Vegan Mushroom and Adzuki Bean Stew Recipe image

This adzuki been stew recipe is filling and delicious. It sounds funny but it makes for a creamy and slightly sweet dinner!

1 cup dry adzuki beans
1/2 oz dried porcini mushrooms
1 Tbsp olive oil
1 Tbsp tomato paste
1 medium yellow onion (diced)
2 celery stalks (diced)
2 medium carrots (sliced into thin rounds)
2 garlic cloves (minced)
2 cups butternut squash (cut into chunks and frozen)
4 oz fresh oyster mushrooms (roughly chopped)
10 oz fresh wild mushrooms (roughly chopped)
4 cups vegetable broth
1/2 cup green lentils
1 Tbsp soy sauce
1 Tbsp lemon juice
2 tsp salt
1 tsp pepper
1/2 cup parsley (chopped)

Steps:

  • Place aduki bean in large bowl and cover with water by 4 inches. The beans will swell overnight so use plenty of water. When it is time to make the stew, drain the beans and place in a medium saucepan. Cover with water and bring to a simmer over medium high heat. Let simmer for 40 minutes.
  • Meanwhile pour 1 cup boiling water into a heat proof container and add the dried porcini mushrooms. Stir to submerge the mushrooms and set aside for 30 minutes. Drain the mushrooms and strain the water through a coffee filter. Set mushrooms and mushroom water aside.
  • In a large soup pot or Dutch oven heat oil and add tomato paste. Sauté tomato paste 1 minute then add onion, celery, and carrot. Cook 3 minutes then add garlic and cook 1 more minute. Add oyster, wild and porcini mushrooms. Cook until liquid releases about 5 minutes.
  • Add frozen butternut squash cubes, vegetable stock, mushroom water, lentils and beans. Simmer for 20 minutes then check beans for doneness.
  • When stew is ready remove form heat and season with soy, lemon juice, salt and pepper. Just before serving stir in chopped parsley.

4 ounces adzuki beans, soaked overnight
2 ounces margarine
1 onion, chopped
2 cloves garlic, crushed
1 pound leeks, trimmed, washed well & sliced
1 carrot, diced
8 ounces mushrooms, wiped & sliced
1 tablespoon Hungarian paprika, sweet
1 pinch cayenne pepper, to taste
2 tablespoons whole wheat flour
1/2 pint vegetable stock
1 tablespoon soy sauce
1 tablespoon tomato paste
1 pound chopped tomatoes
salt & pepper, to taste
parsley, chopped, to garnish
DUMPLINGS
4 ounces whole wheat flour
1/4 teaspoon salt
1 ounce margarine
3 tablespoons parsley, half if using dried
3 ounces water (or milk if preferred)

Steps:

  • Drain the beans and cover with fresh water. Bring to a boil and simmer till tender, about 35 minutes. Drain, reserving the liquid. Heat margarine in a large pot. Add the onion and cook until transparent. Add the garlic, leeks, carrot and mushrooms and cook gently for 4 to 5 minutes. Stir in the paprika, pepper and flour. Add stock, soy sauce, tomato paste, tomatoes and salt and pepper. Bring to a boil, cover and simmer gently for 10 minutes. Stir in the beans and bring back to a boil. Add the dumplings. Cover with a tight fitting lid and simmer for 20-25 minutes very gently to prevent burning. Sprinkle generously with parsley before serving. FOR DUMPLINGS: Put the flour and salt into a bowl. Rub in margarine till it resembles fine breadcrumbs. Stir in parsley. Add just enough liquid to make a firm dough. Divide into 8 pieces and shape into dumplings.

1 cup dried adzuki beans, soaked overnight in water
1 leek, sliced
1 carrot, chopped
1 orange sweet potato, cubed
1 chicken bouillon cube, crumbled
1 teaspoon Tabasco sauce
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup small broccoli floret
1/4 cup chopped cilantro leaf
4 tablespoons low-fat plain yogurt (optional)

Steps:

  • Rinse the beans after draining them from the soaking water then put them in a saucepan. Cover with water and then bring to a boil. Reduce the heat and then simmer, partially covered, for 30 to 35 minutes. When you're done, the beans should still be somewhat hard.
  • Add all of the other ingredients except for the broccoli and cilantro and cook for 10 minutes. Next, add the broccoli and cilantro and then simmer for about 5 minutes, or until the broccoli is tender.
  • To serve, spoon into bowls topped with a spoonful of natural yogurt, if desired.
  • Soaking the beans overnight is crucial to this recipe as it greatly shortens the cooking time of the beans.

Steps:

  • Place adzuki beans in the instant pot and add water. (beans can be soaked or un-soaked, see note)
  • Seal the pressure cooker lid and set the vent to sealed.
  • Select high pressure and set the timer. See recipe notes for times.
  • When the instant pot has finished cooking, allow the pressure cooker to naturally depressurize for at least 10 minutes before releasing the remaining pressure and opening.

125 g adzuki beans, soaked and cooked (save the cooking liquid)
soya margarine
1 onion, chopped
2 garlic cloves, finely chopped or crushed
1 medium leek, washed, halved lengthwise and sliced thickly
1 large carrot, cut into long julienne strips
250 g mushrooms, cut into chunks unless very small
1 tablespoon sweet paprika
2 tablespoons whole wheat flour
chili sauce
1 teaspoon dark vegetable stock powder
1 tablespoon soy sauce
1 tablespoon tomato paste
1 (400 g) can canned tomatoes, chopped
fresh ground black pepper
fresh flat-leaf parsley, chopped

Steps:

  • Saute the onion in the margarine until golden.
  • Add the garlic, leek, carrot and mushrooms, and cook for another 5 minutes, until the vegetables are just soft.
  • Mix in the paprika and flour and stir for another minute.
  • Add the remaining ingredients, including the cooked aduki beans, plus enough reserved bean cooking liquid to half-cover the ingredients.
  • Stir well, cover and simmer for about 30 minutes, stirring occasionally and adding more cooking liquid if it gets too dry.

Mango chutney
Tamari soy sauce
4 c Water
Yogurt
1 lb Sweet potato cut
4 inches ginger finely sliced
Cayenne pepper
5 Garlic minced
1 tb Canola oil
1 c Carrot cut into bite-sized
2 c Spinach leaves (young)
2 c basmati rice Cooked hot
2 tb Tamari soy sauce or more to
1 md Yellow onion chopped
1/4 c Coconut milk light optional

Steps:

  • Sort through the beans for stones, which should be discarded. Rinse the beans and place them in a large pot with the water, partially cover with a lid, and bring to a simmer. Heat the oil in a large wok or saute pan . Add the onion, garlic and cook over high heat for 3 to 4 minutes. Stir in the sweet potatoes and carrots. Continue to cook over high heat for 5 minutes, stirring frequently. Remove from the heat and add to the pot of beans. Stir in the ginger, cover with the lid and continue to simmer for a total of 40 minutes, until the beans, carrots and potatoes are soft. Midway, after about 20 minutes you can add tamari soy and pepper; taste to see if there is enough ginger. It should be very spicy. The strength of ginger varies depending on its freshness. Add more if needed. Just before serving, while the rice is standing, add two handfuls of spinach leaves and simmer; when wilted but still bright green, turn off the burner and add the coconut milk. Stir to heat through. Serve with the rice in a wide shallow bowl. Pass the condiments. ABOUT THE DISH: This stew was adapted from *Bettina Vitells A TASTE OF HEAVEN AND EARTH (Harper: 1993) Here we added spinach to make it a One-Bowl meal. The coconut milk is optional: it added another layer of flavor. Use lots of ginger, the spicier the better. Dont be afraid of the Tamari soy. Tamari adds depth. We served with chilled pear slices. 1 tablespoon fresh ginger, minced

1 small or medium-sized butternut squash (cut in half or two-thirds) - peeled, seeds removed and cut into small chunks
2 cans adzuki beans, drained
Salt and pepper, to taste

Steps:

  • In a large pot or saucepan bring broth, ginger, tamari and sesame oil to a light simmer. Add squash and cover. Cook for 10 to 15 minutes or until squash is soft. Add beans and mix well; continuing to cook for another 2 to 3 minutes. Add salt and pepper, if necessary. Add additional broth if stew becomes too dry.

  • Preheat the oven to 450°. Spread the olives on a large microwave-safe plate and microwave them at 50 percent power for 30 minutes, or until dry. Let cool, then transfer the olives to a mini food processor and grind to a coarse powder. Stir the brown sugar into the olive powder. Season the lamb with salt and pepper and rub the meat with the olive powder.
  • Bring a small saucepan of water to a boil. Using a vegetable peeler, remove the zest from the lemon, leaving behind as much bitter white pith as possible. Slice the lemon zest into thin julienne strips. Add them to the saucepan and simmer over moderate heat until softened, about 10 minutes. Drain and mix with the honey.
  • In a medium saucepan, heat 1 tablespoon of the olive oil. Add the onion and fennel and cook over moderate heat until softened, about 8 minutes. Add the stock, water, bay leaf and ketchup and bring to a boil. Add the adzuki beans and simmer over low heat, stirring occasionally, until the beans are tender, about 1 hour. Using a slotted spoon, transfer the beans to a bowl. Boil the cooking liquid over high heat until reduced to 1/2 cup, about 8 minutes. Return the beans to the saucepan. Stir in the Worcestershire sauce and the lemon zest and honey mixture and season with salt and pepper. Discard the bay leaf.
  • In a medium ovenproof skillet, heat 1 tablespoon of the olive oil until shimmering. Add the lamb and cook over moderately high heat until browned on the bottom, about 2 minutes. Turn and cook for 1 minute. Transfer the skillet to the oven and roast the lamb until medium-rare, about 8 minutes for the loin and 12 minutes for the leg. Transfer the lamb to a carving board and let rest for at least 5 minutes.

  • In a medium saucepan, cook the plantain, sweet potato, turmeric, salt and tamarind paste. Pour in enough water to cover the vegetables. Bring to a boil, then reduce heat to simmer until the vegetables are fully cooked through.
