MEXICAN RICE III
This is an excellent authentic Mexican rice recipe (not to be confused with Spanish rice) that I make as a side dish with all of my Mexican dishes. The key is cooking the rice properly and using good quality chicken broth or stock.

Steps:
- In a medium sauce pan, cook rice in oil over medium heat for about 3 minutes. Pour in chicken broth, and bring to a boil. Stir in onion, green pepper, jalapeno, and diced tomato. Season with bouillon cube, salt and pepper, cumin, cilantro, and garlic. Bring to a boil, cover, and reduce heat to low. Cook for 20 minutes.

SPANISH RICE TURKEY CASSEROLE

- In a large skillet, saute rice and vermicelli in butter until golden brown. Gradually stir in the water, tomatoes and contents of rice seasoning packets. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender. , Meanwhile, in a large bowl, combine the turkey, corn, sour cream and 1/2 cup cheese. Stir in rice mixture. , Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheese (dish will be full). Bake, uncovered, at 375° for 20-25 minutes or until heated through.

MEXICAN GROUND TURKEY BOWL
This Mexican Ground Turkey Bowl recipe with rice, black beans and tomatoes is a healthier twist on restaurant-style Mexican rice! Leftover cooked rice is mixed with sauteed veggies, lean ground turkey, spices, lime and cilantro! YUM!

- Heat olive oil in large skillet over medium heat. Add onion, garlic, bell pepper and turkey to the skillet. Cook, stirring often and breaking down the turkey in small bits with the spoon, until turkey is no longer pink (it will finish cooking after).
- Stir in rice, black beans, tomato sauce, salsa, chili powder and cumin. Reduce heat to low and cook for about 4-5 minutes, stirring often, to let the flavor develop. If it starts to dry out, add a bit more tomato sauce or salsa, just enough to moisten.
- Turn off the heat, stir in lime juice and cilantro. Taste and adjust salt if needed.
- Serve immediately with more cilantro and some lime wedges; or pack in containers to eat later.

I found this years ago in a magazine and have been making it since. Its very easy, and healthy. Serve on tortillas with sour cream and shredded cheese, or eat right out of a bowl.

- drain and rinse black beans, and drain mexi corn.
- Mix turkey, beans and corn into rice.

CHEESY MEXICAN RICE
What's better? Cheese, Chiles, Rice and Sour Cream? Feel free to add other ingredients. I don't think you can mess this up. A great way to use left over rice. Prep time includes 20 min. to cook raw rice. Great as a side for a Mexican Meal. Also good with more cheese.

- Add onion, red bell pepper, green bell pepper, garlic, salt and pepper and sauté until vegetables are tender. Add salsa and remaining spices, cover, and simmer over low heat for 10 minutes.
- Add zucchini, then cover and cook for 10 more minutes over low heat or until the zucchini is tender.
- Remove lid and sprinkle cheese on top and serve.

- Stir in the rice, beans, beef broth, tomato sauce, tomatoes, corn, chili powder, salt, cumin, and ground pepper. Let cook over medium heat for 8-10 minutes to let the flavors really come together.
- Top with shredded cheese and let cook for 2-3 more minutes or until cheese is melted.
- Garnish with your favorite toppings - tomatoes, shredded lettuce, salsa, sour cream, etc.
