AIR FRYER POTATOES ANNA
Ready to make something with potatoes in your air fryer other than french fries? This is an easy Potatoes Anna recipe that you can make in your air fryer.

Steps:
- Use a mandolin to slice the potatoes as thinly as you can.
- Brush the bottom of a heatproof 7 x 2 inch pan with butter. Arrange one slice of potato in the middle. Now create concentric, overlapping circles of potato, making sure you go all the way to the edges of the pan since the potatoes will shrink as they cook.
- Place this pan with its single layer of potatoes on the stove top and start heating it on medium. You are doing this to get the bottom layer well browned.
- Continue to place layer upon layer of potatoes, continuing in concentric circles, brushing with lots of butter between layers. Press down on the layers so that the bottom will brown well.
- Once you are done with the last layer, sprinkle any remaining salt and pepper and pour any remaining butter all over the potatoes.
- Cover the pan with foil. Place the pan in the air fryer basket and set the air fryer to to 400°F for 30 minutes. Then remove the foil, and cook at 400°F for another 10 minutes.
- Using a spatula, loosen the edges of the potatoes and upturn them on to a serving plate.

- Cut the potatoes into evenly sized pieces, ensuring they're not too big. Steam for 5 mins in a steamer insert set over a pan of boiling water, or simmer gently for 5 mins. Drain well.
- Tip the drained potatoes into the bottom of an air fryer. Add the oil and toss everything together to ensure the potatoes are well-coated. Set the fryer to cook for 30 mins using the paddle. Check the potatoes are cooked through, then cook for another 5-10 mins if they're not tender or brown enough. Season well.

Potatoes Anna is basically a dish where you take any type of potato, slice it really thinly, then arrange the slices in a pan and bake. (It's a great holiday dish because you can rope in a family member to either be the slicer or the arranger!)

- Preheat oven to 450 degrees F. Melt butter in a small saucepan over medium heat. Meanwhile, slice the sweet potatoes on a mandoline. Soak prunes in port for 20 minutes, then drain and roughly chop. Coat a cast-iron skillet with butter, then arrange half of the potatoes in an overlapping circle until the bottom of the skillet is covered. Brush the top generously with melted butter, and sprinkle with salt and pepper. Scatter half of the prunes over the sweet potatoes, then repeat the whole process. Press down on the potatoes so they are compact.
- Bake 20-30 minutes until potatoes are cooked through and nicely caramelized. Run a knife around the edge of the skillet to loosen. Place a serving plate on top of the skillet and flip over to serve.

- Combine salt, pepper, and thyme in a bowl.
- Melt 1 tablespoon butter in a 10-inch skillet over medium heat. Cook and stir onions until soft and golden brown, about 8 minutes. Move to a bowl.
- Melt remaining 1 tablespoon butter in the skillet; remove from heat.
- Arrange 1/3 of potato slices in the skillet in a slightly overlapping layer. Sprinkle with 1/2 teaspoon of the salt mixture. Top with 1/2 of the onions and 1/2 of the Gruyere cheese. Repeat layers, ending with potatoes; sprinkle with remaining salt mixture.
- Cover and cook over medium-low heat, reducing heat to low if necessary, until potatoes are tender, about 30 minutes. Uncover and continue cooking, about 5 minutes. Run a spatula around edges to loosen; let cool, 5 to 10 minutes.

- Preheat an air fryer to 350 degrees F (175 degrees C).
- Slice evenly across entire length of each potato to make 1/4-inch or 1/2-inch slices, making sure the knife only cuts through to the bottom 1/2-inch, keeping the bottom of the potato intact.
- Combine butter, olive oil, garlic, and paprika in a small bowl. Brush some of the mixture over each potato and into the slits. Season with salt and pepper.
- Place potatoes in the air fryer basket and cook for 15 minutes. Brushing the potatoes again with butter mixture, making sure to get it down into the fanned out slices, to ensure the potatoes will not be dry. Cook until potatoes are cooked through, about 15 minutes more.
