These air-fried mini dessert egg rolls are stuffed with a one-two punch of cherry (from jam and dried cherries!) plus yummy cream cheese, and a sweet cinnamon-sugar coating.

⅓ cup cherry jam
¼ cup dried tart red cherries, chopped
16 (3.5 inch square) wonton wrappers
water, as needed
nonstick cooking spray
3 tablespoons white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Whisk together cream cheese and jam in a small bowl; stir in dried cherries.
  • Place a wonton wrapper on a work surface with a corner pointing toward you. Moisten edges with water. Spoon a rounded teaspoon of cherry mixture just below center of wrapper. Fold bottom corner over filling, tucking it under on the other side. Fold side corners over filling; roll egg roll away from you toward remaining corner. Repeat with remaining wrappers and filling.
  • Coat both sides of egg rolls with cooking spray. Arrange egg rolls, in batches if necessary, in a single layer in the air fryer basket.
  • Cook in the preheated air fryer until well browned, 4 to 5 minutes.
  • Meanwhile, whisk together sugar and cinnamon in a shallow bowl.
  • Remove egg rolls from the air fryer and immediately roll in cinnamon sugar, using two forks. Cool on a wire rack for 5 to 10 minutes. Serve warm.

2 cups hot water
3 cups fresh bean sprouts
1 pound ground chicken
6 green onions, chopped
1 tablespoon minced fresh gingerroot
3 garlic cloves, minced
1 jar (11 ounces) Chinese-style sauce or duck sauce, divided
1 tablespoon fish sauce or soy sauce
1 teaspoon soy sauce
1 package (14 ounces) coleslaw mix
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
18 egg roll wrappers

Steps:

  • Pour hot water over bean sprouts in a small bowl; let stand 5 minutes. Drain., Meanwhile, in a Dutch oven, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Add green onions, ginger and garlic. Cook 1 minute longer; drain. Stir in 1/2 cup Chinese-style sauce, fish sauce and soy sauce; transfer to a large bowl. Wipe pan clean., In the same pan, cook and stir coleslaw mix, spinach and drained bean sprouts until crisp-tender, 4-5 minutes. Stir into chicken mixture. Cool slightly., Preheat air fryer to 400°. With one corner of an egg roll wrapper facing you, place 1/3 cup filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll egg roll up tightly, pressing at tip to seal. Repeat., In batches, arrange egg rolls in a single layer in greased air-fryer basket; spritz with cooking spray. Cook until golden brown, 8-12 minutes. Turn; spritz with additional cooking spray. Cook golden brown, 4-6 minutes longer. Serve with remaining Chinese-style sauce.

1 tablespoon sesame oil
Slice of ginger, minced
1 scallion, thinly sliced
1 tablespoon soy sauce
2 eggs, lightly beaten with a tablespoon of water
1/2 cup carrot, grated
1/4 pound Napa cabbage shredded - steamed, squeezed dry, and finely chopped
Chinese chili paste, to taste
50 Square egg roll wrappers
Egg yolk
Oil for deep frying

Steps:

  • Heat sesame oil and saute ginger 30 seconds. Add scallions and saute 30 seconds. Stir in soy sauce and evaporate a second. Stir in eggs and stir to softly scramble. Remove from heat and transfer to a bowl; stir in carrots, steamed napa cabbage and chili paste to taste.
  • Divide wrappers into half, so you can make mini egg rolls. Set each wrapper at such an angle that the points of the wrapper face north, south, east and west. Set a bit of filling in bottom third of wrapper. Bring bottom point over filling and tuck it underneath; roll the filling up a bit to secure tightly. Bring right point of wrapper over filling to form a neat right angle; bring left side of wrapper over right side to form a left right angle, and dab this top point with egg yolk. Roll the egg roll up to secure tightly. The egg yolk will seal the wrapper to itself.
  • Can be frozen for up to a week. Deep fry straight from freezer; otherwise partially thaw before frying.
  • To fry: Heat the oil and deep fry long enough for the rolls to float to surface; turning them, for 2 to 3 minutes. Drain immediately on double thickness of paper towels. Once drained, set on a rack so bottom does not get soggy.
