WEST AFRICAN PEANUT STEW
A hearty stew that's super-easy to make and great for peanut butter lovers. Can be made vegetarian or with chicken. In a pinch, feel free to use vegetable or corn oil for peanut oil, powdered ginger for fresh, water for stock, etc. Kale works well in place of collard greens.

Steps:
- Heat the peanut oil in a large pot over medium-high heat; cook and stir the onion, garlic, and ginger in the hot oil until softened, about 5 minutes. Add the chicken; cook and stir until completely browned. Season with the crushed red pepper, salt, and black pepper. Pour the chicken stock over the mixture. Stir the sweet potatoes into the liquid and bring the mixture to a boil; reduce heat to low, cover the pot partially with a lid, and cook at a simmer for 15 minutes.
- Stir the tomatoes, collard greens, and peanut butter into the soup. Partially cover the pot again and continue cooking, stirring occasionally, another 20 minutes.

OKRA STEW
This is a West African inspired rendition of an okra and tomato stew, great on its own or served as a sauce over meat or fish. There are some unusual spices here, and I use palm oil. You can get red palm oil, which is not overly refined, in some supermarkets, or you can get sustainably produced oil online. Or just use vegetable oil.

Steps:
- Heat the palm oil in a soup pot over medium heat. It has a low smoke point, so when it smokes, add the onions and stir well. Cook them, stirring often, until soft. Add the garlic, ginger and minced chiles and cook another minute. Salt everything well.
- Stir in the tomato paste and cook that for a minute or two, stirring often. Add the diced tomatoes, the grains of Selim, and the stock and stir well. Bring to a simmer and cook uncovered for 15 minutes.
- Add the okra and cook another 15 minutes, or until the okra is tender. You want a fairly substantial stew, so only add additional water or stock if everything is getting sticky. Season with salt to taste and add the pepper in at the end. Serve over meat, fish or with rice.

- Rinse dry black beans and pick through and discard any foreign object.( I did not have to do this because I used the package beans,). Add black beans to a large pot covering with 3-4 inches of cold water.
- Drain the soaked beans, rinse, and place the beans in a Dutch oven or pressure cooker. Follow instructions for cooking beans in your pressure cooker. It takes roughly between 8 to 12 minutes to cook. If not using a pressure cook, cook the beans for about 1 to 1 1/2 hours until tender.

- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the turkey mince and break it into smaller chunks. Cook for 7 minutes or until it brown, While occasionally stirring. Set aside.
- Heat the other tablespoon of oil in a sauce pan over low heat and add the onion. Cook and stir until tender. Add the garlic and stir it in.
- Add the curry powder and stir it in. Add the canned tomatoes, chili flakes, sweet potatoes, chicken stock, and coconut milk and do the same for each one.

- Grill the smoked turkey: rinse the smoked turkey clean and place in your air fryer basket at 180C/365F for 15 minutes turning once. Alternatively, add Smoked turkey on a lined baking sheet or non-stick baking sheet and grill for 15 to 20 minutes turning halfway during the cooking time. Transfer the turkey to a plate and set it aside. Cut the turkey into smaller bite-size if you want, this is optional.
- Blend the pepper: to a food processor, add roughly chopped red bell peppers, scotch bonnet chilli and onions and pulse until coarse in texture. (if you blend the pepper mix smooth, you will not achieve the same texture and you may also need to boil the pepper mix so it reduces in size)
- Heat up the oil: place a sturdy pan on medium-high heat, add vegetable oil and palm oil and heat until hot (you don’t need to bleach the oil for this but you can if you want) add chopped onions and sauté until soft and fragrant then add washed locust beans and cook for about a minute. Keep an eye so as not to burn it.

- Boil beef with 2tsp bouillon powder, 1/2 tsp salt and chopped onion, oregano and boil till tender. This should take between 20 minutes or longer depending on the cut of meat used. - Put Cleaned Turkey parts in a pot, add curry powder, thyme, 2 stock cubes, half of the sliced onions and salt. Add some water, cover put on stove and leave to cook. When cooked, arrange cooked turkey on parchment paper lined tray and grill in the oven
