set aside.
- When yeast is ready, add the shortening, egg and vanilla and mix with the PADDLE attachment on low speed for 1 minute (to break up the shortening). Add about 1/3 of the flour mixture and mix until combined. Add a second third of the flour mixture and again, mix until combined. Switch to the dough hook and add the remaining flour mixture. Knead with the hook until all that flour is incorporated. If dough is sticky, start adding flour in 1 Tbsp. increments, until the dough comes together, clears the bottom of the bowl and is becoming smooth. Knead on medium for about 2 minutes more. The dough should be smooth and but still a bit moist (but not sticky).
- Place the dough in an oiled bowl, cover with plastic wrap and set-aside to rise until doubled in size (about 1 hour).
- Meanwhile, make the apple filling. Place the diced apples, sugar and lemon juice into a skillet over medium heat. Cook, stirring often, until all the liquid has evaporated and the apples are softened, about 5 minutes. Remove to a bowl to cool completely before using.

- When the fritters are almost risen, prepare the glaze. Add the icing sugar, corn syrup, salt and vanilla in a large bowl. Set aside.
- In a small saucepan, bring the water and white granulated sugar to a boil over high heat then reduce heat to medium and simmer for 1 minute. Add this mixture to the bowl with the icing sugar and whisk until all the sugar and has been incorporated and the mixture is smooth. (You don't want any lumps :) Cover with plastic wrap and set aside until needed.
- When dough is about ready to cook, heat oil in a deep fryer to 370° (alternately, use a heavy deep pot and a thermometer to monitor temperature). Fry each donut until deep golden on the underside (1 1/2 - 2 minutes), flip over and fry the other side. (*time and temperature may need to vary. Watch closely the first few to determine timing. If they seem to be browning too quickly, lower temperature slightly or likewise, if they seem to be taking too long to brown, raise the temperature slightly). Remove to a cooling rack placed over a baking sheet. If there are any loose apples in the frying oil, scoop out between batches so you don't have any apple pieces burning in the oil and causing bitter flavours.
- While the fritters are still quite warm (as soon as they are cool enough to handle), dip into prepared glaze and return to cooling rack to cool completely. *Stir the glaze mixture regularly during the process, to keep it nice and smooth.

YEAST RAISED APPLE FRITTERS
Warmly spiced cooked chopped apples get folded into a warmly spiced slack yeast dough--almost a batter--and deep fried. Afterwards, they get a generous dusting of spiced confectioner's sugar. So very good.

- Cook the apples in the sugar, butter, salt and spice until they turn a bit golden brown.
- In the meantime, reduce the cider and cider vinegar by half.
- When the apples are starting to get some color, add the reduced liquids and cook together until almost dry. If the apples are getting too much color before the liquid reduces sufficiently, simple drain them in a colander and call them done.
- Set aside.
- This dough uses the straight dough method, so just put all the ingredients in the bowl of your stand mixer fitted with the dough hook and turn it on medium-low speed.
- Once the dough has come together, turn the speed up just a bit and let the mixer knead the dough for about 5 minutes. The dough will be extremely soft--sort of on the edge of being a batter.
- Spray the top of the dough very well with pan spray and then cover and let rise in a warm place for about 2 hours. It does not need to double, and it might not because of all the yolks and butter.
- Once the dough has risen, spray your hands well with pan spray (or rub them with coconut oil or something) and press the gases out of the dough.
- Press the dough up the sides of the pan a bit and then put about 1/3 of the apple mixture in the center.
- Fold all the sides in and press down again. Pan spray as necessary to keep things from sticking.
- Press the dough down again and up the sides of the bowl, and add another third of the apples.
- Fold in and then add the last third of the apple in the same way. Press down and fold over a couple of more times.
- There will be a lot of apples, so if some poke out, don't worry. Just keep going.
- Cover and let rest for about 20 minutes.
- Place the sugar, salt and baking spice in a gallon-sized zip top bag. Shake to distribute the spices and salt. Taste and add a bit more seasoning if necessary.
- Heat the oil to 350F.
- Have a cooling rack set over several layers of paper towels ready.
- When the oil has reached 350F, scoop the batter using a 1.5 ounce disher (about 3 tablespoons). Fry no more than four at a time. Total fry time will be about 5 minutes, until the fritters are a lovely deep golden brown.
- Place the first four on the draining rack.
- When the oil is back to temperature, fry four more.
- While those four are frying, place the first four in the gallon bag and shake so the fritters are completely covered with the spiced powdered sugar.
- Continue frying and "sugaring" until all the fritters are done.
- Dig right in.
- They are lovely with a scoop of vanilla ice cream, too.

- Pour the warm milk, eggs, melted butter, sugar and salt in the bowl of a stand mixer.**
- Add in two cups of flour and yeast. Use the beater blade to mix just until combined. Then add in another 2 cups of flour (save the other 1/2 cup and add only if you need it later).
- Mix again using the beater blade just until the ingredients are barely combined. Allow the mixture to rest for 5 minutes so the flour has time to soak up the liquids.
- Scrape the dough off the beater blade and remove it.
- Attach the dough hook. Beat the dough on medium speed, adding in up to 1/2 cup more flour if needed to form a dough. Knead for 5-7 minutes or until the dough is elastic and smooth. **The dough should be tacky and will still be sticking to the sides of the bowl. That's ok! Don't be tempted to add more flour at this point. We generally add about 4 1/2 cups, but start with 4 cups.
- Spray a large bowl with cooking spray. Use a rubber spatula to remove the dough from the mixer bowl and place it in the greased large bowl.
- Cover the bowl with a towel or wax paper.
- Set the bowl in a warm place and allow the dough to rise until nearly double.
- Place the sliced apples into a medium saucepan. Add the sugar.
- Cook the apples over medium heat, stirring often, for about 10 minutes until they start to soften.
- In a small measuring cup, whisk together the apple juice and cornstarch to make a slurry.
- Pour the cornstarch slurry into the apples. Mix well. Add the cinnamon and butter. Stir until the mixture starts to thicken, then remove from heat.
- Allow the mixture to cool completely. I transfer mine to another bowl and then place them in the fridge to speed this up.
- Turn the risen dough out onto a well-floured surface.
- Pat it into a rectangle that's about 2 inches thick.
- Spread half of the now cool apple mixture in the center of the dough. Fold the top and bottom of the dough over the mixture. Turn the dough, so the top and bottom are now on the sides of the dough.
- Pat the dough out into another rectangle that's 2 inches thick.
- Spread the remaining apple filling over the center of the dough. Again, fold the top and bottom of the dough over the filling.
- While the dough rests, heat the oil in a large Dutch oven on medium until it reaches 375 degrees F.
- Pat the dough out to 1/2-inch thickness.
- Using a pizza cutter, cut the dough into a grid pattern, making 1-inch strips.
- Then make cuts 1" wide the other direction so that you end up with a bunch of squares.
- Gather the dough bits and cut a little bit more from different directions.
- Flour your hands and put a little bit more flour down on the pastry mat if needed. Then form the cut dough and apples into a log about 14" long.
- Use the cutter to slice about 14 slices. Use your hands to form each fritter into a ball that looks like it would hold together, adding a little more flour if needed.
- Allow the fritters to rest while the oil heats.
- Heat the oil in a large skillet (or use a deep fryer) to 375º Fahrenheit. Use a thermometer to test the oil temp because it is important that it stays at 375ª.
- Carefully drop each fritter into the warm oil. Do not overcrowd the pan, or the oil temperature will drop too quickly. Add 4 or 5 fritters at a time.
- Fry for about 3 minutes or until golden brown.
- Using a slotted spoon carefully turn the fritters over and cook until the other side is also golden brown, about 4 to 5 minutes.
- Remove the fritters to a baking sheet covered in paper towels and fitted with a drying rack.
- Repeat the process of frying the fritters allowing the oil to return to 375 degrees F between batches.
- Whisk together the confectioners' sugar, cream, apple juice, vanilla bean paste, and salt. The glaze should be runny enough to coat the fritters so add more juice a little at a time until it is able to be drizzled.
- After removing each batch from the oil, allow to sit for about 5 min. Dip into the glaze.

APPLE FRITTERS
This bakery-style apple fritter is made with yeast and has a luscious bite to it. If you've never deep fried anything, don't worry. Just make sure to not "drop" the fritters in the hot oil but rather "slide" the fritter into the oil but placing part of the fritter into the oil then letting go. The fritter will gently glide into the hot oil and there will be minimal splashing, lessening the chance of you getting burned!

- In the bowl of a stand mixer, make the dough by dissolving the honey (or corn syrup) in the warm water. Sprinkle the yeast over the honey water and then stir to dissolve. Let sit for 5 minutes until the top of the water starts to bubble a little bit and look thick. Mix in the egg and vanilla with a fork.
- Then add the flour, sugar, butter, cinnamon (or pumpkin pie spice blend) salt and baking soda. Fit the stand mixer with the dough hook attachment and slowly mix the ingredients together until most of the dry ingredients are incorporated into the liquid.
- Use a spatula to scrape the sides and bottom to make sure there are no loose dry ingredients. Increase the speed of the mixer to medium and knead the dough for about 3 to 5 minutes, or until the dough is smooth and supple.
- Spray a large bowl with cooking oil. Form the dough into a ball with the smooth side up and place in the greased bowl. Cover with plastic wrap and set in a warm place to rise for an hour, or until the dough is double in size.
- While the dough is rising, peel, core and chop the apples into 1/2-inch chunks. Place in a medium saute pan with the sugar, butter and apple cider vinegar. Cook over medium heat until most of the liquid has evaporated and the apple have softened, about 5 minutes. Set aside to cool to room temperature.
- When the dough has risen, invert the bowl onto a clean surface. Roll the dough out into a rough rectangle about 3/4-inch thick (don't worry about the size, you just want it relatively flat and rectangular).
- Sprinkle the cooled apples with the cinnamon (or pumpkin pie spice) and flour. Mix together. Spread apple mixture over half the dough. Fold the other half of the dough over the apples.
- Cut the dough into strips, about 1-inch thick. Stack together and then squish down into a "log" about 12 inches long.
- Cut the dough into 1-inch thick disks. Place on a rimmed baking sheet lined with wax paper or a silicon baking sheet.
- Cover with plastic wrap and let rise again for 30 minutes, or until they are puffy and almost double in size.
- Once the apple fritters are risen, make the glaze by combining the powdered sugar, salt, vanilla and 6 tablespoons of milk. Mix until a glaze form. It should be the consistency of heavy cream. If the glaze seems too thick, add 1/2 teaspoon of milk at a time until the glaze has thinned to a proper consistency.
- Place a metal wire rack on a rimmed baking sheet. Pour enough oil into a large skillet or Dutch oven to bring it up to about 1 1/2 inches. Heat the oil to about 375°F. If you don't have a candy thermometer, place a 1-inch cube of bread in the oil. It should brown in about 60 seconds. Too fast and the oil it too hot. Too long and the oil is too cool.
- Carefully slide three or four apple fritters in the hot oil. Do not drop them in the oil, as that will make it splash and potentially burn you. Place half of the apple fritter in the oil, then let go of it, sliding it into the oil. Do not be concerned if the apple fritters deflate as you remove them from the baking pan.
