Our Favorite 15-Minute Cookies (One Recipe, Multiple Possibilities) image

These quick, easy cookies use no added butter or oil and taste absolutely delicious. You can add chocolate chips, raisins, coconut flakes or simply eat them plain. They are a staple in our house and fun to get creative with.

Number Of Ingredients 16

1 small extremely ripe banana (about 7 & 1/2″ length)
1 egg
1 tablespoon pure maple syrup
1/2 teaspoon pure vanilla extract
1 teaspoon cinnamon
3/4 cup rolled oats
1 tablespoon oat flour
1/4 teaspoon baking powder
1/4 cup raisins
1/4 cup dried apricots, chopped (unsweetened)
1/4 cup chocolate chips
3 tablespoons chopped nuts (pepitas, walnuts)
2 tablespoons unsweetened coconut flakes
1 tablespoon cacao powder
1 - 2 tablespoons cacao nibs
1 pinch nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, mash the banana. Add core ingredients and mix together. Add whatever "fun additions" you choose.
  • You can keep cookies in the fridge for up to 7 days. Eat them chilled or pop them in the microwave for 15 seconds and voilà!

1 3/4 cups granulated sugar
1/2 cup butter
1/2 cup milk
1/3 cup unsweetened cocoa powder
3/4 cup creamy peanut butter
1 teaspoon vanilla extract
2 1/2 cups Quick 1 minute oats

Steps:

  • Line two baking sheets with parchment or wax paper. Set aside.
  • Combine the sugar, butter, milk and cocoa powder in a saucepan over medium-heat. Bring to a boil (not simmer). Once it reaches a boil, cook for an additional 1 1/2 minutes and then immediately remove from heat.
  • Stir in the peanut butter and vanilla. Add in the oats and stir until well coated.
  • Drop batter by the spoonful onto the lined pan. Let cool until set. Store in an airtight container at room temperature.

I got this recipe from a father of one of my Girl Scouts in Mississippi in 1973. It's a favorite at my house and the Girl Scout is now the mother of my four grandchildren. Enjoy!

½ cup butter
2 cups white sugar
½ cup milk
4 tablespoons unsweetened cocoa powder
½ cup peanut butter
½ teaspoon vanilla extract
3 cups quick cooking oats

Steps:

  • Bring margarine, sugar, milk and cocoa to boil. Let boil for exactly 1 minute and 30 seconds.
  • Remove from heat, stir in vanilla and peanut butter. Then stir in oats.
  • Quickly drop by large tablespoon onto wax paper laid on top of newpaper. Let cool, peel from paper and turn over to finish drying.
  • Store in closed container.

Steps:

  • Preheat oven to 350F.
  • Mix butter with sugars and stir until thickened.
  • Add in egg and vanilla to sugar mixture.
  • Mix baking soda, salt and flour together.
  • Add dry ingredients to wet and stir until combined. Fold in chocolate chips.
  • Bake for 8mins (on the dot trust me!) let cool for 3-5mins and eat!

Steps:

  • Line baking sheets with waxed paper. Mix the oats, coconut, and peanut butter in a bowl until thoroughly combined.
  • Place sugar, cocoa powder, butter, and milk in a large saucepan, and bring to a boil over medium heat. Stir until the mixture is smooth and the sugar has dissolved, about 1 minute; remove from heat. Mix the oat mixture into the liquid mixture; stir in vanilla extract.
  • Scoop up about 1 tablespoonful of the dough, roll it into a ball, and flatten. Place on waxed paper, and allow to cool.

1 cup peanut butter
1 cup sugar
1 egg

Steps:

  • Preheat oven to 350°F.
  • Put peanut butter into a medium sized bowl. Stir in egg until it is a consistent texture.
  • Butter or place waxpaper on a cookie sheet. Then begin to take approximately a tablespoon of the cookie dough and roll it into a ball. Place on the cookie sheet with a little less then an inch of space.
  • Take a fork and push down on the top of the cookies until you have reached the desired thickness of your cookie. (Note: when baked the cookies do not spread a significant amount. Maybe a centimeter or two. Keep that in mind when sizing your cookie.).
  • Optional: Sprinkle some sugar onto the top of the cookies before baking. This is especially helpful if you tend to have a sweet tooth like me!
  • Bake for 10-12 minutes. Depending on your oven you may need to cook it for a longer/shorter period of time. (Tip: If you're not sure if your cookie is done try sticking a fork into the center and pull it out. If there is batter on your fork, put your cookies back in the oven for another minute or two. If your fork comes out clean, your cookies are done!).
  • Let cool for 2 minutes, and enjoy!

  • Preheat the oven to fan 190C. Line two baking trays with grease proof paper.
  • Chop the chocolate into small pieces. Melt the butter in a small saucepan.
  • Put both sugars into a large mixing bowl, add the melted butter and beat.
  • Add the egg and vanilla and beat.
  • Sift in the flour and salt and mix in. Add the chocolate. Spoon the mixture into 12 heaps. Bake for 8- 10 mins until golden brown. Move straight away to a cooling rack. Enjoy warm or cold with a glass of milk.
