- Mash the bananas and mix well with the salt, sugar, and ufa.
- Heat oil in deep pan until it spatters when a drop of water is dropped it.
- Fry spoonfuls of this mixture in the very hot oil.
- Turn to cook on all sides until light golden colored.
- Remove with slotted spoon to paper towels to absorb oil.
- Serve warm with butter and or roll in sugar.

I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

- In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
- Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

- Preheat oven to 400 degrees F (200 degrees C). Arrange oven racks so you have one low and one high in the oven.
- Cut a shallow slit along the side of the eggplant and place into a baking dish.
- Roast in preheated oven on the lower rack until the eggplant is completely shrunken and soft, about 40 minutes. Move dish to higher rack and continue baking until the skin is charred, about 5 minutes more. Let eggplant cool until cool enough to handle.
- Peel and discard skin from eggplant. Put eggplant into a bowl; add tahini, garlic, lemon juice, red pepper flakes, and salt. Stir until ingredients are evenly mixed. Drizzle olive oil over the baba ghanoush and garnish with parsley.

- In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
- Heat the oil in a large skillet to 365 degrees F (180 degrees C).
- Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

Steps:
- Heat 3 inches of oil in a heavy saucepan or deep fryer to 375 degrees.
- Mix the eggs, milk, brown sugar, flour, and baking soda together in a medium-sized bowl.
- Add the banana slices a few at a time, coating them well with the batter.
- With a long slotted spoon remove the banana slices a few at a time and place them into the oil.
- Fry the bananas for 2 to 3 minutes, until lightly browned, turning them once. Drain them on paper towels and transfer them to a serving platter.
- Repeat the process until all of the bananas have been fried.
- Sprinkle them with the confectioners' sugar and serve warm.
