  • In a small mixing bowl, stir all of the ingredients together. Serve right away or cover and refrigerate for about 2 weeks.

Mom's Zesty Carrots with Horseradish image

This was one of mom's perennial holiday dishes for Thanksgiving and Christmas.

1 ¼ pounds carrots, cut into matchsticks
½ cup mayonnaise
2 tablespoons grated onion
2 tablespoons freshly ground horseradish
½ teaspoon salt (scant)
¼ teaspoon ground black pepper (scant)
¼ cup dry seasoned bread crumbs
2 tablespoons melted butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place carrots in a pot and add water to cover. Bring to a boil. Reduce heat to a simmer and cook until tender, 6 to 8 minutes. Drain carrots, reserving 1/4 cup of the cooking liquid. Transfer carrots to a shallow baking dish.
  • Mix reserved cooking water, mayonnaise, onion, horseradish, salt, and pepper together in a small bowl until combined; pour over carrots.
  • Bake in the preheated oven for 15 minutes.
  • Meanwhile, toss bread crumbs in melted butter. Sprinkle over carrots and bake until crumb topping is crisp, an additional 3 to 5 minutes.

4 slices whole wheat bread, crumbled
1/4 cup fat-free milk
1/2 cup finely chopped celery
1/4 cup finely chopped onion
1/4 cup prepared horseradish
2 tablespoons Dijon mustard
2 tablespoons chili sauce
1 large egg, lightly beaten
1-1/2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds lean ground beef (90% lean)
1/2 cup ketchup

Steps:

  • Preheat oven to 350°. Soak bread in milk for 5 minutes. Drain and discard milk. Stir in next 9 ingredients. Crumble beef over mixture and mix lightly but thoroughly. , Shape into a loaf in a15x10x1-in. baking pan coated with cooking spray. Spread top with ketchup. Bake at 350° until a thermometer inserted in the center reads 160°, 45-55 minutes. Let stand 10 minutes before cutting.Freeze option: Omitting ketchup, bake as directed. Securely wrap cooled meat loaf in foil, then freeze. To use, partially thaw in refrigerator overnight. Unwrap and spread top with ketchup.
