AUNT DEE DEE'S APPLE COFFEE CAKE

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 pan.
• Mix pie filling and cinnamon, set aside.
• Beat flour, white sugar, milk, 1/2 cup softened butter, baking powder, salt and eggs in mixing bowl on low speed for 30 seconds. Beat on medium speed for 2 minutes.
• Pour half of the batter into prepared pan. Spoon half of the pie filling over the batter. Spread remaining cake batter over pie filling, and top with the remaining half of the pie filling.
• Mix brown sugar and nuts together and sprinkle over top of cake. Drizzle with 2 tablespoons melted butter.
• Bake at 350 degrees F (175 degrees C) for 45 to 55 minutes. Allow cake to cool 20 minutes.
• Combine confectioners sugar, 1 tablespoon butter, 3/4 teaspoon vanilla, 2 to 3 teaspoons hot water. Beat until smooth. Drizzle over cake.

AUNT ANNE'S COFFEE CAKE

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Make the streusel topping: In a medium bowl, combine 1/4 cup flour, 2/3 cup sugar and 1 teaspoon cinnamon. Cut in 1/4 cup butter until mixture resembles coarse crumbs. Set aside.
• In a large bowl, combine 2 cups flour, 3/4 cup sugar, baking powder and salt. Cut in 1/2 cup butter until mixture resembles coarse crumbs. Crack an egg into a measuring cup and then fill add milk to make 1 cup. Stir in vanilla. Pour into crumb mixture and mix just until moistened. Spread into prepared pan. Sprinkle top with streusel.
• Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

ADDIE'S COFFEE CAKE RECIPE

Steps:

• (All bread ingredients must be at room temperature!) Measure all ingredients into bread pan. Select Dough/Pasta setting. Press Start/Stop. When unit signals and display reads 0:00, press Start/Stop and remove dough. Pat dough into greased 9-inch round or 5x7-inch oblong cake pan. Add TOPPING. TOPPING: 2T. butter, melted 1/2 C. sugar 1 tsp. cinnamon 1/2 C. chopped pecans Drizzle butter over dough. In small bowl, mix sugar, cinnamon, and nuts; sprinkle onto butter. Cover; let rise in warm place about 30 minutes. Bake in a preheated 375° oven for 20 to 30 minutes, until golden brown. Cool 10 minutes in pan on rack. Drizzle with Glaze. POWDERED SUGAR GLAZE: 1 C. sifted powdered sugar 1 tsp. butter or margarine, softened 1 or 2 T. water or milk 1/2 tsp. vanilla In small bowl, combine all ingredients and blend until smooth. Spread or drizzle Glaze on slightly warm coffee cake.

ADDIE'S POUND CAKE

Steps:

• Cream butter and sugar. Add eggs one at a time. Sift flour three times. Add flour and whipping cream alternately to butter mixture. Add extracts. Grease steeple pan. Bake on middle rack for 1 1/2 hours at 350 degrees.
• Cool for 15 minutes then invert pan.

NADIA'S MORNING COFFEE CAKE WITH WINTER FRUITS

Steps:

• Turn on the oven to 375°.
• Choose a mixing bowl that can subsequently contain all the ingredients. Put in the eggs and sugar and beat them until they are foamy and form yellow ribbons.
• Add the salt, olive oil, and grated orange peel - making sure you haven't grated any of the bitter white pith beneath the orange skin - and mix thoroughly.
• Peel all the fruit. Core the pear and apple and cut them into thin 1/2-inch pieces. Slice the banana very thin. Put the fruit into a separate bowl and toss with the lemon juice.
• Combine the flour and baking powder and mix them into the beaten eggs, incorporating them thoroughly.
• Add the fruit to the bowl with the eggs and flour, mixing well to distribute it evenly.
• Smear the bottom and sides of the springform pan with butter, then pour into it the fruit batter. Level off by shaking the pan from side to side; do not press down on the batter.
• Bake on the middle level of the preheated oven for 50 to 55 minutes, until the top of the cake becomes colored a light gold.
