YUCA FRITTERS (AREPITAS DE YUCA) RECIPE BY TASTY

Yuca Fritters (Arepitas De Yuca) Recipe by Tasty image

One of our favorite ways to enjoy yuca is when it's fried. Crispy on the outside and soft on the inside, these fritters make for a fun and easy appetizer. Just be sure to use a sharp knife when cutting and slicing the yuca. So kiss your fries goodbye (for now), and give these fritters a try!

Provided by Betsy Carter

Categories     Snacks

Time 30m

Yield 18 fritters

Number Of Ingredients 7

2 lb yuca, cut into 4 in (10 cm) pieces
2 tablespoons unsalted butter, softened
1 large egg
1 tablespoon sugar
1 teaspoon anise seeds
1 teaspoon kosher salt, plus more to taste
1 cup canola oil, for frying

Steps:

  • Using a sharp knife, stand each piece upright and carefully slice off the skin.
  • Grate the yuca on the small holes of a box grater.
  • Add the grated yuca to a large bowl, along with the softened butter, egg, sugar, anise seeds, and salt. Mix until thoroughly combined.
  • In a high-walled skillet, heat the canola oil over medium-high heat until shimmering.
  • Working in batches, scoop 2 tablespoons of the yuca mixture at a time into your hand and gently press into a ½-inch (1 ¼ cm)-thick fritter. Place on the edge of a metal spatula and carefully lower into the hot oil. Fry the fritters for about 2 minutes on each side, until golden brown. Transfer the fritters to a plate lined with paper towels to drain. Sprinkle lightly with salt.
  • Serve the fritters warm.
  • Enjoy!

FRIED YUCA WITH PERUVIAN CHEESE SAUCE

Fried Yuca with Peruvian Cheese Sauce image

Provided by Guillermo Payet

Categories     Food Processor     Cheese     Garlic     Side     Fry     Vegetarian     Yuca     Gourmet     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 4 side-dish servings

Number Of Ingredients 13

For sauce
1/2 lb Mexican queso fresco or mild feta cheese, broken into small pieces
1/2 cup half-and-half
1 1/2 tablespoons bottled ajì amarillo purée (available at kitchenmarket.com)
1 garlic clove, peeled and smashed
1/4 teaspoon black pepper
For yuca
2 lb fresh yuca (cassava) or 1 1/2 lb frozen peeled yuca (not thawed)
About 6 cups vegetable oil
1/4 teaspoon salt
Garnish: fresh lime wedges (preferably Key limes)
Special Equipment
a deep-fat thermometer

Steps:

  • Make sauce:
  • Pulse together sauce ingredients in a food processor until smooth.
  • Fry yuca:
  • If using fresh yuca, trim ends and cut crosswise into 3-inch pieces, then peel, removing waxy brown skin and pinkish layer underneath.
  • Cover yuca (fresh or frozen) with cold salted water by 1 inch in a 4-quart pot. Bring to a boil, then reduce heat and simmer until yuca is tender when pierced with a wooden skewer, 15 to 20 minutes. Transfer with a slotted spoon to several layers of paper towels to drain, then cool 5 minutes. Cut yuca lengthwise into 1/8-inch-wide wedges, discarding thin woody core. (If there are pieces that have white parts to them, return them to barely simmering water and simmer until almost translucent.)
  • Heat about 1 1/2 inches oil in a 4- to 5-quart heavy pot over moderate heat until it registers 360°F on thermometer.
  • Fry yuca in 3 batches, turning occasionally, until golden, 3 to 5 minutes per batch. Transfer with a slotted spoon to paper towels to drain. (Return oil to 360°F between batches.) Sprinkle fries with salt and serve with cheese sauce.

CRISPY YUCA FRIES

Crispy Yuca Fries image

Thanks to their superior fiber content and lower glycemic index, these crispy yuca fries are often presented as a healthier alternative to fried potatoes, but you might find the roles reversed. They really are that good and do a great job of bridging the gap between regular fried potatoes and sweet potato fries. Serve with ketchup or any kind of aioli.

Provided by Chef John

Categories     Side Dish     Vegetables

Time 25m

Yield 4

Number Of Ingredients 2

1 yuca (cassava) root
olive oil for frying

Steps:

  • Peel most of the yuca, trimming off the tough end. Cut yuca in thirds. Stand each section on its end and carefully cut lengthwise into quarters.
  • Place yuca in a saucepan of cold water. Bring to a boil over high heat; reduce heat to medium and simmer until just barely tender, 5 to 6 minutes. Drain yuca on a paper towel-lined plate. Let cool to room temperature.
  • Heat olive oil in a skillet over medium-high heat. Add yuca and fry until golden brown and crispy, 2 to 3 minutes per side. Transfer to a paper towel-lined plate and let rest for a few minutes before serving.

PASTELES DE YUCA AS MADE BY IVáN EMILIO RECIPE BY TASTY

Pasteles De Yuca As Made By Iván Emilio Recipe by Tasty image

Here's what you need: olive oil, boneless pork shoulder, spanish olive, sofrito, annatto seasoning, salt, beef broth cube, water, yucca, beef broth, banana leaves, parchment paper

Provided by Matthew Johnson

Categories     Sides

Yield 24 servings

Number Of Ingredients 12

1 cup olive oil, divided, plus 2 ounces (60 ml)
2 lb boneless pork shoulder, cubed
1 cup spanish olive, halved crosswise
½ cup sofrito
4 tablespoons annatto seasoning, divided
2 teaspoons salt, plus more to taste
1 cube beef broth cube
1 ½ cups water
4 lb yucca, peeled
1 cup beef broth
12 oz banana leaves
parchment paper

Steps:

  • Heat ¼ cup (60 ml) of olive oil in a medium pot over medium-high heat. Add the pork, olives, sofrito, 1 tablespoon of annatto seasoning, salt, the beef broth cube, and water. Bring to a boil, then reduce the heat to medium-low, cover, and simmer for 1 hour, or until the pork is tender. Remove from the heat and let cool.
  • Grate the yuca on the small holes of a box grater. Add to a large bowl filled with water as you are grating so the yuca doesn't turn brown.
  • Drain and rinse the yuca, then wrap in a towel and squeeze to extract excess liquid until fully dry.
  • Add the dry grated yuca to a large bowl with the remaining cup of olive oil, the beef broth, salt to taste, and the remaining 3-4 tablespoons of annatto seasoning. Mix well with your hands to combine.
  • Cut the banana leaves into 24 10 x 12-inch (25x30 cm) rectangles. Cut parchment paper into rectangles of the same size.
  • Turn a burner on the stove to high heat. One at a time, pass the banana leaves evenly over the flame for 1 minute or until the banana leaves turn brighter green and become pliable.
  • To assemble the pasteles, stack a banana leaf over a piece of parchment on a clean work surface. Spread a bit of the pork cooking liquid over the leaf so that the pastel won't stick. Add about ½ cup (105 G) of the yuca mixture and spread into a square shape. Top with about a tablespoon of meat. To seal, fold the banana leaf and parchment paper in half from bottom to top, then fold the top back over the center and tuck in the sides. Tie with butcher's twine to secure. Repeat with the remaining ingredients.
  • Bring a large pot of water to boil and season with 2 teaspoons of salt. Add the pasteles, cover, and cook for 30-40 minutes, or until the yuca mixture is firm. Remove the pasteles from the water.
  • Enjoy!
