SHAKSHUKA (MIDDLE EASTERN BREAKFAST DISH)



Shakshuka (Middle Eastern Breakfast Dish) image

This is a great, quick, flavorful dish I learned while living in southern Israel. You can add spices to taste, but for the first go, try it this way. Makes 2 hearty servings. Serve with bread to sop up the sauce.

2 teaspoons vegetable oil
2 cloves garlic, minced
1 onion, chopped
1 zucchini, chopped
1 (10 ounce) can crushed tomatoes
4 dashes hot pepper sauce (such as Tabasco®)
4 eggs
1 pinch salt

Steps:

  • Heat the vegetable oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in zucchini; cook and stir for 5 minutes. Mix in the crushed tomatoes and hot pepper sauce. Cover and simmer for 10 minutes.
  • Make 4 wells in the tomato mixture, and crack the eggs into each well. Do not stir. Cover and cook until eggs are desired consistency, about 3 minutes for soft yolks. Carefully remove the eggs from the skillet and serve with the tomato sauce.

These saucy eggs are my twist on eggs in purgatory, and they are perfect for brunch or dinner. Start with hardboiled eggs and give them a quick sautee in extra virgin olive oil until the whites are crispy and golden brown, then dunk the eggs in the delicious spicy tomato sauce! If you would rather make a more classic eggs in purgatory, see the notes for the option to poach your eggs directly in the sauce.

Extra virgin olive oil
6 hardboiled eggs, (peeled)
1 medium onion, (yellow or red, chopped)
5 garlic cloves, (minced)
1 hot pepper such as jalapeño, (chopped)
Kosher salt
1 5 ounce can diced fire-roasted tomatoes
¼ cup tomato paste
2 teaspoons dried oregano
1 to 2 teaspoon dried red pepper flakes or Aleppo pepper, (more or less to your liking (if you like the sauce hot, you can add more))
½ cup basil or parsley, (chopped)

Steps:

  • In a 10-inch skillet or pan, heat about 2 tablespoons extra virgin olive oil over medium-high heat until shimmering. Carefully add the already boiled eggs and cook on all sides until the egg whites begin to crisp up and turn golden brown (use a splatter guard over your pan to keep the oil from splashing). Remove the eggs from the pan and set them on a plate or bowl for now.
  • In the same pan, add the onions, garlic, and jalapeno. Cook for 3 to 5 minutes, tossing regularly, until fragrant. Season with a big dash of kosher salt.
  • Add the diced tomatoes, tomato paste, and about ¼ cup of water. Season with another big dash of kosher salt. Add the oregano and red pepper flakes, if using. Bring the mixture to a boil, then lower the heat to medium-low and allow the tomatoes to simmer for about 10 minutes or so.
  • Add the eggs to the simmering tomato sauce and cook for another 3 minutes or until the eggs are warm.
  • Remove from the heat and finish with the parsley and a good drizzle of extra virgin olive oil. Serve with crusty bread or warmed flatbread.

Bring some bold flavours into this brunch for two with harissa, sumac and pistachios - swap for chipolatas or chorizo if you prefer

drizzle of olive or rapeseed oil
1 small red onion , chopped
4 merguez sausages
15 cherry tomatoes , halved
pinch of sugar (any will do)
2 tsp harissa paste (preferably rose harissa, as it's fragrant and not too hot)
2 eggs
2 wholemeal pitta breads
pinch of sumac or paprika (optional)
2 tbsp Greek yogurt
few parsley sprigs, chopped
1 tbsp shelled pistachio , roughly chopped

Steps:

  • Heat a drizzle of oil in a heavy-bottomed, small frying pan - a cast-iron one is perfect. Add the onion and cook for a few mins until soft, then push them to one side of the pan. Add the sausages and fry for 5-10 mins, rolling them around in the pan until golden brown. Add the tomatoes, sugar and harissa, season well and add a splash of water. Cook for 5-10 mins, stirring now and then, until the tomatoes have cooked down to a thick, chunky sauce.
  • Push the sausages aside in the pan so that you can create 2 large holes in the sauce using a spoon. Crack the eggs into the holes and cook for 4-5 mins until the whites are just set and the yolk is still runny. Meanwhile, toast the pitta breads.
  • Sprinkle each egg with a little sumac, dollop on some yogurt, then sprinkle over the parsley and pistachios. Cut each pitta bread in half and serve on the side.
