This is a delicious, very easy, quick but moderately expensive recipe. Everyone I've ever fixed it for absolutely loves it!

3 cups vegetable oil
¼ cup all-purpose flour
1 teaspoon salt
1 teaspoon dried oregano
½ teaspoon ground black pepper
12 squid, cleaned and sliced into rings
1 lemon - cut into wedges, for garnish

Steps:

  • Preheat oil in a heavy, deep frying pan or pot. Oil should be heated to 365 degrees F (180 degrees C).
  • In a medium size mixing bowl mix together flour, salt, oregano and black pepper. Dredge squid through flour and spice mixture.
  • Place squid in oil for 2 to 3 minutes or until light brown. Beware of overcooking, squid will be tough if overcooked. Dry squid on paper towels. Serve with wedges of lemon.

Living by Boston's waterfront, we always had access to the freshest seafood. We were within walking distance of the docks where fishing boats loaded their catch into a large processing warehouse. Fish were hand cleaned, fileted and sorted. Most were destined for distribution to restaurants and markets. Limited days and times were opened to the public. Locally at the corner of Salem and Cross Streets was Giuffre's Fish Market. It was a well-known Boston treasure featuring a huge selection of the freshest seafood anywhere. Squid was almost a throw away species, often used for bait. Being Italian, we knew how special they were. Competition kept prices low but once the general population was exposed to fried calamari and other squid specialties, prices skyrocketed. The availability of squid already cleaned also increased demand and costs. Baby octopus was available in the North End but seldom seen in traditional grocery store chains outside. Today's pricing also suggests demand is still limited. My local gourmet grocery store sold the pound of baby octopus in the picture below for almost half the price of the squid they displayed. Squid and octopus's salads were almost always in our refrigerator, available for lunch, snacks, or even as a main course with hunks of artesian bread. Please make this dish a day ahead. Sitting overnight, garlic mellows and flavors merge. Don't get me wrong, it's terrific when first made but even better with time. You can also add a little more lemon and can adjust salt. Serve with a spoon. Every mouthful is best with an ample puddle of dressing. Squid submerged in boiling water cooks quickly. Smaller 3" to 5" squid tubes cut into rings takes about a minute, larger and thicker, perhaps a minute and a half. If steaming, about 3 minutes for smaller tubes. Squid is cooked when rings just begin to firm. Anything more, they will become tough and rubbery. Although octopus is thicker, they seem to cook even quicker before becoming tougher. Some use a dipping technique, plunging raw octopus in and out of a pan of boiling water to ensure they don't overcook.

1 lb cleaned squid, preferably tubes and tentacles or 1 lb cleaned baby octopus
1/2 cup olive oil
1/4 cup lemon juice
1/2 cup coarsely chopped parsley
2 larger garlic cloves, finely chopped
1/4 teaspoon salt

Steps:

  • For Squid, Rinse the squid in a strainer with cold water. Cut the tubes into 3/8 inch rings. Pending their size, cut the tentacles in halves or thirds.
  • Cook squid in a pot of boiling water untl they begin to firm, about a minute for small, minute and a half for larger. Empty cooked squid into a strainer and cool with cold tap water. When drained, pat dry with paper towel and place squid in a bowl.
  • For Baby Octopus, rinse the Octopus in cold water. Cut the octopus in uniform bite size pieces. Place them in a strainer. Submerge in boiling water for about 45 seconds. Check for doneness, just firm. If needed, dip them very briefly in the boiling water again being careful not to overcook. Cool octopus in cold tap water.
  • Combine all remaining ingredients in a small bowl. Pour dressing into the squid or octopus and mix well. Cover and store in the refrigerator overnight. Check for seasoning then serve in bowls with a spoon and crusty bread.

CALAMARI, SCUNGILI AND SHRIMP SALAD



Calamari, Scungili and Shrimp Salad image

1 1/2 pounds calamari (squid), cleaned, tentacles and flaps removed, bodysacs cut crosswise into 1/4-inch-wide rings
1 pound shrimp, shelled and deveined
3 cans (6 1/2 ounces each) scungili (conch), drained, rinsed, and patted dry
1 1/2 cups minced celery
4 large cloves garlic, minced fine, or to taste
1 cup pitted and halved black olives
1 cup green olives with pimento, halved
Salt and pepper
1/3 to 1/2 cup fresh lemon juice
1/2 cup olive oil
1/3 cup minced fresh parsley leaves

Steps:

  • In a saucepan of boiling salted water, cook the calamari and shrimp for 3 minutes, or just until opaque and tender. Drain and pat dry.
  • In a large bowl, combine the calamari, shrimp, scungili, celery, garlic, olives, and salt and pepper. Chill the mixture, covered, until ready to serve.
  • In a small bowl, whisk the lemon juice, oil, salt, and pepper together. Add the dressing to the seafood mixture along with the parsley and toss to combine.

Scallops, Clams, Octopus, Squid and Prawns with Broccoli Romano image

1 3/4 pounds/800g rock octopus
1 bay leaf
1/2 lemon
Olive oil
1 clove garlic
Salt and pepper
1 sprig fresh rosemary
16 clams
1 11/3 pounds/600 g small squid
8 3/4 pounds/4 kg in-shell scallops
1 pound/400 g cuttlefish
4 prawns
2 1/4 pounds/1 kg broccoli romano
1/2 cup/10 cl chicken stock
1/2 cup/10 cl lobster stock or seafood stock
1 1/2 tablespoons/20 g unsalted butter
4 teaspoons/2 cl white wine
Espelette powder or Spanish paprika
Lemon juice

Steps:

  • Clean the octopus, and then place into salted boiling water. Add the bay leaf and lemon. Cook 35 to 45 minutes on a soft boil. Delicately drain. Cut the octopus into pieces. Peel the garlic clove, cut in two. Sprinkle the octopus with salt and pepper. Place into a dish with the garlic and the rosemary. Cover with olive oil. Leave to marinate at least 24 hours. It will reach its peak flavor at 48 hours.
  • Place the clams to soak in salted water in the dark for 3 to 4 hours to allow them to expel all the sand.
  • Clean the squid in running water. Separate the head from the body. Open the scallops, remove the beards. Remove each scallop from its shell. Rinse. Dry on a towel.
  • Cut the cuttlefish into 2-inch-sided triangles. Gently score one side of the cuttlefish. Shell the prawns, leaving the head and the tail, but removing the vein.
  • Wash the broccoli. Remove the heads and peel the stems. Cook the heads in salted boiling salted water, immediately chill in iced water. Drain. Then cook the stems in the same water, and immediately chill in iced water. Set aside the 12 best-looking heads. Using an immersion blender, puree the heads and stems. Add the chicken stock and a drizzle of olive oil, until the puree becomes smooth and silky. Store in a cool place.
  • Heat a drizzle of olive oil in a pan. Sear the cuttlefish triangles scored-side down for 2 to 3 minutes. Once they have colored slightly, add a knob of butter, and baste. Remove to a cooking crack and keep warm.
  • Pour the lobster stock in a pan. Heat until it reaches a soft boil. Poach the prawns for 2 to 3 minutes on each side. Place on a cooling rack in a warm place.
  • Place the clams in a pan. Deglaze with the white wine. Cover the pan. Remove from the heat, and gradually remove them as they open, leaving in the shell. In the same pan, poach the squid for 1 minute. Decant the poaching liquid and reserve.
  • In a large pan, heat a drizzle of olive oil. Quickly sear the scallops. Add some butter. Finish the cooking process by basting with foaming butter for 4 minutes.
  • To serve, drain the octopus and place in the saute pan that the clams were cooked in. Add the clams and the broccoli heads. Bind with a drizzle of olive oil. Sprinkle some Espelette powder.
  • Spread the brocoletti puree on the bottom of the dishes. Then plate the scallops, octopus, squid, cuttlefish, clams and prawns. Lightly reduce the cooking juices if needed, and top the seafood with it. Add 3 drops of lemon juice and a drizzle of olive oil.

2 small green bananas, peeled and cut into small chunks
For conch buljol
2 ounces frozen or fresh, cleaned conch, finely diced (about 1/2 cup) (see Tips, below)
2 tablespoons diced red onion
1/2 celery stalk, diced
1/4 cup diced red bell pepper
1/4 cup diced yellow bell pepper
1/4 cup diced green bell pepper
1 pimiento pepper, seeded and diced
1/4 Scotch bonnet chile, seeded and minced (wear rubber gloves)
1/2 scallion (green and white parts), finely chopped
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
For squid
12 each squid tubes and tentacles
1/4 cup olive oil
2 dried red cayenne chiles, minced
1/2 clove garlic, mashed to paste with mortar and pestle
To marinate green figs
1/2 small red onion, diced (about 6 tablespoons)
3 scallions (white and green parts), chopped
2 cloves garlic, mashed to paste with mortar and pestle
1/4 cup extra virgin olive oil
1/4 cup fresh lime juice
1/4 teaspoon salt
Pinch freshly ground black pepper
For tomato coulis
2 1/2 medium beefsteak tomatoes
1 clove garlic, minced
1/4 Scotch bonnet chile, seeded and minced (wear rubber gloves)
1/2 teaspoon chopped fresh shado beni (See Tips, below)
1 1/2 teaspoons diced onion
1 1/2 teaspoons olive oil
1/8 teaspoon salt
Pinch freshly ground black pepper
For assembly
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook green figs
  • In medium saucepan, combine banana chunks and enough cold water to cover by 1/2 inch. Set over high heat, bring to boil, lower heat, and simmer 30 minutes.
  • Make conch buljol
  • Place conch in colander and scald by pouring boiling water over. Drain and place in medium, nonreactive bowl. Immediately stir in remaining ingredients and refrigerate until ready to use. Allow to marinate at least 1 hour before serving.
  • Make squid
  • Cut squid tubes in half lengthwise to form 2 rectangles. Score inside of each lengthwise with sharp knife, making parallel shallow cuts close together. In medium, nonreactive bowl, combine squid, olive oil, chiles, and garlic and refrigerate until ready to use, at least 1 hour.
  • Marinate green figs
  • Drain bananas and mash. In medium, nonreactive bowl, stir together bananas with remaining ingredients. Mix well, then refrigerate until ready to use, at least 1 hour.
  • Make tomato coulis
  • Preheat grill to high. Grill tomatoes until blistered and slightly charred, about 6 minutes. (Alternatively, broil approximately 15 minutes.) Cool, then remove blackened skin, cut tomatoes into quarters, and remove seeds.
  • In blender or food processor, pur&eauce;e tomatoes, garlic, and chile. Stir in shado beni, onion, olive oil, salt, and pepper. Refrigerate until ready to use.
  • Assemble dish
  • Preheat grill to high. Remove squid from marinade and sprinkle with salt and pepper. Grill just until opaque, about 1 minute per side. (Alternatively, broil several minutes per side.)
  • Divide mashed bananas among 8 plates; top each mound with 1/8 of conch. (Alternatively, use 4-inch ring mold to shape bananas and conch into neat circle on each plate. Remove mold.) Spoon 1/8 of tomato coulis around each mound, and top each with 4 to 5 pieces squid.
