This is the most amazing soft and chewy caramel popcorn recipe you will ever make. This is one of my favorite tried-and-true dessert recipes that you can enjoy any time of the year. Made with only 6 inexpensive pantry ingredients, this will be everything you hope for in a caramel popcorn recipe.

3 bags regular size microwave popcorn, or 1 cup kernels popped
1/2 cup butter
1 cup brown sugar
1 cup corn syrup
1 can sweetened condensed milk
1/2 tsp. vanilla

Steps:

  • Place the popped popcorn in a large mixing bowl, and remove any kernels. Set aside.
  • In a medium saucepan combine butter, brown sugar, and corn syrup. Heat the ingredients over medium-low heat until the butter is melted and the ingredients are combined.
  • Pour sweetened condensed milk into saucepan and bring to a boil. Reduce to a simmer and continually stir for 3-4 minutes, making sure caramel doesn't burn.
  • Remove from heat and stir in vanilla.
  • Immediately pour caramel over popcorn and stir to coat all the popcorn well.
  • Allow caramel popcorn to cool slightly before serving. Enjoy.

The best 10 minute soft & chewy caramel popcorn. This caramel popcorn is so quick, you can whip up a batch before your husband is back from the RedBox with the movie!

1/2 cup (1 stick) butter
3/4 cup brown sugar, packed
3/4 cup corn syrup
1 tsp vanilla (or 2 tsp vanilla bean paste)
1 cup popcorn kernels, popped

Steps:

  • Heat butter, brown sugar, and corn syrup in a small saucepan over medium high heat.
  • Bring to a rolling boil and boil for 2-3 minutes. Stir while boiling but take care not to scrape the sides of the pan.
  • Remove from heat and stir in vanilla.
  • Pour over popped corn and stir until caramel is cooled.
  • Enjoy!

4 bag(s) microwave popcorn, sift out the unpopped kernels
1/2 c butter
4 1/2 c sugar
2 1/2 c brown sugar12
12 oz evaporated milk
2 c heavy whipping cream
1 tsp salt
1 1/2 c light corn syrup

Steps:

  • 1. Bring to a boil butter, sugar, milk and cream. Then stir in salt and corn syrup. Boil to a softball stage. Stirring constantly.
  • 2. Pour over popped corn, mix well. Lay out to dry on a sprayed pan.
