10 Minute Peanut Butter Fudge image

This 10 minute peanut butter fudge uses crushed saltines for the ultimate salty sweet flavor combo. This stuff is addicting!

2 cups sugar
1/2 cup milk
3 tablespoons butter
30 Saltine crackers, finely crushed in a food processor or blender (see notes)
1 teaspoon vanilla
1 1/4 cup peanut butter
1 1/2 cups chocolate chips
coarse sea salt

Steps:

  • Crush the crackers into fine crumbs, depending on how much texture you want in your fudge. Place in a large mixing bowl with the peanut butter.
  • Combine the sugar, milk, and butter in a saucepan over medium low heat. Once the mixture starts boiling, turn on a timer for 1 minute. The mixture will look a little frothy. Remove from the heat after 1 minute and pour immediately over the crackers and peanut butter. Add the vanilla and stir to combine until an even, soft dough forms.
  • Press the dough into a 9-inch glass baking dish (or other dish) lined with parchment paper if desired. Allow to cool for at least 1 hour or until firm enough to cut into squares - it sets up pretty quickly in the refrigerator.
  • Melt the chocolate chips and drizzle over the fudge. Sprinkle with sea salt.

1/2 cup unsalted butter
1/4 teaspoon kosher salt
2 cups packed brown sugar
1/2 cup whole milk
1 1/2 cups peanut butter
1 tablespoon pure vanilla extract
2 cups powdered sugar

Steps:

  • Line an 8x8 baking sheet with foil. Set aside.
  • In a medium saucepan over medium heat melt butter. Add brown sugar, milk and salt. Stir until mixture starts to bubble. Allow mixture to boil for 2 minutes.
  • Remove from heat stir in vanilla and peanut butter. Add powdered sugar and beat with an electric mixer until smooth.
  • Pour into a prepared 8x8 baking dish. Cover with foil and refrigerate for 4 hours. Cut into squares.
  • Serve and enjoy!

Easy Peanut Butter Fudge image

That's right, easy peanut butter fudge is ready from start to finish in 10 minutes, with just 5 pantry staples, a spoon and a saucepan. You'll get the best, creamiest fudge you ever sank your teeth into, guaranteed!

1 cup unsalted butter (2 sticks)
1 cup creamy peanut butter, I use Jiff. Note: I do not recommend using 'natural' peanut butter.
1 tsp vanilla extract
1/4 tsp salt
1 lb confectioner's sugar, about 3 1/2 cups

Steps:

  • Line an 8x8 baking pan with parchment paper or foil. Note: you can use a 9x9 pan, or even a loaf pan.
  • Using a heavy bottomed saucepan melt the butter and peanut butter together over medium heat. Stir constantly to get the mixture well combined.
  • Turn the heat down to low and stir in the vanilla and salt.
  • Fold in the sugar with a silicone spatula or spoon. Make sure to get all the sugar incorporated and the fudge nice and smooth. The low heat will help this process.
  • When the fudge is smooth transfer to your prepared pan and spread out evenly with an offset spatula.
  • Let chill for at least 2 hours before slicing into small squares. If you have lined your pan with parchment paper or foil you can gently lift it out for neater slicing.
  • Fudge can be stored at room temperature, or in the refrigerator. It also freezes well.
